Last Week in Boone: The Food {WIAW}

Hey guys! It’s been a little while since I’ve been able to visit this little corner of the internet but I am happy to be back! This past week has been pure craziness: final exams, family visits, graduation, moving home, and on top of that today was the first day of my internship! Whew. No rest for the weary right? That’s okay, they’re all pretty wonderful things so I have no room to complain.

During my last week in Boone, I made it a point to get to all my favorite restaurants for one last meal before moving back to Raleigh. Boone has the BEST restaurants and Raleigh, despite having some decent restaurants, is mostly full of chains, blech. So I had some pretty spectacular meals this past week.

Tuesday

I made a roommate breakfast date at Melanie’s, an adorable little breakfast/lunch place in downtown Boone for Tuesday morning. We all had the morning off for exams and everyone knows a delicious, hearty breakfast is the best final-exam-taking fuel. I started with a very necessary cup of coffee. It’s a little blurry, but that’s what happens when I don’t have caffeine in me. It’s not a good time.

Which came with two eggs (over easy), stewed apples (un-pictured on the side), a biscuit (which I gave away to my roommates) and homefries. I have a new found homefry obsession and have been ordering every where. Maybe not the healthiest obsession but dang delicious. This meal kept me full for 6 whole hours which is a pretty big feat for me.

Thursday afternoon I grabbed an iced coffee pre-exam and a farmer’s market apple. This is the first time I’ve put milk in my coffee in FOREVER. Iced coffee is a little rough on my stomach, probably because I drink it 10x faster than hot coffee, but a little bit of milk seems to help.

Beer, coffee, and a kitty in my lap. Could life be better? I got one last visit in with the kittens before they left for Michigan, it’s amazing how much they’ve grown in 2 weeks!

Dinner was good old Black Cat. I built my own burrito with black beans, rice, broccoli, mushrooms and tomatillo salsa, minus the tortilla. Oh Black Cat, I’m going to miss you so much.

After dinner one of my roommates and I headed to Low Wine Bar. It’s located on top of Espresso News, the best coffee shop in Boone. This was my first time going and I’m not sure why I waited so long because it was awesome. Whoever decided to put a coffee shop and wine bar in the same building is a GENIUS.

I had the Marc Roman Malbec, mostly because it was the cheapest red on the menu, but it also happened to be really tasty. Really easy to drink without being too sweet.

Post-wine my roommate and I spilt a 7 Layer Bar from the coffee shop downstairs (genius, I’m telling you). It was not even close to gluten-free but so tasty it was completely worth it. 7 layer bars are the best.

Saturday afternoon my parents and boyfriends drove up to Boone for graduation festivities. They didn’t get into town until around 1:30 and I was starting to get borderline hangry. It happens. Luckily I had this amazing and filling meal from Coyote Kitchen to tame the hunger beast. I had the Sedona Boat: Coconut rice, black beans, blackened tempeh, roasted sweet potatoes, corn, caramelized onions, roasted red peppers, and spinach, topped with sweet red vegan mayo and scallions. I was full beyond belief after finishing this bad boy but it was soooo worth it.

Sunday

AKA Graduation day! My college’s graduation wasn’t until 3:30pm so my family had plenty of time to kill before then. We grabbed an early lunch with my uncle at Hob Knob Farm Cafe. Hob Knob is one of my favorite restaurants in Boone, but it’s a little out of my (very small) budget so I save it for when my parents are in town =) . Hob Knob is awesome because they have lots of gluten-free, vegetarian and organic options, they source most of their ingredients locally and they have really adorable decor:

It took me way too long to decide what I was going to order, I’m not used to having so many options – it’s hard to decide! But I finally decided on the Tamale De Bayamo: House made tamale filled w/ spinach, squash, yams, garlic, corn & peppers. Served w/ tamale sauce, black beans, plantains, chipotle queso salsa, green olives, romas & spring mix.

Post-graduation we hit up somewhere low-key for dinner. We didn’t want to deal with the post-graduation dinner rush, especially with 7 people. Black Cat again! Twice in one week? I’m not upset about it.

I had the (blurry) Satay it to Me Softly (how cool are the burrito names?): rice, tofu, carrots, broccoli, caramelized onions, and a spicy peanut sauce. Delicious as always.

