Marvelous in My (Kinda) Monday {MIMM}

Happy Tuesday! I’m a little late to the Marvelous in My Monday party this week, but since Monday was a holiday today is kinda like Monday. Kinda. Just go with it.

Marvelous is… three day weekends. Hollerrr. It’s been a crazy week at my internship. On Friday we moved our office into a different building for the summer and it was definitely a hectic day. A Monday off was welcomed with open arms.

Our offices actually relocated to a dorm on Duke campus. Yup, my new office is a dorm room, complete with dorm furniture and all. As strange as it sounds I will take it because it’s much more spacious than a cubicle!

Marvelous is… Getting to spend sometime with the other interns on move-in day! Right now there’s only three of us, but the rest of us will be starting next Monday and there will 20+ interns running around. I’m so excited to be surrounded by other college-aged kids, I can’t even tell you.

Marvelous is… The farmer’s market! It’s so good to be back to the monstrous farmer’s market in Raleigh. It’s open 7 days a week and has tons of vendors. Sometimes living in a agriculture-based state spoils me 🙂 Pictures are coming later this week.

Marvelous is… My new blueberry plant from the farmer’s market. Fingers crossed it actually grows blueberries instead of just dying on me. My thumb is more on the brown or black side. I just want some free blueberriesssss.

Marvelous is… Tree lady. My boyfriend and I ran into her while we were walking to the Raleigh Rose Gardens (if you’re a local you need to check that place out, it’s gorgeous! And free!). Pretty clever.

Let’s Play Catch Up {MIMM}

I feel a little bad that I’ve been this little blog lately.  I haven’t been around much but I’ve had plenty of marvelous things going on around here. So I thought I’d catch you up on the last week and a half, because life’s been a little bit of a whirlwind since then!

Marvelous is… Graduation!

I don’t technically get my degree until I finish my internship this summer, I walked and I’m out of Boone so that’s close enough. I’m not going to lie though, it’s definitely bittersweet to graduate. I’m ready to move on to a big city (tiny mountain living is only charming for about 4 years) and a big girl job I’m going to miss my college friends a lot.

Marvelous is… My internship with the American Dance Festival! I started on Wednesday and they had me jump right into the swing of things. I’ve already started working on lots of fun design projects and I can already tell I’m going to learn so much this summer. I’m also excited for when the festival actually starts and I’ll be able to take classes!

Marvelous is… Doing a little good. This Sunday my church did a “Church on the Street” event where instead of a typical church service, they had us go out and help with community projects around the area. My mom helped paint some of the rooms in the Children’s wing of the church. It’s been way too long since I’ve done any volunteer work and it felt good to help out again. I need to get back in the habit of it!

Marvelous is… Artspolure, an arts and crafts festival in downtown Raleigh.

There was so much beautiful artwork being sold. I wish my tiny budget had more room for local, handcrafted art, but notsomuch. One day when I get a big girl job it will happen. I did get a really cool coffee mug for $8 which I have been more than excited to used every morning since.

Marvelous is… the Flying Biscuit!

I had an egg white omelet with mushrooms and spinach, with a side of rosemary potatoes. This meal was salt-city (way more than than previous times I’ve been) but I won’t even pretend like I didn’t finish the whole thing with a big glass of water. It does pain me a little to eat here now that I can’t enjoy their enormous complimentary biscuits, but I still enjoy their cranberry apple butter with a spoon, that stuff is amazing.

Marvelous is… early morning workouts. Okay, let’s be honest, waking up at 5:30AM is not marvelous, but having your entire workout done before 7:30 AM certainly is. My schedule is now 10-6 with a 30-45 minute commute home (depending on traffic), a nighttime workout is just not happening so getting it in early gets it out of the way and peps me up for the rest of the day.

What did you do this weekend?

Are you a morning or nighttime exerciser? During school I went through phases of being a nighttime exerciser, an afternoon exerciser and a morning exerciser (gotta switch things up right?) but when I’m at home I usually stick to the morning, I loose my motivation not too long after that.

PS I’ve been really horrible at commenting/responding to e-mails and comments and I promise I will catch up! I’ve been taking a breather from social media which feels nice but I’m hoping to catch back up on my Feedly, blog and inbox soon!

Happy Monday!

