I’m thankful that I live on a hill, so my apartment and car are safe and dry.

There were quite a few cars stranded underwater in yesterday’s flash flooding and I feel so bad for the people who have to deal with flood damage. Luckily no one was hurt (that I’ve heard).

I’m thankful that Sam made it out of surgery okay.

He had his large intestine removed (how crazy does that sound? I know they do that to humans too, but that sounds pretty intense!) because it wasn’t working and he was constipated and miserable all the time, poor guy.

I know you came to my blog to listen to me talk about cat poop. I aim to please.

Anyway, it sounds like it wasn’t too risky of the surgery, but all surgery freaks me out so I was a big ball of stress all day. But according to my dad everything went well, he just has to have fluids through an IV and limited activity for 2 weeks. Hopefully then he’ll be back to his usual ham of a self.

I’m thankful for PRs!!! I ran a 5k in 28:30 today! Bam. Yes it was on a treadmill which is cheating a little, but it was a full 2 minutes faster than my last 5k PR thankyouverymuch. Assuming that the treadmill was not broken, because that’s immediately what I though when I looked down and saw that I was doing 8:30 minute miles, were the heck did that come from? I’m going to blame it on the mass amounts of sunflower seed butter I’ve been eating, which justifies me buying a new jar this week right? I think so.

I’m thankful for George Gershwin’s wonderful music. I’ve been jamming to some Gershwin lately. First off I think using jamming in the same sentence as a classical composer is something to proud of, second I can’t get enough of Rhapsody in Blue and all things jazzy and classical. It makes doing homework 100% better.

Let’s Go Swimming and Vegetarian Paleo, Say What? {WIAW}

I hope you guys are having a dry Wednesday night because it’s POURING over here.

Seriously, it’s so bad that they shut down the university, crazy stuff.

Now let’s talk about drier things, like food. Yeah, clever segues are not my thing.

Head’s up about this week’s food, it’s going to be a little different.

I mentioned last week that I’m making some temporary changes to my diet. My stomach has been upset a lot lately and I can’t deal with any more stomach aches. To try to help the situation I’m following a Paleo-ish diet.

Yes, vegetarian Paleo. Contradictory? Absolutely. But I wanted to give my digestive system a break and focus on easy to digest foods – fruits, veggies, healthy fats, nuts and eggs, because girl’s gotta have some protein. No dairy, grains, legumes or (too much) added sugar. Sound a little crazy? Maybe, but it actually has been going really well. I thought I’d share some of my typical meals and my thoughts this week.

My new staple breakfast, baked sweet potatoes with coconut oil, cinnamon and a small sprinkle of salt. So. Dang. Good. I don’t even miss my oatmeal. Shocking.

Lots of fruit and an equal amount of un-pictured veggies. I’ve been eating more produce that I have in a long time which is really delicious but requires lots of extra trips to the grocery store. I’m pretty okay with that.

Eggs, fried with slight gooey yolks. Since figuring out technique it is the only way I eat eggs. Variety is overrated.

I’m only slightly ashamed to admit I polished off 90% of this jar in two days. But I’ve slowed down and I’m savoring the last 10% because I realized going through a $5 jar of sunflower seed butter in two days is not very cost efficient. Sorry wallet.

My new favorite “adlkfjasldfkj I’m hungry and I want chocolate” go-to snack. Please tell me I’m not the only one with that problem. Anyway, coconut milk (take canned coconut refrigerate upside down and scoop out the the thick stuff at the top) thinned with a little almond milk and mixed with cocoa powder and cinnamon.

I don’t know why I feel the need to put Buddha in every food picture, but he is on the side table near the window where I take my pictures so he sneaks his way in 🙂

Thoughts

Keep in mind this is temporary I don’t plan to live a life with peanut butter or oatmeal. That doesn’t sound like a fun life. That being said, I’m really enjoying eating like this. I’m surprised because when you cut out dairy, grains, legumes, and meat it doesn’t leave you with a whole lot of options but I haven’t felt like I’m missing out. If I felt too restricted and miserable I would quit it but I don’t. I feel 100% satisfied and look forward to every meal.

Most of all I have SO MUCH energy. Crazy right? I figured that getting so little protein (I’m averaging 30-40 grams a day) would make me so tired, and while a low-protein slump could still hit, I actually feel great.