And my last full day in Boone wouldn’t be complete without…

Fro yo! Chocolate and Reese’s peanut butter yogurt topped with more Reese’s, chocolate shavings and Oreo’s (they are my gluten nemesis!). This was the most perfect fro yo cup I could have asked for and I enjoyed every last bite!

Monday

I have no pictures from Monday (sowwy!) but I have to mention the delicious meal I had at Boone Bagelry. The meal itself was pretty basic but really delicious. I had two eggs (over medium, is it sad I didn’t even realize this was an option until this week?), homefriends (I’m telling you, I’m obsessed!) and a gluten-free whole grain bagel. Yup, a gluten-free bagel! I should have taken more advantage of it this year! I’m kicking myself now.

Then I loaded up on old school candy at the Mast General Store. The sugar was more than necessary for the 3+ hour ride home. Why have I not eaten more MalloCups in my life? They’re delicious!

Today

Today was my first day at my internship! Everything went really well and it looks like it is going to be a busy, but very fun time! I also found out there is a Whole Foods less than a block away from my internship. This is going to be very dangerous for my wallet.

Salad with spinach, garlicky kale, cherry tomatoes, mushrooms and roasted chickpeas, roasted zucchini and eggplant (which was served cold, I wasn’t a fan) and some kind of quinoa dish with sweet potatoes, black beans and pepitas. I also had an un-pictured Clif Builder Bar on the side.

After writing this I’m hungry all over again.

Pretty Marvelous for a Monday {MIMM}

Four day weekends need to start happening every weekend. Three day school/work weeks? I can roll with that.

Marvelous is… lots of good coffee.

I’m going to get design nerdy for a second and confess my love for Caribou Coffee’s new branding and marketing. The design is 100x better than their previous design and such a neat concept. I’m also loving the new logo and the fact they hid a coffee bean in the moose.

Marvelous is… browsing Barnes & Noble on rainy days, and snagging some fun reads.

Marvelous is… spending the afternoon browsing Whole Foods and REI. They finally built an REI in my town earlier this year and I just now got the chance to go. I spent a good 20 minutes lusting over beautiful new workout clothes I can’t afford. One day…

Marvelous is… optimistic purchases.

Despite this tendonitis, I’m still hopeful a spring half marathon is going to happen (fingers crossed!). I haven’t experimented with mid-run fueling and the honey stingers were on sale so I picked up a pack along with Clif Shot gel. Let’s hope I get to use them!

Marvelous is… Best Body Bootcamp. Today was the first day and the workout was awesome. A full body strength workout that made my muscles cry a little. Love it. And I’m already learning lots of new exercises that I’m excited to incorporate into my routine even when bootcamp is over.

Marvelous is… progress on my research paper. 2/10 pages done! Too bad it’s due Wednesday. Ah procrastination, we meet again.

Marvelous is… sushi. Enough said.

Bonus of being a vegetarian? I’m not sketched out by cheap sushi. $3.50 for that sucker.

Marvelous is… Mediterranean food! Dropping my brother off at college means another lunch at the Mediterranean Deli, and I am not complaining one bit. So. Dang. Good.

I’m sure there are plenty of other really delicious restaurants in Chapel Hill that we are missing out on, but I don’t even care because the food here is that good. Plus they have gluten-free pita bread and I don’t think there is much that beats that.

Marvelous is… running! I did 2 very cautious and slow miles on the treadmill today. There’s still a little pain but my knee is feeling much better. I’m hoping to slowly work my mileage back up (with lots of rest, ice, anti-inflammatories, stretching and EMS therapy) over the next couple weeks. I’ve still got my eyes on the Tar Heel 10-miler in 3 weeks, but I’m taking things one step at a time. I’m not about to get re-injured.

Marvelous is… old lady Easter candy.

I stopped getting an Easter basket a long time ago (though I still ask for one every year because I’m just a kid in a 21 year old’s body) my brother and I pestered my mom into buying us some candy at Trader Joe’s. I think it officially means I’m old when this is the candy I pick out. And the bag is empty because I finished it in 2 days. You could say I like ginger a little bit.

Marvelous is… spring time temperatures and flowers. Please don’t go away!

21 Things to do Before 22

Ha. I’m a poet.

So my 22nd birthday is in approximately 2.5 weeks, and I thought I’d come up with a list of 21 things to do to round out my 21st year of life.

And… since I only have 16 days, I’m sticking with small things that will make each day a little more awesome leading up to my birthday. Not to mention final exams are only a month away and I’m trying to avoid being completely consumed with the crazy end of year projects professors love to assigns. Like the lovely 10 page paper due on Wednesday that I may or may not (letsbehonest not) have started.