Despite the start of exam week it is a very happy Monday because it is my last Monday in college! Graduation is slowly becoming more real, and I am simultaneously getting more excited and terrified by the second.

This weekend my friends and I attempted to live it up one last time while we’re all in town for the weekend! Unfortunately, the weather was not super cooperative, but we didn’t let that stop us too much 🙂

Marvelous is… The farmer’s market is finally over! Just in time for me to leave… whomp, whomp. Luckily I have multiple farmer’s markets at home that are pretty sweet, one of them is even open 7 days a week. I’m very produce spoiled but that is what happens when you live in the capital of a agriculture-heavy state. Lots of delicious produce!

I only ended up purchasing some apples (which are not nearly as good as they were in the fall, that season is more than over) and some farm fresh eggs, I have missed those suckers and they are sooo much better than store bought. I always buy them from a booth with this sweet old man because he always seems so grateful for the business and I love knowing the chickens are treated nicely. Happy chickens makes for tastier eggs.

Reeses peanut butter and chocolate yogurt with chocolate, Oreos and Reeses. I was craving chocolate and peanut butter in a bad way.

Marvelous is… Quatro de Mayo! Cinco de Mayo happened a day earlier over here. Something about having to teach a Sunday evening Pilates class and a 9AM finance exam made me think Sunday night drink was a poor choice. Something about wanting to graduate and not get fired, silly things like that.

Dinner at Black Cat Burrito to keep with the fiesta theme. Tortilla-less burrito with black beans, rice, mushrooms, broccoli and tomatillo sauce, with their delicious coleslaw on the side of course. Hit the spot. I’m sure going to miss these burritos.

Marvelous is… Milk (Stout) and cookies! With a side of Joy Ride. Somehow my friends and I have made a tradition of watching Joy Ride every year on reading day. I can’t say it’s my favorite tradition, because if you’ve ever seen Joy Ride you know it’s a terrible movie, but cookies and beer make everything better.

I made these cookies and they came out quite tasty, even my gluten eating friends liked them. Then I washed them down with a beer, so much for gluten-free.

Marvelous is… Nostalgic college slideshows. My friend put one together of all of us (with some pretty hilarious photoshopped pictures) I’m going to miss everyone!

Marvelous is… My finance exam is DONE. It was my hardest exam so fingers crossed that I did okay! Only 2 projects, 1 speech, and 2 exams stand between me and summer. I. Can. Do. This. Can you tell I’m ready for summer?

Marvelous is… My family gets here on Saturday, which means tasty dinners out and extra pack help. Oh and quality family time of course.

Marvelous is… Breakfast plans with the roomie for tomorrow morning. I have a two day break before my next exam and will be doing my best to not spend the whole time studying.

Marvelous is… My first run in a couple weeks! My foot is still a little sore but it is feeling much better. I only did 15 short minutes today but it felt good to run again. The elliptical is starting to drive me crazy.

Happy Monday! Today is my last week of class and that is pretty darn marvelous. A little terrifying, but mostly marvelous.

Marvelous is… getting my cap and gown today! I can’t believe graduation is so soon!

Marvelous is… Boone’s feastival, that’s right, FEASTival. Basically a festival showcasing healthy living in Boone, so right up my alley. They had lots of booths with everything from CSAs, bakeries, restaurants, all kinds of good stuff. There were lots of free samples which I’m always a fan of:

A smoothie sample (I have no idea what was in it but it was tasty) and an energy ball with honey, oats, chocolate chips and a few other things in it. Both were very delicious!

And the best part…

Baby goats! I think it’d be fu to have one of these guys as a pet, minus the fact that they would try to eat everything I own, they seem pretty chill otherwise.

There were also food trucks, but un fortunately I didn’t end up getting anything. One truck, Vitality, looked especially delicious and was serving vegan food, but I ate beforehand and wasn’t hungry enough to justify a $7 rice and veggie plate. I’ll have to track them down again when I’m actually hungry!

Marvelous is… a super sweaty spin class this afternoon. It’s been a while, but my foot has been hurting ever since my 10-miler (seriously, I’m like a magnet for minor injuries lately, it’s getting old) so I tried to be smart and opt for something low impact. So. Much. Sweat. Hill sprints are straight up murder.

Marvelous is… potlucks with my Sunday school group.

