Creamy Peanut Butter & Banana Smoothie

Happy almost Friday!

It has been one rough week over here and I am more than ready for the weekend. I woke up Monday morning with a stomach ache and welp, it was all down hill from there. I will just say I spent all Monday praying to the porcelain gods and hating life a little. Yeah, rough.

Today I thankfully feel back to normal and it’s about time too. It has been 7 days since my last workout, 5 days since I’ve eaten vegetables or drunk coffee and 3 days since I’ve had peanut butter. I’m not sure how I’ve functioned without all those things, but I can I assure it was not well.

I’m sorry coffee but you still make me want to puke a little. Give me a few more days and I promise I will be back to chugging you like a champ.

Luckily the rest of this week is looking up!

I have a (glorious!) 4 day weekend ahead of me, some much needed time at home (nothing makes you miss your parents more than being sick alone in your college apartment, good thing I have really awesome roommates who bring me ginger ale and applesauce) and some warm spring weather. Boone decided to be a poo-head and dump 8 inches of snow on us the past four days. I think someone needs to tell mother nature it’s officially spring because I’m not sure she’s gotten the memo.

I totally ate it on some ice on the way back to my apartment yesterday. No more snow please.

If you’re hoping for spring weather like I am, try making this smoothie, cranking up the heat and pretend it’s 75 degrees outside instead of 25, while you drink your smoothie and bask in the warmth. Just don’t blame me for your crazy how power bill.

Creamy Peanut Butter and Banana Smoothies (vegan!)

  • 1/2 package silken tofu
  • 1/2 cup milk of choice (I used almond)
  • 2 cups of spinach (or really as much as you can shove in your blender, the more vitamins the merrier)
  • 1 banana
  • 1 tbsp peanut butter
  • a sprinkle of cinnamon (or much more if you’re a huge cinnamon lover like I am!)
  • ~1 cup ice, or until desired frozen-ness is reached


  1. Place all ingredients in blender
  2. Blend. Easy peasy.
  3. And don’t forget to clean out your roommate’s blender because she won’t appreciate you borrowing it if you leave green stuff in it. Though I don’t understand why not.

Ginger ale and applesauce, and I remember growing up my mom always mixed juice and sprite together for me when I was sick, it was like the ultimate feel better drink.

Do you have any Easter plans? Is it sad that I really miss Easter egg hunts? Those things were awesome.

What I Would Eat Wednesday {WIAW}

I don’t know about you guys, but I’m super ready for Friday. Well, I’m always ready for Friday so that is nothing new. But I would really like it to hurry up and get here.

In other news, the weather is trying to spite me.

A few days ago I said something along the lines of “I’m sick of the cold, I’m going to be PISSED if it snows in March”.

Haha Mother Nature, you showed me. What I wouldn’t give for a nice weekend so I could actually get an outdoor run in. The treadmill is slowly beginning kill me, but it looks like we’re going to be friends for a little longer.

I guess it works out because genius me decided to go running today even though my upper calf/knee is still acting funky from this weekend’s long run, and now I’m living it up with an ice pack and tennis ball on my living room floor because the pain came back full force. This probably means I should take a break but I’m antsy and I want to give up and MOVE. I guess I’ll stick to low-impact cardio until things start getting better.

Now for the food.

On Monday I thought to myself “I’m actually going to take pictures of everything I eat tomorrow so I can do a real What I Ate Wednesday”. Guess how many pictures I took, zero. Whoopsies. That’s okay, my eats were not exciting at all (seriously I ate 3 apples and 2 bananas yesterday, creative cuisine is obviously my forte). So instead I thought I’d show you my dream day of food, because that’s way more interesting that what I would eat anyway.



Okay, this is what I eat for breakfast everyday anyway, yes that’s lame but it is my absolute favorite breakfast and I look forward to eating it every morning. But since I can have anything I want I would add this in too:

Morning Snack

Snacks are always necessary.