01 // Paint my fingernails. Seems silly but it has been a shameful amount of time since these fingernails have seen a drop of polish, which is too bad because it’s fun to have crazy colored nails.

Fancy.

02 // Run a 5K. There’s a cheap one the weekend before my birthday that a couple of my friends are running, should be a good time!

03 // Make a REAL dinner. My dinners lately consist of frozen vegetables heated in a pan along with 2 fried eggs. Gets the job done but it’s not real exciting. I want to take a few extra minutes and actually plan a real meal. Bonus: leftovers.

I’m thinking this amazing looking bowl of goodness created by Elizabeth at Mackin’ Cheese will be made.

04 // Studio yoga. I’ve always wanted to take a yoga class at a studio instead of a gym, budget permitting, I want to take a studio class. If not, the yoga instructors on campus are awesome and I don’t mind taking class there!

05// Start a new book. Pleasure reading is not easy to do in college but I want to at least start a new book soon, if I make the effort to start it, odds are I will finish it eventually. Book recommendations are welcome!

06 // Bake something. I think some birthday cupcakes will be in order.

07 // Drink a shot of espresso. Straight. It might sound weird but this is something I’ve always wanted to do. I actually I’ve always wanted to throw back a shot of espresso like a shot of alcohol (I feel like that is a weird thing to want to do, but I have some strange desire to) but then I realized that espresso is hot and that might not be a smart choice.

08 // Spontaneous mid day coffee. Those just make the week better don’t they?

09 // Design something for the blog. I have some ideas, I just need to spend some time with good old Adobe Illustrator.

10 // Buy a new vegetable. And try cooking with it, I get it in serious food ruts and nothing switches things up like figuring out how to cook something new. I also love a good excuse to explore the produce department at Earth Fare.

11 // Juice it up. I got a juicer for Christmas and I have used it a grand total of one time. Cleaning it out intimidates me, but I need to suck it up and enjoy some pretty veggie-filled juice.

12 // Break out the DSLR. I need a good excuse to bust out the DSLR to take pictures of something other than food.

13 // Grandfather Mountain dollar days. Assuming the weather decides actually act like spring, I want to go to Grandfather Mountain because during the month of April admission is only $2 for students, versus the usual $18, aka perfect time to go. I went for the first time last year and had a great time, time to go back! This would also help out with #12.

14 // Clean my room. Okay, not a fun activity but it needs to happen. A clean room makes me happy, just not the process of actually cleaning it.

15 // Best Body Bootcamp. I won a free entry for Tina‘s Best Body Bootcamp via a giveaway on Clare‘s blog. It starts tomorrow and I’m really excited. It’s basically going to force me to do strength training which I need, I’ve been seriously slacking in that department.

16 // Kick this tendonitis. I finally got my butt to the doctor about the pain behind my knee. The doctor thinks it’s probably tendonitis (of the Biceps Femoris tendon, if you’re nerdy like me and want to know the specific one). Thursday and Friday I went to the injury clinic and had some Electric Muscle Stimulation done to my hamstring. Things feel much better but it still hurts when I run, get better tendon!

17 // Random act of kindness for a stranger. Making other people feel better makes me feel better.

18 // Watch a Disney movie. Because I’m 21 going on 8.

19 // Buy a new candle. I love candles but I have lit one in way too long. Something about candle light is the most relaxing thing ever, and I need more of it in my life. This one will have to be on the down low though because my apartment complex doesn’t allow candles (lame right?).

20 // Get organized. This goes along with #14. My life is pretty much semi-organized chaos. Some days I get away with it, some days I’m running around my apartment with a minute to catch the bus trying to figure out where I put my student ID. Not a good habit.

21 // Have Fun. Not sweating the small stuff and living in the moment. That’s what’s important in life.

Creamy Peanut Butter & Banana Smoothie

Happy almost Friday!

It has been one rough week over here and I am more than ready for the weekend. I woke up Monday morning with a stomach ache and welp, it was all down hill from there. I will just say I spent all Monday praying to the porcelain gods and hating life a little. Yeah, rough.

Today I thankfully feel back to normal and it’s about time too. It has been 7 days since my last workout, 5 days since I’ve eaten vegetables or drunk coffee and 3 days since I’ve had peanut butter. I’m not sure how I’ve functioned without all those things, but I can I assure it was not well.