I brought black beans and rice. Someone brought the most delicious fudge-y brownies I have had in a LONG time. Holy cow were those things good. I had three, they weren’t gluten-free but it is 100% worth the stomach ache and headache I have today, they were that good.

I’m going to seriously miss this group after I graduate. The couple that leads the group are the sweetest people and so funny, they make me look forward to getting up early on Sundays.

Marvelous is… KITTENS. I think I spent a good 6 hours playing with them on Friday. I can’t even handle how adorable they are.

Marvelous is… registering for the Esprit De She 10K in Cary! I’m actually going to be an ambassador for the race, but more on that later.

Rednecks & Kitty Cats {MIMM}

Before we get to the marvelous in my Monday, I have to take a minute to address something that is not-so-marvelous.

My heart goes out to all the people that were hurt or otherwise impacted by what happened today in Boston. Although what happened today was horrible, I have to say it’s pretty marvelous to see the running community come together to support one another at a time like this.

Marvelous is… My 22nd birthday is tomorrow! Actually it’s in 1.5 hours, I came in to the world bright and early at 12:30 AM.

Marvelous is… Joint birthday parties! My friend’s birthday is Friday so we had a joint party over the weekend. The theme? Rednecks and cats. No joke, we are a creative bunch.

Marvelous is… beautiful weather and weekend hikes. A very muddy, but fun 5 miles.

I wish I had taken more pictures, but I was worried about my camera landing in a pile of mud, which isn’t really ideal.

We did the Boone Fork Trail Loop, which is right off the Blue Ridge Parkway, the trail is the perfect combination of beautiful views, uphill climbs and creek hopping. My buns were on FIRE by the end, so worth it though.

Marvelous is… birthday cake.

I used Betty Crocker’s gluten-free yellow cake mix for the base, and because we all know I can’t just leave things be, I added a 1/4 cup of peanut butter to the mix which was a very delicious choice. The frosting is just Cool Whip with cocoa powder and cinnamon mixed in. Easy, cheap, and trans-fat free. I can get behind that.

I made my own, which my friends thought was really sad I made my own cake (they did offer to make one for me, I’m just stubborn), but since I love to bake I actually really enjoyed it. Lame? Maybe, but I got to lick the bowl which was more than worth it.

And the gluten-filled cake for the gluten-eaters:

Marvelous is… Engagements!

These two got engaged on Saturday! I’m so excited for them! Plus the ring really offsets her new dragon tattoo.

Marvelous is… Sunday school cookouts! We got together at our small groups leader’s house and had a delicious lunch. The carnivores had barbecue chicken sandwiches, but they were nice enough to cook up a few veggie burgers for me and the other vegetarian in the group. I didn’t take any pictures but it was a good time!

Marvelous is… look-a-like clay figurines. The couple that leads our small group has a very artsy 10 year old daughter and she made us all figurines that look like us.

That little girls is seriously talented! My figurine is only about 1.5″ tall and the detail is pretty awesome. I’m adding it to the collection of drawing she’s made for me over the past few Sundays!

Marvelous is… Best Body Bootcamp Phase Two! I’m already sore from today’s workout! I’m already looking forward to the rest of the week’s workouts!

Marvelous is… 5 days until the Tar Heel 10-miler! Eep! I’m both super nervous and super excited!

What’s your favorite flavor of cake? I’m not sure that there’s a flavor of cake I don’t like, but red velvet and carrot cake are pretty high up there! Peanut butter and chocolate is always a winner too 🙂

Spring Time {MIMM}

Happy Monday!

Can I just say that there’s nothing more wonderful thank waking up to beautiful, sunny, 65 degree weather on a Monday morning? Talk about starting the week off right.

Marvelous is… Art crawl. Lots of good art, lots of good food. Not to mention I got a free handmade cup from a gallery featuring clay pieces, I’m actually drinking coffee out of it right now (of course!).

Marvelous is… drinks with friends on a Friday night.  I’m not your typical party-obsessed college student, and I prefer quieter nights with friends than a wild and crazy party, but sometimes a little bar hopping is necessary to your college experience.

The bartender convinced my friend that the 32oz beer was a much better deal than the pint, which it was, it was also the size of her freaking head (don’t worry mom and dad, mine’s the normal sized beer in the bottom of the picture).