Green smoothie! I love smoothies but I rarely make them because I’m usually too lazy to get out/clean the blender. I should change that.

And because I’m ALWAYS cold and a huge temperature wimp…

I’d follow that smoothie up with my favorite coffee, Larry’s Beans St. Valentino’s blend. Black, please, because I drink coffee like an old man. Your creamer and sugar has no place here.

By the way, if they sell Larry’s Beans anywhere near you go out and buy some NOW. Seriously, get up from your computer, get to the store and get some. It is the best coffee I have EVER tasted. Seriously, I don’t play when it comes to good coffee.

I’d go to Coyote Kitchen and get the Moab boat (Coconut rice, black beans, sweet potatoes, blackened tempeh, fried plantains, roasted corn, and scallions, served with sweet red vegan mayo and cranberry salsa). So dang good. I think I will cry on graduation because it means I will no longer be in the same city as Coyote Kitchen, if you’ve ever eaten there then you know I’m not being dramatic. Okay maybe a little.

Afternoon Snack


FROOOO YOOOOO. Of course 🙂 Preferably peanut butter and coffee yogurts topped with lots of Reese’s, chocolate covered espresso beans, more peanut butter and dark chocolate. I think I just drooled a little.


Whole Foods hot bar! Because I’m indecisive and would like as many veggie options as possible. Bring on the salad!

Recipe For Keeping Your Sanity in a Blizzard

I’ve got a fun snow day recipe for you guys today. Sorry to those of you that live in warm climates because you can’t enjoy this fun recipe. Actually, I’m not sorry because I’m super jealous.

I really wish I could take credit for this recipe, but all credit goes to my brilliant neighbors (the same ones responsible for the awesome French party a couple weeks ago). Sometimes, spending a few too many weekends trapped in tiny college apartments can lead to some pretty genius ideas.

Kahlua Snow Cream

Oh you read that right. Finally a reason to look forward to snow days 🙂

  • ~2 cups snow (watch out for yellow snow)
  • 1 shot Kahlua (Bailey’s would be delicious too!)
  • 1/4 cup milk (I used Almond/Coconut)
  • Cinnamon
  • Optional add ins: hot chocolate mix, chocolate syrup (see a trend), pretty much anything else delicious


  1. Combine all ingredients in a mug or glass.
  2. Stir, stir, stir
  3. Add more snow as needed, it condenses down a lot as you stir everything together, I ended up using twice as much snow as I thought I’d need.
  4. Adjust alcohol in proportion to snowfall, I think blizzards justify a second shot. Just saying.
  5. Enjoy responsibly and celebrate your snow day.

Marvelous in My Post-Super Bowl Monday {MIMM}

Happy Monday!

I’m not going to lie, I had a late night last night and my alarm clock was one rude awakening this morning. Why is the Super Bowl on a Sunday? I think we all need a day to recuperate afterwards.

Luckily my Monday was still pretty marvelous

Marvelous is… Super Bowl parties! I won’t even pretend like we tried to watch the game. We just wanted an excuse to get together and eat lots of food. And it was some pretty delicious food:

Beer, because what is a Super Bowl party without beer? I’m the one in the group that drinks like an old man so I had an IPA, it was pretty tasty.

I made Flourless Oatmeal Coconut Raisin cookies. I followed Katie‘s recipe for Oatmeal Raisin Cookies, but I doubled it, add 1/2 cup of unsweetened shredded coconut, 1/4 cup almond meal, an egg (I felt pretty guilty about adding an egg to a vegan cookie recipe, but not guilty enough to not do it) and pumpkin pie spice. I for the life of me can’t just make a recipe as is, I just can’t help myself. They came out really tasty and the coconut was a fun addition, even the gluten eaters liked them!

And then a game of Smart Ass broke out. I won thanks to the ridiculous amount of useless knowledge I have stored in my noggin. I would consider trying to get on Jeopardy except I have never in my life gotten a final Jeopardy question right and I feel like that is an important part of the game.