I’m sorry coffee but you still make me want to puke a little. Give me a few more days and I promise I will be back to chugging you like a champ.

Luckily the rest of this week is looking up!

I have a (glorious!) 4 day weekend ahead of me, some much needed time at home (nothing makes you miss your parents more than being sick alone in your college apartment, good thing I have really awesome roommates who bring me ginger ale and applesauce) and some warm spring weather. Boone decided to be a poo-head and dump 8 inches of snow on us the past four days. I think someone needs to tell mother nature it’s officially spring because I’m not sure she’s gotten the memo.

I totally ate it on some ice on the way back to my apartment yesterday. No more snow please.

If you’re hoping for spring weather like I am, try making this smoothie, cranking up the heat and pretend it’s 75 degrees outside instead of 25, while you drink your smoothie and bask in the warmth. Just don’t blame me for your crazy how power bill.

Creamy Peanut Butter and Banana Smoothies (vegan!)

Ingredients

  • 1/2 package silken tofu
  • 1/2 cup milk of choice (I used almond)
  • 2 cups of spinach (or really as much as you can shove in your blender, the more vitamins the merrier)
  • 1 banana
  • 1 tbsp peanut butter
  • a sprinkle of cinnamon (or much more if you’re a huge cinnamon lover like I am!)
  • ~1 cup ice, or until desired frozen-ness is reached

Directions

  1. Place all ingredients in blender
  2. Blend. Easy peasy.
  3. And don’t forget to clean out your roommate’s blender because she won’t appreciate you borrowing it if you leave green stuff in it. Though I don’t understand why not.

Ginger ale and applesauce, and I remember growing up my mom always mixed juice and sprite together for me when I was sick, it was like the ultimate feel better drink.

Do you have any Easter plans? Is it sad that I really miss Easter egg hunts? Those things were awesome.

Space Cadet {MIMM}

I hope everyone is having a wonderful Monday. I’ll be honest, mine has been a little rough.

I’ve been a total space cadet today. I even mixed up the bus times for the bus I ride every single day and managed to get to campus 15 minutes after my class was supposed to start. I took that as a sign from the universe that it was okay to take the afternoon off class. I think it was much needed. Luckily my Monday still had some highlights.

Marvelous is… Internship applications! I was pretty productive in my afternoon off from class and applied for several internships. Which is good considering I need one this summer to graduate and the only thing I have at the moment is a less-than-promising phone interview from last week. Help me out internship gods.

Marvelous is… Fresh juice! My parents gave me a juicer for Christmas and I finally took it out of the box for a test drive.

In the mix: 1 beet, 3 small carrots, 0.5 apple and a little bit of ginger. Delicious. Too bad the clean up wasn’t so fun, there has to be a way to make a juicer that is easy to clean. One of my roommates is a product design major and I will get her on that one ASAP.

Marvelous is… Sneaking kale into cupcakes.

We had an early St. Patty’s Day party, which was actually turned into more of a low key get together, so of course I had to make cupcakes. I look for any excuse possible to make cupcakes. I made these cupcakes which are actually muffins (and grain-free!), but I put frosting on them so that makes them cupcakes. They were less sweet than typical cupcakes but they still got devoured so I don’t think anyone minded. By the way, if you baked that recipe in a loaf pan I bet it would make AMAZING grain-free peanut butter banana bread. I will definitely be trying that out in the future.

For the frosting, I used this frosting:

It was the only frosting in the grocery store without trans-fat so I shelled out $5 for the container. It was more glaze-like than frosting-like, when I bought it I didn’t realize it was allergen-free frosting, I was just desperate for something without trans-fat but it still tasted fine. I added a little cream-cheese to make it some a little more normal and added some sneaky kale juice to dye it green. I added a little too much and things got a little grassy-tasting so in the future I will go for spinach, but kale was just what I happened to have in the fridge.

Marvelous is… It snowing much less than I thought it would. It still snowed for four days straight, which is no bueno, but we only got a couple of inches so I was actually able to leave the apartment. If I get snowed in for another weekend I might go crazy. Where are you spring?