My fat intake has increased a lot (yeahhhh avocados and coconut!) and I think that has really helped me feel more satisfied. I don’t get the whole bottomless-pit-for-a-stomach feeling I used to have. And basically I feel really awesome. This kind of diet might not be right for everyone, but I think it’s really working for me right now.

I want to try to add other foods back in and see how my body reacts in a little bit and see what exactly it is my body is hating, but I want to continue focusing on more fruits/veggies and healthy fats even as I add things back in.

Tuesday Tangents

I can’t believe it’s only Tuesday, the week already feels crazy long. Since I didn’t get home until almost 10:00 pm (yikes) we’re going for an easy post, tangents it is!

  • Why do I also neglect yoga, I went to a class for the first time in weeks and it felt AMAZING. My body was yelling at me for not going sooner. So worth a skipped run, my muscles feel noodle-y and awesome

  • 24 people came to my Pilates class! I usually get around 15, and there was actually a line waiting for class, which only ever happens for yoga and spin classes. It was a little crazy but the energy was so awesome, I hope everyone comes back next week!
  • I had a Smash Mouth’s “All Star” stuck in my head yesterday. I don’t know where it came from but it was not enjoyable.

    The 90s can keep Smash Mouth, I don’t miss them.

  • The bus driver was rocking out to some Justin Timberlake one the ride home yesterday. Sexy Back was played and I won’t pretend that it wasn’t a little bit awesome

  • I’ve down a full jar of sunflower seed butter in 3 days. This is a problem. Mostly for my wallet because that stuff is twice as much as peanut butter. At least it makes my taste buds happy.
  • Today in my public speaking class we had to finish the prompt “If I were in charge of the world…” I talked about how I would make everyone vegetarians. I think I’d be the most unpopular world leader ever.

    I want a shirt with this on it ASAP please.

  • My legs are still tired from Sunday’s 8 mile run. Sad.
  • I realized I’ve been drinking too much coffee today when I couldn’t stop twitching. I’m glad the full-fledged caffeine-addiction is starting early this semester.

     

  • Tomorrow is hump day! Thank goodness.

Can’t Complain {MIMM}

Hey guys! I hope your Monday is going awesome.

My Monday’s been pretty boring, but I can’t complain, I’ll take boring over stinky any day.

I can’t complain… about my pretty low-key weekend too. It snowed Friday morning then froze over that afternoon so I spent most of the weekend stranded in the apartment. Sometimes it feels pretty awesome to hang out in your PJs until 1 pm 🙂

I can’t complain… about my 8 mile run! A new PDR (fyi you’ll probably hear that every week until my 10-mile race!) It was tough and I thought about quitting approximately 28374 times, but I sucked it up and finished, even though that mean running back and forth across the park parking lot for the last 0.75 mile because the sun was going down and that was the only area with a street light, and I like not getting kidnapped. Did I mention it was 33 degrees out? I’m not sure where all this commitment came from but I like it.

I can’t complain… because I saw a beaver on my run yesterday!

I ran past it the first time and it didn’t even register in my head it was a beaver. Then I had to run back and get a picture (from a safe distance, beavers are vicious). I think he was drunk because he randomly fell over and then staggered off into the woods. I don’t know how a beaver would get drunk but that’s not the point.

I can’t complain… about this nut butter. The Earth Fare near me just started carrying Wild Squirrel nut butters and holy cow. Delicious. You need to keep me away from these things.

Kale, olive oil, salt, pepper and nutritional yeast. Even my kale-hating roommate ate these. Success!

I can’t complain… about running because I’m thinking about signing up for this half-marathon in May. It’s a week before graduation and only 30 minutes away from Boone. I’m just trying not to let the elevation map freak me out.

National Peanut Butter Day & A Peanutty Recipe!

Happy National Peanut Butter Day! Best food holiday ever?

That’s 5 pounds of peanut butter in case you didn’t know. It was gifted to me by my roommate last year and I will admit to eating all 5 pounds in 2 weeks.

Not joking.

I love you peanut butter.

In celebration of this fabulous day, I’ve got a peanut butter cookie recipe for you, which actually shouldn’t be considered a recipe because it only has 5 ingredients but we’re calling it one anyway. But first, let’s get our Thankful Thursday on:

This weekend I’m thankful for my cellphone. That sounds a little materialistic and ridiculous but hear me out. I love that my cellphone allows me to easily stay connected with my boyfriend, family and friends while I’m away at college.