If you were wondering, I was pulling for the Ravens because their team color is purple and that is my favorite color. Who says you can’t pick the winning team based on the team colors 🙂 ?

Marvelous is.. Whatever spurred this crazy productivity I have going on right now. Today I did laundry, dishes, tackled a leg workout (lunges, I still hate you lots!) and got some major work done on a speech for my public speaking class. It feels good to check things off the to do list!

Coffee shops and classical Pandora stations make me 1000x times more productive. I need to keep this in mind.

Marvelous is… No snow in the forecast this week!

Boone weather forecast no snow

I think we’ve had pretty much every form of weather in the past week! Tuesday was sunny and 60 degrees, Wednesday was crazy rain with flash flooding, snow on Friday and Saturday and snow squalls last night. I’m ready for some consistent weather for a change. And no snow means I don’t have to worry about road conditions on my way home this weekend, thank you mother nature.

Marvelous is… PDRs! I did 8.5 slowwww miles on the treadmill on Saturday. I hated spending that long on the treadmill but it was either that or run in the 20 degree snow. No thank you. It took 1:43:00 but I did it so I will take it, and I didn’t go crazy after being on the treadmill for that long so I consider that a major accomplishment. I’ve got 9 miles on the schedule for next week!

Marvelous is… Coffee from the coffee shop on campus, I try to save money and make my own at home, but today I splurged because it seriously ups my productivity levels, and dang is that stuff good. I guess that’s why we pay them so much to make it for us.

They brew Counter Culture Coffee and their coffee is super tasty. I highly recommend you picking some up if you can find it at a grocery store near you.

It’s been a pretty fantastic Monday, I definitely can’t complain. Now let’s hope the rest of the week goes this smoothly!

Can’t Complain {MIMM}

Hey guys! I hope your Monday is going awesome.

My Monday’s been pretty boring, but I can’t complain, I’ll take boring over stinky any day.

I can’t complain… about my pretty low-key weekend too. It snowed Friday morning then froze over that afternoon so I spent most of the weekend stranded in the apartment. Sometimes it feels pretty awesome to hang out in your PJs until 1 pm 🙂

I can’t complain… about my 8 mile run! A new PDR (fyi you’ll probably hear that every week until my 10-mile race!) It was tough and I thought about quitting approximately 28374 times, but I sucked it up and finished, even though that mean running back and forth across the park parking lot for the last 0.75 mile because the sun was going down and that was the only area with a street light, and I like not getting kidnapped. Did I mention it was 33 degrees out? I’m not sure where all this commitment came from but I like it.

I can’t complain… because I saw a beaver on my run yesterday!


I ran past it the first time and it didn’t even register in my head it was a beaver. Then I had to run back and get a picture (from a safe distance, beavers are vicious). I think he was drunk because he randomly fell over and then staggered off into the woods. I don’t know how a beaver would get drunk but that’s not the point.

I can’t complain… about this nut butter. The Earth Fare near me just started carrying Wild Squirrel nut butters and holy cow. Delicious. You need to keep me away from these things.

That would be Vanilla Espresso almond butter, can you think of a more perfect food? No. And yes I cut around all three side of the packet to get out every last smidgen of almond butter. Not ashamed.

Kale, olive oil, salt, pepper and nutritional yeast. Even my kale-hating roommate ate these. Success!

I can’t complain… about running because I’m thinking about signing up for this half-marathon in May. It’s a week before graduation and only 30 minutes away from Boone. I’m just trying not to let the elevation map freak me out.

Health-ified Pumpkin Pie, A Halloween Party & Snowicane Sandy!

Isn’t it a little backwards that a hurricane causes record-breaking snow in October? I think so. We got around 6 inches, but I won’t complain too much because I did get the day off school! We’re pretty used to snow and rarely ever get snow days so it was a nice treat, I spent all day in my PJs, hanging out with my neighbors and not doing school work. Until I remembered that I have a Management exam tomorrow. Whoops.