Marvelous is… Dinner and lunch out this weekend. Friday night my roommate and a friend went to Cha Da Thai for a super tasty Thai dinner. I got the Pad Khing Sod with tofu:

Stir-fried with fresh ginger sauce, mushroom, onion, bell peppers, baby corn and carrot. It was pretty good but I will definitely go for curry next time, my love of curry far exceeds my love of ginger. While I was eating this I thinking that it would be awesome to have ginger sauce and curry sauce on the same meal, but my friends thought I was crazy. I’m sorry that I have an unnatural love of curry.

Marvelous is… Espresso News, AKA the best place to get coffee in Boone.

Marvelous is… Art crawl! One of my roommates had her work in two different galleries and it was really awesome to go see them. She’s seriously talented! You can check out some of her work here.

Marvelous is… My first drink in a bar! I know I am a crazy 21 year old, waiting 10.5 months for my first bar experience. I had a Foothill People’s Porter and it was quite tasty.

I usually drink IPAs so this beer was super smooth in comparison and I will definitely be having it again in the future. Not to mention they’re a local brewery (Winston Salem, NC – just 1.5 hours away!), which is always a plus.

Marvelous is… FRO YO! Enough said.

Marvelous is… One more week until spring break! In less than a week I’ll be home and in 1.5 weeks I’ll be at the BEACH. So pumped.

Marvelous is… A super sweaty spin class! My knee/calf (I still can’t figure out which body part this issue is with, it feels like it’s right where my calf muscle hits the back of my knee, so I’m not sure it the issue is behind my knee or in my calf) is feeling better, but it still doesn’t feel quite right so I’m being good and spinning instead of running. This is a huge accomplishment for this lady, I’m stubborn and always try to ignore injuries but I’m listening to my body for once. Plus I want to get better so I can get in a good, long run over spring break and go running on the beach!

I’m getting certified!!! I decided to go with Balanced Body University and this weekend I’ll be doing the Mat 1 Certification! I’m so excited! My bank account is not excited about it, but I’m looking at it as an investment 🙂

What I Would Eat Wednesday {WIAW}

Happy humpday!

I don’t know about you guys, but I’m super ready for Friday. Well, I’m always ready for Friday so that is nothing new. But I would really like it to hurry up and get here.

In other news, the weather is trying to spite me.

A few days ago I said something along the lines of “I’m sick of the cold, I’m going to be PISSED if it snows in March”.

Haha Mother Nature, you showed me. What I wouldn’t give for a nice weekend so I could actually get an outdoor run in. The treadmill is slowly beginning kill me, but it looks like we’re going to be friends for a little longer.

I guess it works out because genius me decided to go running today even though my upper calf/knee is still acting funky from this weekend’s long run, and now I’m living it up with an ice pack and tennis ball on my living room floor because the pain came back full force. This probably means I should take a break but I’m antsy and I want to give up and MOVE. I guess I’ll stick to low-impact cardio until things start getting better.

On Monday I thought to myself “I’m actually going to take pictures of everything I eat tomorrow so I can do a real What I Ate Wednesday”. Guess how many pictures I took, zero. Whoopsies. That’s okay, my eats were not exciting at all (seriously I ate 3 apples and 2 bananas yesterday, creative cuisine is obviously my forte). So instead I thought I’d show you my dream day of food, because that’s way more interesting that what I would eat anyway.

Morning Snack

Green smoothie! I love smoothies but I rarely make them because I’m usually too lazy to get out/clean the blender. I should change that.

And because I’m ALWAYS cold and a huge temperature wimp…

I’d follow that smoothie up with my favorite coffee, Larry’s Beans St. Valentino’s blend. Black, please, because I drink coffee like an old man. Your creamer and sugar has no place here.

By the way, if they sell Larry’s Beans anywhere near you go out and buy some NOW. Seriously, get up from your computer, get to the store and get some. It is the best coffee I have EVER tasted. Seriously, I don’t play when it comes to good coffee.

Lunch

I think I will cry on graduation because it means I will no longer be in the same city as Coyote Kitchen, if you’ve ever eaten there then you know I’m not being dramatic. Okay maybe a little.

Marvelous in My Post-Super Bowl Monday {MIMM}

Happy Monday!

I’m not going to lie, I had a late night last night and my alarm clock was one rude awakening this morning. Why is the Super Bowl on a Sunday? I think we all need a day to recuperate afterwards.

Marvelous is… Super Bowl parties! I won’t even pretend like we tried to watch the game. We just wanted an excuse to get together and eat lots of food. And it was some pretty delicious food:

Beer, because what is a Super Bowl party without beer? I’m the one in the group that drinks like an old man so I had an IPA, it was pretty tasty.