Hello cellular, you’re not very smart, but that’s okay, I like you anyway. Fact: I’m one of about ten college students that doesn’t own a smart phone. I’m 100% okay with this.

I’m especially thankful that it keeps me and my boyfriend connected. Long distance relationships are tough, but it makes me so happy to know that I can just pick up the phone, call him and he can pick up no matter where he is. While it doesn’t make it any easier to be apart it’s nice to hear his voice every night before I go to bed, and that he can always be there for me when I’m having a bad day and I can be there for him.

So thank you modern technology for helping me stay connected with the most important people in my life, even if I can’t be there for them in person.

And back to the peanut butter. Something else I’m very thankful for.

Recipe time!

5-Ingredient Peanut Butter Cookies

Ingredients

  • 1 cup peanut butter (you can use natural, regular, creamy or chunky, all should work – I used Trader Joe’s Natural Salted Chunky Peanut Butter)
  • 1/2 cup sugar (I’ve also made a version of these using 1/3 cup honey which worked well too)
  • 1 egg (I’m pretty sure a flax egg would work here if you wanted to keep things vegan, though I can’t personally vouch for that)
  • 1/4 cup almond meal
  • 1 tsp baking soda

Directions

  1. Preheat the oven to 350 degrees
  2. Combine all 5 ingredients in a large mixing bowl, mixing until all ingredients are well combined
  3. Scoop onto a cookie sheet
  4. Bake for 8-10 minutes, or until golden brown (careful not to burn the bottoms!)

See, easy peasy. Maybe too easy. They are a hit for gluten-eaters too, I love making them for parties so I know I have a dessert to munch on too 🙂

Asheville and French Parties {WIAW}

Let’s start with Friday…

My roommate needed to take a trip to Asheville to pick up some clay for an art class, and since Asheville is a little bit of a drive, she invited the rest of the roommates and we made a day trip out of it. Asheville is one of my favorite cities, it’s funky, cool and full of hippies (I fit in quite well), so it didn’t take much convincing for me to tag along.

Oh did a mention it snowed Thursday night? But not enough to cancel any of my classes. Thanks App. At least it was pretty the next day!

After picking up the clay (all 300 pounds of it, holy cow) we explored the downtown area, including a stop at Urban Outfitters, I love the store despite it being a trendy hipster magnet and how overpriced everything is. The sale rack is my friend. Anyway, a few sights downtown:

Now for the food, and let me tell you it was some DANG GOOD food.

We ate dinner at Green Sage a cute little Cafe in the downtown area.

This place was like my own little heaven. Almost everything could be made gluten-free and vegan/vegetarian. Whattttttt!!! I know you guys in big cities have probably have lots of restaurants like this but they are a rarity in North Carolina. It took me so long to decide what to order because I could actually eat 90% of the menu, instead of the 5% I usually get.

Can you tell I was a little excited? Because I was, if you weren’t sure.

After taking way too long to decide I finally settled on the Coconut Curry Rice Bowl which included Stir Fry Napa Cabbage, Carrots, Peppers, Kale, Coconut Curry Sauce, Cashews, Raisins, Cilantro served with Tempeh over Black Beans and Rice. Yes, yes, yes and yes. I never wanted the bowl to end. So. Damn. Good.

I also treated myself to a Red Planet juice which was made with beet, apple, carrot and ginger. So worth having pink teeth for.

Did I mention this place had GREEN SMOOTHIE on the menu? But it was $6 so I refrained. And can I also mention that they had a dessert case full of tasty looking vegan and gluten-free goodies. Seriously? My roommates were laughing at me because I couldn’t contain my excitement. I didn’t bring home any desserts though because I had lots of baking planned for a birthday party on Saturday (more on that in a second).

Oh and my whole meal was under $13, CAN I JUST MOVE IN?

After dinner we hit up one more fun place before leaving town.

I’m not sure whose idea it was to turn a double decker bus into a coffee shop but it was a genius one.

And onto Saturday…

My Saturday started with a 7.5 mile run, in 40 degree weather with snow on the ground. I’m proud of myself for trucking out in the snow and for a new PDR. Despite the cold I felt really good and the cold weather meant minimal sweating. That means I don’t have to shower afterwards right? Kidding.

Saturday night my friends had a triple birthday party planned. Two of my friends and one of my roommates had a birthday over Christmas break (including some 21st birthdays!) so we decided to celebrate all in one night, the more birthdays the merrier right?