I hope everyone in the northeast is okay though! The weather reports from New York/New Jersey are crazy!

Saturday my roommates and I hosted a Halloween party at our apartment. We had lots of food, lots of fun and lots of people in our tiny apartment. Halloween party success!

Some of the food! We went potluck style. I made my mixed bean and sweet potato chili and a health-ified pumpkin pie, which people actually ate! The recipe is coming at the bottom of the post!

Other foods included hot dog mummies (turkey, beef and kosher, quite the spread), meatballs, brownies, meat chili, tortilla chips, white chocolate covered nut butters (which were dangerously good – I ate wayyy too many of those, sorry tummy), halloween candy (of course), Oreo cool whip cake (also dangerously good), Papa John’s pizza (hey, we are college kids) and of course some pumpkin beer.

The party was costume optional, but we still had some good ones.

We also had a ghost, Peter Pan, Sandy from Grease, something creepy, a taco (my favorite!), Daphne and Fred (who’s a little hidden)

We all had a fun time and ate way too much food. A perfect night.

Health-ified Pumpkin Pie

(Gluten-free, vegan option)


  • 10 small/medium dates
  • 1 cup roasted almonds
  • 3/4 cup unsweetened shredded coconut
  • 1 tbs coconut oil
  • 2 tbs water
  • 1 can pumpkin puree
  • 1 block silken tofu
  • 1/4 cup honey (or agave for a vegan option, other sweeteners would probably work as well, but I can’t vouch for that)
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice


For the Crust

  1. Preheat oven to 350
  2. Combine first 4 ingredients in a food processor until dates and almonds are broken down
  3. Slowly add in water until mixture begins to stick together, adding more or less as needed
  4. Using a spatula press into a pie tin (or a round cake pan if you are a college student with an under-equipped apartment kitchen, not that I know anything about that)
  5. Bake for 10 minutes

For the Filling

  1. Combine the final 5 ingredients into a food processor
  2. Process until smooth
  3. Pour mixture onto crust, smoothing with a spatula
  4. Bake at 350 for 50 minutes, or until an inserted tooth pick comes out clean.

As a warning, this pie wasn’t meant to taste exactly like a typical pumpkin pie. It definitely tastes healthy, but is delicious in it’s own right. It’s still a tasty treat, just don’t expect it to taste exactly like a conventional pumpkin pie.

Research Paper Hell.

School is slowly sucking the life out of me. I’m absolutely positive that if a professor assigns me one more project before the end of the semester I will literally explode. And I would feel sorry for who ever has to clean up that mess.

At the moment I’m ignoring everything in life that is not this 20-page research paper I have due on Sunday. Maybe it was assigned at the beginning of the semester and I started it 4 days ago, and maybe it was a supposed to be a group project I was sure I could tackle on my own. But we aren’t going to talk about that.

However I will mention that you should never pick a business you actually like to write a 20 page research paper on. Because it will make you hate them. I’m not sure I’ll ever be able to drink a cup of Caribou Coffee again. I’m sad about that, I’m also sad that I can tell you their total assets for this quarter. $143 million if you were wondering, but I’m sure you weren’t. Because I know I wasn’t.

On top of that Mother Nature can’t make up her mind and apparently she wants it to be winter again.


Snow in April is never something I’ll be okay with.

Now let’s focus on fun things.

Tuesday night I went to an arm balance yoga workshop. It was fun, but made me feel like a weakling. In a good way. My arms hurt, but I left with lots of fun poses to work on.

Extreme hummingbird, here I come. Actually, give me a few years for that one.

I also got some very fun the mail the other day.




Luna sent me a handwritten card for my birthday, along with a Caramel Nut Brownie Luna Bar. Sweetest company ever. I totally wasn’t expecting it and it made my day. The bar made good paper researching fuel too. Always a bonus.

Time to go chug out a few more pages on this paper. Only 2 more weeks until summer, I can make it. I hope.