I made Flourless Oatmeal Coconut Raisin cookies. I followed Katie‘s recipe for Oatmeal Raisin Cookies, but I doubled it, add 1/2 cup of unsweetened shredded coconut, 1/4 cup almond meal, an egg (I felt pretty guilty about adding an egg to a vegan cookie recipe, but not guilty enough to not do it) and pumpkin pie spice. I for the life of me can’t just make a recipe as is, I just can’t help myself. They came out really tasty and the coconut was a fun addition, even the gluten eaters liked them!

And then a game of Smart Ass broke out. I won thanks to the ridiculous amount of useless knowledge I have stored in my noggin. I would consider trying to get on Jeopardy except I have never in my life gotten a final Jeopardy question right and I feel like that is an important part of the game.

If you were wondering, I was pulling for the Ravens because their team color is purple and that is my favorite color. Who says you can’t pick the winning team based on the team colors 🙂 ?

Marvelous is.. Whatever spurred this crazy productivity I have going on right now. Today I did laundry, dishes, tackled a leg workout (lunges, I still hate you lots!) and got some major work done on a speech for my public speaking class. It feels good to check things off the to do list!

Marvelous is… No snow in the forecast this week!

Boone weather forecast no snow

I think we’ve had pretty much every form of weather in the past week! Tuesday was sunny and 60 degrees, Wednesday was crazy rain with flash flooding, snow on Friday and Saturday and snow squalls last night. I’m ready for some consistent weather for a change. And no snow means I don’t have to worry about road conditions on my way home this weekend, thank you mother nature.

Marvelous is… PDRs! I did 8.5 slowwww miles on the treadmill on Saturday. I hated spending that long on the treadmill but it was either that or run in the 20 degree snow. No thank you. It took 1:43:00 but I did it so I will take it, and I didn’t go crazy after being on the treadmill for that long so I consider that a major accomplishment. I’ve got 9 miles on the schedule for next week!

Marvelous is… Coffee from the coffee shop on campus, I try to save money and make my own at home, but today I splurged because it seriously ups my productivity levels, and dang is that stuff good. I guess that’s why we pay them so much to make it for us.

They brew Counter Culture Coffee and their coffee is super tasty. I highly recommend you picking some up if you can find it at a grocery store near you.

It’s been a pretty fantastic Monday, I definitely can’t complain. Now let’s hope the rest of the week goes this smoothly!

Tuesday Tangents

I can’t believe it’s only Tuesday, the week already feels crazy long. Since I didn’t get home until almost 10:00 pm (yikes) we’re going for an easy post, tangents it is!

  • Why do I also neglect yoga, I went to a class for the first time in weeks and it felt AMAZING. My body was yelling at me for not going sooner. So worth a skipped run, my muscles feel noodle-y and awesome

  • 24 people came to my Pilates class! I usually get around 15, and there was actually a line waiting for class, which only ever happens for yoga and spin classes. It was a little crazy but the energy was so awesome, I hope everyone comes back next week!
  • I had a Smash Mouth’s “All Star” stuck in my head yesterday. I don’t know where it came from but it was not enjoyable.

    The 90s can keep Smash Mouth, I don’t miss them.

  • The bus driver was rocking out to some Justin Timberlake one the ride home yesterday. Sexy Back was played and I won’t pretend that it wasn’t a little bit awesome

  • I’ve down a full jar of sunflower seed butter in 3 days. This is a problem. Mostly for my wallet because that stuff is twice as much as peanut butter. At least it makes my taste buds happy.
  • Today in my public speaking class we had to finish the prompt “If I were in charge of the world…” I talked about how I would make everyone vegetarians. I think I’d be the most unpopular world leader ever.

    I want a shirt with this on it ASAP please.

  • My legs are still tired from Sunday’s 8 mile run. Sad.
  • I realized I’ve been drinking too much coffee today when I couldn’t stop twitching. I’m glad the full-fledged caffeine-addiction is starting early this semester.

     

  • Tomorrow is hump day! Thank goodness.