I asked the bartender for the least-sweet shooter they had, and I’m pretty sure he lied because it tasted like straight up limeade. Bummer. I got drink redemption with a Jim Bean on the rocks later on in the night. I’m such an old man, I don’t play with that fruity stuff.

Marvelous is… this freaking dessert:

A cinnamon roll the size of my face topped with vanilla ice cream. Whattttt. So. Good. I’m pretty sure the restaurant pumps the smell of cinnamon into every corner of the restaurant to make you want to order one of these bad boys. Sometimes a little gluten is worth it.

Marvelous is… hiking trips with fellow group fitness instructors!

We had plans to go to Hawksbill Mountain in Morganton, but only 4 of us were able to make it so we stayed closer to Boone and tried the Glen Burney trail in Blowing Rock. I’ve done the hike once before and it’s a nice little hidden gem in Blowing Rock. The hike is about 1.5 miles ending at a super gorgeous waterfall. It’s quite the workout because you hike down to the waterfall, which means the return hike is uphill the entire way. My booty got a serious workout on the way back!

Marvelous is… taking time to cook a REAL dinner. Or as real as a college dinner for one can be. I’ve been in an eggs + frozen veggie rut and it feels good to get creative in the kitchen again!

Kale salad with lacinato kale (my first time trying it and I think I like it better than curly kale, it tastes less grass-y), baby portobella mushrooms, roasted sweet potatoes and eggplant, lemon juice, garlic, curry powder, cumin, salt, pepper and that last couple drops of my bottle of Bragg’s liquid aminos. So fresh and clean tasting.

Cinnamon and curry roasted sweet potatoes, sauteed spinach with onion and tomato, with sauteed sliced eggplant on the side.

Not much protein happening here, but dinner’s usually finished up with a cup of greek yogurt to balance things out.

Marvelous is… today’s special guest lecturer in my Dance History class. He came to talk with us about the history of musical theatre and he was quite the character. He would randomly start singing parts of the lecture and danced through half of it as well. I imagine if Mr. Rogers had a doctorate in Dance History and gave college lectures, it would go something like that. He was quite the character.

Oh Mr Rogers, I still miss you dearly.

We also watched a Broadway documentary narrated by Julie Andrews, everything with Julie Andrews is marvelous. Everything.

Marvelous is… SPRING WEATHER. In Boone. FINALLY! It felt amazing to walk out the door this morning and not have to grab a jacket.

I love beautiful days in Boone because all the hippies, slack-liners, and puppies come out. Not to mention Boone is absolutely gorgeous when the weather decides to cooperate, there’s no better place to be.

Pretty Marvelous for a Monday {MIMM}

Four day weekends need to start happening every weekend. Three day school/work weeks? I can roll with that.

Mondays are pretty marvelous when they don’t involve any responsibilities. Can this happen more often?

Marvelous is… lots of good coffee.

I’m going to get design nerdy for a second and confess my love for Caribou Coffee’s new branding and marketing. The design is 100x better than their previous design and such a neat concept. I’m also loving the new logo and the fact they hid a coffee bean in the moose.

Marvelous is… browsing Barnes & Noble on rainy days, and snagging some fun reads.

So excited to get my anatomy learning on! I don’t care how nerdy that sounds.

Marvelous is… spending the afternoon browsing Whole Foods and REI. They finally built an REI in my town earlier this year and I just now got the chance to go. I spent a good 20 minutes lusting over beautiful new workout clothes I can’t afford. One day…

Marvelous is… optimistic purchases.

Despite this tendonitis, I’m still hopeful a spring half marathon is going to happen (fingers crossed!). I haven’t experimented with mid-run fueling and the honey stingers were on sale so I picked up a pack along with Clif Shot gel. Let’s hope I get to use them!

Marvelous is… Best Body Bootcamp. Today was the first day and the workout was awesome. A full body strength workout that made my muscles cry a little. Love it. And I’m already learning lots of new exercises that I’m excited to incorporate into my routine even when bootcamp is over.

Marvelous is… progress on my research paper. 2/10 pages done! Too bad it’s due Wednesday. Ah procrastination, we meet again.

Marvelous is… sushi. Enough said.

Marvelous is… Mediterranean food! Dropping my brother off at college means another lunch at the Mediterranean Deli, and I am not complaining one bit. So. Dang. Good.