Someone decided on a French theme, which basically translated into wearing stripes and decorating our friend’s apartment in broken French.

Confession Time

Apologies for being such a dippy blogger lately. I’m trying to be more consistent but consistency is not my forte, working on it.

Anyway, time for some heavier stuff (which will be sprinkled with pictures of adorable baby animals because heavy stuff is gross). I’m not very good at opening up but here goes nothing.

Confession time, I’ve been in a huge funk lately.

I don’t know why but all I know is that it is quite a stinky one. I’ve been super anxious lately and just really down on myself. I’ve been feeling pretty insecure lately thanks to not being able to shake my Christmas (small) weight gain (which is dumb, vain and incredibly counter-productive). On top of that I’ve been having some stomach issues with painful bloating, which doesn’t help the whole ego situation and is just all around annoying.

And in addition to that school has been really stressing me out lately. Even if I only have a single assignment due I still find myself all stressy and anxious about it. I don’t understand it because I usually have a pretty calm approach to school and rarely freak out about it and I’ve already wanted to pull my hair out twice in the past week. That stress turns into stress eating which only makes the above problem worse which leads to more stress and the nasty cycle continues.

I’m just really homesick and a little overwhelmed.

I’m not here to whine, because I honestly have nothing to whine about. I’ve got great friends up here, a wonderful opportunity for education and I’m still a very healthy person. But it feels good to be honest and it feels good to get things off my chest. My boyfriend did a great job of cheering me up last night when I was feeling extra funky and I feel much better today but the funk is still there.

I’m determined to pull myself out of this funk so here’s my plan:

  • For the tummy issues: I’m focusing on eating lots of plants and healthy fats. I’m (attempting, we’ll see how this goes) to cut out grains and dairy for a week or two and then gradually add them back in. I want to find out what’s causing the issues because I’ve been really good at staying away from gluten lately and I think this is the best way to isolate possible problem foods. It’ll probably be tough but I’m so ready for my stomach to feel normal again that it’s 100% worth it for me.
  • For the stress issues: MEDITATION. I’ve been doing it daily as part of my monthly resolution but I’ve seriously dropped back since starting school and have been doing a pretty pathetic 2 minutes a night. While I do think some meditation is better than no meditation I think re-devoting myself to a good 10 minute meditation session will be much more effective. I also think asking myself what I’m stressed about will help, because sometimes when I actually think about it I sometimes realize I have very little to be stress over and helps put things in perspective.
  • For the ego issues: I’m not setting a goal to lose the few pounds I gained over break. One that won’t fix the problem, the problem is my mindset, not the weight. Instead I’m focusing on nourishing my body with healthy foods, maintaining my current fitness routine because I’m really happy with it and incorporating some positive affirmations to get rid of that negative self talk.

That feels really good to get off my chest. I’m not good at opening up so this post was pretty tough to write, hence the puppy and kitty pictures, but I think it helps put things in perspective to put things out there. So I’m taking the leap.

How is it only Wednesday? This week has been longggggg. Every one of my professors have done this ridiculous thing where they decided to assign homework (what? This is college) on the first day. Yuck.  At least we’re halfway through the week! Just gotta make it through two more days and I’ve got a three day weekend. Hallelujah.

Okay enough complaining, time for food!

Kale salad with tofu, mushrooms, avocado with a side of sweet potato topped with coconut oil and cinnamon. This was supposed to be my lunch, but I was really hungry so I ate it right after my 8:00 am class. It’s never too early for a little kale!

I had a quick, un-pictured snack of edamame before hitting up the gym for a 3 mile treadmill run. I hate running when I’m hungry, though I think it’s the opposite for most people.

I meant to pack a Clif bar for a snack but I forgot it so I had to pick up an over priced bar from the campus market.

I love Luna bars, but I don’t love paying $2 for them. I’m cheap but my tummy is worth it.

My hunger has been crazy lately (stress? All the extra walking I do on campus? It’s a mystery to me but I’ve been HANGRY lately) so an hour later I was still hungry so I bought exactly $0.71 worth of trail mix from the student union, the cashier actually laughed at me for buying so little but I only had $1 left on me. Story of my broke college life. Kinda.

And I don’t have a picture of the trail mix, but it was mostly peanuts and almonds and not too exciting. But it did help tame the hunger monster a little.