I’m a Ramblin’ (Wo)Man & Procrastiblogging {WIAW}

I’m really excited for this month’s What I Ate Wednesday theme:

I don’t have any good healthy holiday recipes at the moment. All of my recipes fall into the butter & sugar saturated category which I have absolutely no qualms with. My mom and I will be having Christmas Baking Extravaganza 2012 when I get home for Christmas. I can’t wait. Don’t worry, I’ll share some recipes when we finish. Though we can’t take credit for any of the recipes, they’re old enough that they’re still worth sharing, like our fudge recipe from the 1970s. The recipe looks like it was printed on the Dead Sea Scrolls. I can’t wait!

Well know that I’ve completely sidetracked myself, back to the topic of healthy holiday recipes. Like I was saying, I don’t have any, but this Saturday my friends and I are have a dessert potluck, that’s right a dessert potluck, we don’t mess around with silly things like dinner of nutrients, we go straight for the sugar 🙂 Anyway I’m hoping to do some experimenting with healthy holiday treats then, because even though I love myself some sugar, I can’t help myself still have to healthify it as much as possible. When you healthify things it makes eating half the batch totally acceptable right? I agree.

And you can just go ahead and settle in with my rambling, exam time makes my brain a little mushy and my already short attention span even shorter. The huge cup of coffee next to me probably isn’t helping. Just go with it.

Yesterday morning’s wake up call was particularly painful, luckily I had my peanut butter oats and coffee to comfort me.

I think I’ve eaten the breakfast for more than 100 mornings in a row and if you lived with me you would know that that is no exaggeration. Sad thing is that I’m not even close to getting sick of it. I think that should say something about how wonderful this combination is.

Coffee is slowly becoming it’s own meal lately. It’s a bad bad bad habit but I’m starting to rely on it for all the sleep I’m not getting. Bad Lea, but it’s the only way to make it through exams, sorry body. Luckily it’s been extra delicious lately. While at Trader Joe’s over Thanksgiving break I was picking up some coffee, because Trader Joe’s has miraculously cheap coffee, seriously a miracle, but they were out of my usual coffee choice:

So I splurged an extra $2 for this guy:

and it has been quite a delicious substitution. I just brew it extra strong because the old man in me can’t drink light/medium coffee. It is chocolate-y and just all around delicious and officially on my regular coffee rotation.

My appetite was surprisingly small yesterday morning, usually I’m one hungry beast in the morning, so I grabbed half a square of Baker’s Unsweetened Chocolate on the way out the door so my tummy wouldn’t start growling during class. That’s always an awkward situation.

I snacked on some un-pictured baby carrots and a salad:

Spinach, sweet potato, avocado and Bragg’s liquid aminos. I love this combination, it’s so simple but I love the sweet of the potatoes with the creamy from the avocado plus the savory/smoky of the liquid aminos, plus the avocado gives it some awesome staying power. This salad also fulfilled Tuesday’s Elf For Health challenge. Since the weather has gotten cooler (except for this past week where it’s been in the 60s, which I don’t understand but won’t question!) I haven’t been craving salads like I usually do, but lately I’ve been trying to squeeze more salads into my day which has been a lovely addition. Don’t get me wrong, I’m still eating just as many veggies, they’re just usually roasted instead of in salad form.

And look at the baby sweet potato I used to make this salad!

Excuse the foot. Sad thing is this was the largest sweet potato left in the bag I bought. Actually that’s not sad, I love small food, it makes it extra cute 🙂

I had a snack attack between my last two classes and chowed down on some roasted edamame and this new snack bar find:

I usually buy snack bars at EarthFare because they have a much better variety, but they are more expensive. I haven’t done a very good job of budgeting my money lately and I’ve been spending too much money on things like coffee and snacks on campus, aka frivolous things I don’t need and could avoid if I planned better. So in an effort to cut down on my grocery bill I shopped exclusively at Harris Teeter and the healthy snack bar options were a little slim. I was the snack aisle looking for something gluten-free that wasn’t filled with sugar and funky ingredients and I happened upon these Nature Valley Almond Crunch bars, the ingredient list is pretty simple, they’re gluten-free, have only 6g of sugar per bar, 6g of protein and 13g of healthy fats. I’d call that a winner. I’ll definitely be getting these guys more often because they are much cheaper than what I usually gravitate towards, and still very tasty.  Plus I’m loving the lower sugar content, it’s so hard to find snack bars that aren’t filled with sugar, even if it is natural.

I also had some olives:

I love love love olives. Seriously, as a kid my family would go to Olive Garden and I would make a meal off black olives and breadsticks alone. They make a pretty darn tasty snack, I rinsed them off really well after opening the can so I wouldn’t be too overloaded with sodium.