I’m sure there are plenty of other really delicious restaurants in Chapel Hill that we are missing out on, but I don’t even care because the food here is that good. Plus they have gluten-free pita bread and I don’t think there is much that beats that.

Marvelous is… running! I did 2 very cautious and slow miles on the treadmill today. There’s still a little pain but my knee is feeling much better. I’m hoping to slowly work my mileage back up (with lots of rest, ice, anti-inflammatories, stretching and EMS therapy) over the next couple weeks. I’ve still got my eyes on the Tar Heel 10-miler in 3 weeks, but I’m taking things one step at a time. I’m not about to get re-injured.

Marvelous is… old lady Easter candy.

I stopped getting an Easter basket a long time ago (though I still ask for one every year because I’m just a kid in a 21 year old’s body) my brother and I pestered my mom into buying us some candy at Trader Joe’s. I think it officially means I’m old when this is the candy I pick out. And the bag is empty because I finished it in 2 days. You could say I like ginger a little bit.

Marvelous is… spring time temperatures and flowers. Please don’t go away!

Excitement {MIMM}

Marvelous is… Sleeping for 9 WHOLE HOURS last night. Glorious doesn’t even begin to describe it. I can’t even tell you the last time I got more than 7 hours of sleep much less 9. Clearly sleep needs to be a bigger priority in my life.

Marvelous is… Pilates teacher training! I was at training all weekend (hence me being MIA) and I learned sooo much. I can’t wait to take everything I learned back to my classes, I feel like all the knowledge I gain is going to make my classes a million times better. It was such a great experience, I just have the Mat 1 training done, so I’m hoping to work my way through the rest of the trainings in the next year or so.

And the studio I did the training at was absolutely beautiful, I will definitely have to take some classes there over the summer.

Marvelous is… Random frozen custard runs.

We went to Goodberry’s which is a local NC-only chain, but if you’re ever in the Triangle area go get yourself some. It’s soooo good. I got the vanilla custard with chocolate chips mixed in and it tasted like a straight up cup of Oreos. I love fro yo, but sometimes you just need some heavy-duty custard.

Marvelous is… Thai dinner on a Thursday night.

Some friends came to my Thursday night Pilates class and we ended up going out to dinner afterwards at Cha Da Thai (their the only Thai restaurant in town so it’s a good thing their food is good!) which was an awesome treat on a weeknight. I think I could eat Thai food any day of the week and be perfectly content.

Funny story is that they served me the completely wrong dish. I actually ordered the Pad Cashew with tofu (Sauteed with tomato-based red sauce, cashews, onion, carrot and bell peppers), but they gave me the Pad Khing Sod with tofu (Stir-fried with fresh ginger sauce, mushroom, onion, bell peppers, baby corn and carrot). Not even close, and I almost sent it back, but I ordered it last time I ate there and I remembered it being delicious so I ate it anyway. It was just as delicious the second time around, even if it wasn’t what I ordered.

Marvelous is… seeing this temperature while driving around town.

Marvelous is… That I’ll be at the beach in less than 2 days! It’s supposed to be super cold (like 45 degrees, what?) but I don’t even care. That just means I can spend all day in the aquariums 🙂

Marvelous is… a much needed yoga class. It’s been too long since I’ve been to one and I can tell my muscles were angry with me for it. The class actually ended up being a Yin-style class which was pretty awesome. Basically you hold poses that require very little  muscular effort for extended periods of time (we held poses for 3-4 minutes) to open up the joints and connective tissues. Wikipedia does a better job of describing it than I do if you want to learn more about the style. It was pretty different from most classes I’ve taken before but it was very peaceful and I really enjoyed it. I did miss my down dogs though.

Marvelous is… I GOT THE INTERNSHIP I INTERVIEWED FOR!!!!!! Excuse me while I squeal like a little girl. But eeeeeee!!! I’m so excited! I will be doing graphic design for the American Dance Festival this summer! It’s pretty much most perfect internship for me and I can’t believe I got it! I actually applied for it last year and didn’t get it, but tried again and it paid off! Cue the excited face:

I was in the car on the way home from Boone when they called and told me I got the internship and I pretty much car danced the rest of the way home because I was so excited.

