Spring Time {MIMM}

Happy Monday!

Can I just say that there’s nothing more wonderful thank waking up to beautiful, sunny, 65 degree weather on a Monday morning? Talk about starting the week off right.

Marvelous is… Art crawl. Lots of good art, lots of good food. Not to mention I got a free handmade cup from a gallery featuring clay pieces, I’m actually drinking coffee out of it right now (of course!).

Marvelous is… drinks with friends on a Friday night.  I’m not your typical party-obsessed college student, and I prefer quieter nights with friends than a wild and crazy party, but sometimes a little bar hopping is necessary to your college experience.


The bartender convinced my friend that the 32oz beer was a much better deal than the pint, which it was, it was also the size of her freaking head (don’t worry mom and dad, mine’s the normal sized beer in the bottom of the picture).

I asked the bartender for the least-sweet shooter they had, and I’m pretty sure he lied because it tasted like straight up limeade. Bummer. I got drink redemption with a Jim Bean on the rocks later on in the night. I’m such an old man, I don’t play with that fruity stuff.

Marvelous is… this freaking dessert:

A cinnamon roll the size of my face topped with vanilla ice cream. Whattttt. So. Good. I’m pretty sure the restaurant pumps the smell of cinnamon into every corner of the restaurant to make you want to order one of these bad boys. Sometimes a little gluten is worth it.

Marvelous is… hiking trips with fellow group fitness instructors!

We had plans to go to Hawksbill Mountain in Morganton, but only 4 of us were able to make it so we stayed closer to Boone and tried the Glen Burney trail in Blowing Rock. I’ve done the hike once before and it’s a nice little hidden gem in Blowing Rock. The hike is about 1.5 miles ending at a super gorgeous waterfall. It’s quite the workout because you hike down to the waterfall, which means the return hike is uphill the entire way. My booty got a serious workout on the way back!


All four of us! I promise I’m not that short, the rock we were on was slanted.

Marvelous is… taking time to cook a REAL dinner. Or as real as a college dinner for one can be. I’ve been in an eggs + frozen veggie rut and it feels good to get creative in the kitchen again!

Kale salad with lacinato kale (my first time trying it and I think I like it better than curly kale, it tastes less grass-y), baby portobella mushrooms, roasted sweet potatoes and eggplant, lemon juice, garlic, curry powder, cumin, salt, pepper and that last couple drops of my bottle of Bragg’s liquid aminos. So fresh and clean tasting.

Cinnamon and curry roasted sweet potatoes, sauteed spinach with onion and tomato, with sauteed sliced eggplant on the side.

Not much protein happening here, but dinner’s usually finished up with a cup of greek yogurt to balance things out.

Marvelous is… today’s special guest lecturer in my Dance History class. He came to talk with us about the history of musical theatre and he was quite the character. He would randomly start singing parts of the lecture and danced through half of it as well. I imagine if Mr. Rogers had a doctorate in Dance History and gave college lectures, it would go something like that. He was quite the character.

Oh Mr Rogers, I still miss you dearly.

We also watched a Broadway documentary narrated by Julie Andrews, everything with Julie Andrews is marvelous. Everything.

Marvelous is… SPRING WEATHER. In Boone. FINALLY! It felt amazing to walk out the door this morning and not have to grab a jacket.

I love beautiful days in Boone because all the hippies, slack-liners, and puppies come out. Not to mention Boone is absolutely gorgeous when the weather decides to cooperate, there’s no better place to be.

Veggie Lovin’ {WIAW}

Happy Hump Day!

Whew, it’s been a long day, I’ve been slacking on sleep and it’s starting to catch up with me. Pretty much sums up my feelings:

But I still kicked out 5 miles on the treadmill! I’m 97% sure the treadmill I was on was a liar because it said I finished in 47 minutes which I do not believe for a second, but I’ll pretend that I do because it’s good for my ego 🙂 . Sometimes post-workout endorphins > naps.

Goal tonight: 7+ hours. Mostly because I’m out of coffee (the HORROR) and have nothing to fall back on. I need to get some coffee back in my life ASAP.

Maybe I have a problem, but I’m 100% okay with that.

Anywho, happy What I Ate Wednesday!

(Thanks Jenn!)I’m excited for this month’s theme because if I’m a big fan of veggies, if you couldn’t tell by pounds of them I eat everyday.

Here are some ways I’ve been enjoying my veggies lately:

cooked broccoli, onion and mushroom

My go-to lunch lately, broccoli, onions and mushrooms with a little Bragg’s. I use frozen broccoli because it’s much more convenient, not to mention cheaper. I’ve found sautéing frozen broccoli in a pan helps prevent the broccoli from getting mushy like it does when you steam it.

Roasted brussel sprouts and carrots. Roasted veggies are the bestttt. I wish they didn’t take so long to roast but it’s worth it. I add a little Bragg’s to the brussel sprouts (because I’m addicted) and the carrots are really good with a little cinnamon and salt.


Sweet potatoessss. Which are good anyway you slice them. Pun intended thank you very much.

PURPLE SWEET POTATOES. I found these beauties at Earth Fare over the weekend and I got suckered into buying them because they were purple and I’m a big fan of all things purple. They’re apparently from Japan, and the flesh white like white potatoes (thank you captain obvious). They taste sweeter than a regular potato but they aren’t quite as sweet as regular sweet potatoes. Very tasty with a little coconut oil, cinnamon (okay a lot of cinnamon) and a pinch of salt.

And this one isn’t a vegetable but still delicious:

Fried plantains! I’m a plantain lover and will automatically order anything at a restaurant that is served with plantains. No joke. I picked one up on a whim at Earth Fare (hmm… I’m seeing a trend) and fried it up in a little coconut oil. So simple and so good. I should definitely cook these guys up more often.

What are your favorite vegetables? I can’t pick!

How much sleep do you need/how much to do typically get? I can function pretty well on 6, which is what I usually get but I feel much better with 7 or a little more. It’s always interesting to me because I know people who sleep 10+ hours a night and other people who only get 5, I wonder how that works?

Not-Quite-Wordless Wednesday

Avocado Cocoa Smoothie:

  •  1/2 Avocado
  • 1 cup milk (I used soy)
  • 1 tsp honey (if you have a normal sweet tooth you may want to add more, you can also sub agave for a vegan option)
  • 1/2 tsp vanilla
  • 1 tbsp cocoa powder
  • Dash of cinnamon
  • Ice cubes

Blend. Chug. Repeat.

I thought it tasted like much less sugary Wendy’s frosty. Yummy. But my brothers reaction was “EWWW! You put avocado in your smoothie?! EEEEEEEEEEEEWWWWWWW!”
He’s very mature for an 18 year old, clearly.

Sometimes I like to pretend I have a fashion sense. Thank you Mother Nature for making warm enough for me to wear a skirt. Sorry to everyone that caught a glimpse of my casper-like legs.

I might be a crazy cat lady, but that is the cutest face on the face of the earth. Try to deny it, try.

Yes it looks weird, no I don’t care, and it was delicious. Seriously someone should try it and back me up because my whole family is currently disgusted with me.

Post mixing. I thought maybe if my first photo didn’t make it look appetizing, a second bad cell phone picture that makes it look like cat puke would. I see a future in food styling. Don’t crush my dreams.