The professor for my 2:00 class is currently in South Africa and funny thing is I stayed longer in that class than I ever did when he was there. Before you think I’m a horrible student, it’s a project based class so we’re free to leave after he lectures. Back on topic, after class I headed to the coffee shop to kill a little time before I headed to the gym. I had a tiny but un-pictured banana to fuel me through some more homework, are you sensing a theme in the way I spend my free time lately?

Actually it was about the size of this banana. So small! I seriously have an unnatural love for small foods.

7:50pm

I went to a 20/20/20 class at the gym, it’s been too long since I’ve been to a cardio class (I missed them) so I’m super sore today, everything hurts a little bit, somethings hurt a lot. The instructor was my favorite, she is HARDCORE but such a sweet heart. True story one time I went to one of her classes and no one else showed up and since we have to have at least 2 people to have a class (it’s considered personal training or something silly like that if there aren’t more students than instructors) I taught her Pilates and she taught me some ab work. It was a fun trade off.

I told you it was going to be ramble city over here, it’s called procrastiblogging. I’m trying to put off the three cover letters I need to write by Friday. Poor life choice, but I like blogging much more than I like writing cover letters. Much, much more.

ANYWAY, back to what I ate. Let’s see if I can actually stay on topic this time.

I was hungry little beast when I got back to my apartment so I whipped up something quick:

Please don’t mind my dirty stove, just pretend I cleaned up that little spill after I ate dinner. I had scrambled tofu with frozen broccoli, curry powder and Bragg’s. I hope to one day consume enough curry that my skin actually turns yellow from the tumeric. I. Love. Curry.

I also threw some brussels sprouts in the oven to roast while I ate this, because I don’t have the patience to wait for veggies to roast while I’m hungry.

I’m on a big roasted brussel sprout kick lately, I always love them but it is seriously all I want to eat right now. I think I could eat them for breakfast, lunch and dinner. But I don’t, because that would be a little weird.

I’m really loving this combo but I’ll have to find a new one soon because I’m almost out of craisins and greek yogurt and I’m not about to buy more before I go home for a month over Christmas break. I’m in operation fridge clean out mode right now.

And I still wanted something sweet before bed, so went for a new snack that I’ve been loving but everyone’s been making fun of me for, so don’t judge.

Yes, prunes. I’m officially an 80-year old lady for saying this but I love them. They are a good way to satisfy my sweet tooth and don’t have quite as much sugar as most other dried fruits. They are delicious and you can bring on the old lady jokes, I do not care.

Okay props to anyone who made it all the way through that post. It was a doozy. Your dedication is amazing.

Thankful Thursday & Exciting News!

First and foremost, this Thankful Thursday I am thankful for Thankful Thursday. Seriously. I’ve been feeling really scattered today, okay let’s be real this whole week, so I’m loving that I can just take a second to sit back and be grateful. Plus lists are a scattered-blogger’s best friend, I like that I can just brain dump instead trying to make logical sense right no, because let’s be real, that’s not going to happen. (Thanks Jessie for hosting every week!)

Secondly, I’m veryyyyy thankful for some really exciting news I received yesterday. Remember this?

 

Well this design is going to be PUBLISHED in a book. A real live book. I’m so excited!

 

Here’s a better looksies at it. It’s going to be featured in an Appalachian State version of the Artistic Rebuttal Book Project. I’m going to be in a book! Whatttt. I’m especially thankful for this opportunity because I’ve faced a lot of rejection when it comes to my art work, so I get a little overwhelmed when I my work gets accepted for things like this! I hope to make a living off design when I graduate college and achievements like this make me feel like a legit artist.

I’m also thankful for Elf For Health! I’ve been really enjoying the challenges and the opportunity to connect to so many other health and fitness minded people. Tuesday’s challenge was to send a handwritten letter to some one, so my partner and I exchanged letters. I’m not much of a writer so I tried to disguise that by making her a card.

The only problem with homemade cards is that it’s pretty much impossible to find envelopes for them.

And finally I’m thankful for baristas that give you a cup of black coffee that looks like this:

 

That’s what I’m talking about. Getting my money’s worth. So worth almost spilling it as I sat down.

And this is not related to Thankful Thursday but I’m currently eating a pile of brussels sprouts and it makes me really happy.

 

Well I am thankful for brussel sprouts because they are very delicious, so I guess that works.