Space Cadet {MIMM}

I hope everyone is having a wonderful Monday. I’ll be honest, mine has been a little rough.

I’ve been a total space cadet today. I even mixed up the bus times for the bus I ride every single day and managed to get to campus 15 minutes after my class was supposed to start. I took that as a sign from the universe that it was okay to take the afternoon off class. I think it was much needed. Luckily my Monday still had some highlights.

Marvelous is… Internship applications! I was pretty productive in my afternoon off from class and applied for several internships. Which is good considering I need one this summer to graduate and the only thing I have at the moment is a less-than-promising phone interview from last week. Help me out internship gods.

Marvelous is… Fresh juice! My parents gave me a juicer for Christmas and I finally took it out of the box for a test drive.

In the mix: 1 beet, 3 small carrots, 0.5 apple and a little bit of ginger. Delicious. Too bad the clean up wasn’t so fun, there has to be a way to make a juicer that is easy to clean. One of my roommates is a product design major and I will get her on that one ASAP.

Marvelous is… Sneaking kale into cupcakes.

We had an early St. Patty’s Day party, which was actually turned into more of a low key get together, so of course I had to make cupcakes. I look for any excuse possible to make cupcakes. I made these cupcakes which are actually muffins (and grain-free!), but I put frosting on them so that makes them cupcakes. They were less sweet than typical cupcakes but they still got devoured so I don’t think anyone minded. By the way, if you baked that recipe in a loaf pan I bet it would make AMAZING grain-free peanut butter banana bread. I will definitely be trying that out in the future.

For the frosting, I used this frosting:

It was the only frosting in the grocery store without trans-fat so I shelled out $5 for the container. It was more glaze-like than frosting-like, when I bought it I didn’t realize it was allergen-free frosting, I was just desperate for something without trans-fat but it still tasted fine. I added a little cream-cheese to make it some a little more normal and added some sneaky kale juice to dye it green. I added a little too much and things got a little grassy-tasting so in the future I will go for spinach, but kale was just what I happened to have in the fridge.

Marvelous is… It snowing much less than I thought it would. It still snowed for four days straight, which is no bueno, but we only got a couple of inches so I was actually able to leave the apartment. If I get snowed in for another weekend I might go crazy. Where are you spring?

Marvelous is… Dinner and lunch out this weekend. Friday night my roommate and a friend went to Cha Da Thai for a super tasty Thai dinner. I got the Pad Khing Sod with tofu:

Stir-fried with fresh ginger sauce, mushroom, onion, bell peppers, baby corn and carrot. It was pretty good but I will definitely go for curry next time, my love of curry far exceeds my love of ginger. While I was eating this I thinking that it would be awesome to have ginger sauce and curry sauce on the same meal, but my friends thought I was crazy. I’m sorry that I have an unnatural love of curry.

Marvelous is… Espresso News, AKA the best place to get coffee in Boone.

Marvelous is… Art crawl! One of my roommates had her work in two different galleries and it was really awesome to go see them. She’s seriously talented! You can check out some of her work here.

Marvelous is… My first drink in a bar! I know I am a crazy 21 year old, waiting 10.5 months for my first bar experience. I had a Foothill People’s Porter and it was quite tasty.

I usually drink IPAs so this beer was super smooth in comparison and I will definitely be having it again in the future. Not to mention they’re a local brewery (Winston Salem, NC – just 1.5 hours away!), which is always a plus.

Marvelous is… FRO YO! Enough said.

Marvelous is… One more week until spring break! In less than a week I’ll be home and in 1.5 weeks I’ll be at the BEACH. So pumped.

Marvelous is… A super sweaty spin class! My knee/calf (I still can’t figure out which body part this issue is with, it feels like it’s right where my calf muscle hits the back of my knee, so I’m not sure it the issue is behind my knee or in my calf) is feeling better, but it still doesn’t feel quite right so I’m being good and spinning instead of running. This is a huge accomplishment for this lady, I’m stubborn and always try to ignore injuries but I’m listening to my body for once. Plus I want to get better so I can get in a good, long run over spring break and go running on the beach!

I’m getting certified!!! I decided to go with Balanced Body University and this weekend I’ll be doing the Mat 1 Certification! I’m so excited! My bank account is not excited about it, but I’m looking at it as an investment 🙂