Not food related, but it was my first Pilates class of the semester! I think it went pretty well and I ran into one of the girls in class today and she said she loved the class and was sore today! I love getting feedback, both good and bad but let’s be honest good is a lot more fun to hear, and it made my day that she enjoyed my class! That’s why I love teaching Pilates.

I also caught a girl instagram-ing a picture of her weights during class. I’m secretly proud of that for some reason 🙂

The bus was pulling away just as I got to the bus stop after class so I had to wait an extra 30 minutes for the next one. Hate it when that happens. I didn’t get home until 8:30 and I was super hungry (I’m sensing a theme?) so I didn’t get any pictures, I was too busy stuffing my face, but here’s some recycled photos:

When do you eat lunch? Apparently on Tuesdays I eat it at 9:00, but on Mondays and Wednesday I eat around 11:30 plus snacks later on, lunch time is always when I’m hungriest!

Lessons Learned from Watching Honey Boo Boo. Seriously.

Yes, Honey Boo Boo.

I’m a big fan and no, I don’t care if you judge me. I’m a little obsessed and that’s okay.

Every Sunday my friends and I get together and have a mini Honey Boo Boo watching party and it is one of the highlights of my week. Some college students party and get drunk, we watch Honey Boo Boo and get noise warnings from the over-eager security guards for laughing to loudly (no joke). I’ll take it.

I realized that you can learn some pretty good life lessons from watching Honey Boo Boo (just go with it):

Lesson #1 Always be your unique crazy self, people may judge, but what do they know?

Lesson #2 Chickens make terrible house pets, you’re better off going with a cat, dog, or even a teacup pig (I miss you glitzy!)

Some people argue that The Learning Channel (aka TLC, in case some of you forgot 🙂 ) doesn’t live up to it’s name (though let’s be real, what channels do – I’m looking at you MTV) but I beg to differ. Those are some quality life lessons right there.

I promise tomorrow’s post won’t involve a bowl of mayonnaise.

First Last Day {MIMM}

Or not so happy Monday. The weather was pretty miserable on the mountain today. Good day for a nap, too bad that didn’t happen.

Don’t worry, there’s still some Marvelous in my Monday, I just had to look for it a little harder.

It was my first last day of college! I have to admit, I’m not at all excited for this semester. I would be pretty okay with being school being done now. I may change my tune in a couple weeks, I think I’m just burnt out on school. My classes weren’t too bad today: dance history, senior seminar and finance, but I’m not super excited about them. But, FOUR MONTHS UNTIL GRADUATION. Yesss.

But I have my public speaking class tomorrow, dun dun dun… I’m scared.

I have lunch breaks! This is exciting because apparently the only time I’m not thinking about food is when I’m setting up my class schedule and I always sign up for classes straight through lunch and end up eating in the hallways in between classes. Now I have time to go back to my apartment and eat a real lunch and watch Paula Deen. Priorities people.

I did some weightlifting! I’m not a fan of leg work (boo lunges) but I did some today and my quads were burning! I just kept reminding myself how good it is for me. And I actually didn’t hate it too much this time around. I still hate lunges though.

20 mile week! I’m pretty sure that’s my highest mileage week ever. Getting to that 10-mile race! And maybe a half marathon… who knows…

Roomie frozen yogurt run! For pretty much the first time ever. We all have crazy schedules so it’s almost impossible to get us all together at once.

Strawberry yogurt with strawberries (apparently I had a strawberry hankering Saturday night?), white chocolate chips and GUMMY BEARS. It has been too long since I’ve eaten gummy bears. That my friends is a problem that needs to be solved ASAP.

New student union! App recently added a new wing to our student union and it is SWANKY. I had a club meeting in one of the new rooms and it is sooooo cool. And the new wing means that my Pilates classes will be in an actual group fitness room (they closed it unexpectedly in the middle of last semester because of the construction and I had to teach in a random room that wasn’t at all meant for classes) I’m excited to have a real room back.

Speaking of Pilates my first class is tomorrow and I get to teach a new class format that uses weights and other equipment. I’m excited! It’s going to be CRAZY with all the resolution-ers and get-in-shape-for-spring-break-ers, but I won’t complain about a big class!

My friends and I go to a bible study class on Sundays and the couple that leads it brings their 8 year old daughter with them. She is very cute and super artsy and drew pictures of us during the class. Too sweet. We also fill out prayer request cards and trade them with another person, I got her card and it was too cute. I love the rainbows and sunshine! She reminds me of myself a little when I was younger.
