Spring Time {MIMM}

Happy Monday!

Can I just say that there’s nothing more wonderful thank waking up to beautiful, sunny, 65 degree weather on a Monday morning? Talk about starting the week off right.

(Thanks Katie!)

Marvelous is… Art crawl. Lots of good art, lots of good food. Not to mention I got a free handmade cup from a gallery featuring clay pieces, I’m actually drinking coffee out of it right now (of course!).

handmade clay cup

Marvelous is… drinks with friends on a Friday night.  I’m not your typical party-obsessed college student, and I prefer quieter nights with friends than a wild and crazy party, but sometimes a little bar hopping is necessary to your college experience.

Photo0980

The bartender convinced my friend that the 32oz beer was a much better deal than the pint, which it was, it was also the size of her freaking head (don’t worry mom and dad, mine’s the normal sized beer in the bottom of the picture).

shots

Shots, shots, shots!

I asked the bartender for the least-sweet shooter they had, and I’m pretty sure he lied because it tasted like straight up limeade. Bummer. I got drink redemption with a Jim Bean on the rocks later on in the night. I’m such an old man, I don’t play with that fruity stuff.

Marvelous is… this freaking dessert:

cinnamon sensation macados

A cinnamon roll the size of my face topped with vanilla ice cream. Whattttt. So. Good. I’m pretty sure the restaurant pumps the smell of cinnamon into every corner of the restaurant to make you want to order one of these bad boys. Sometimes a little gluten is worth it.

Marvelous is… hiking trips with fellow group fitness instructors!

glen burney trail waterfall blowing rock nc

glen burney trail waterfall blowing rock nc

We had plans to go to Hawksbill Mountain in Morganton, but only 4 of us were able to make it so we stayed closer to Boone and tried the Glen Burney trail in Blowing Rock. I’ve done the hike once before and it’s a nice little hidden gem in Blowing Rock. The hike is about 1.5 miles ending at a super gorgeous waterfall. It’s quite the workout because you hike down to the waterfall, which means the return hike is uphill the entire way. My booty got a serious workout on the way back!

hiking

All four of us! I promise I’m not that short, the rock we were on was slanted.

Marvelous is… taking time to cook a REAL dinner. Or as real as a college dinner for one can be. I’ve been in an eggs + frozen veggie rut and it feels good to get creative in the kitchen again!

kale salad

Kale salad with lacinato kale (my first time trying it and I think I like it better than curly kale, it tastes less grass-y), baby portobella mushrooms, roasted sweet potatoes and eggplant, lemon juice, garlic, curry powder, cumin, salt, pepper and that last couple drops of my bottle of Bragg’s liquid aminos. So fresh and clean tasting.

kale salad

Kale, sweet potato, curry powder, and apple cider vinegar

roasted eggplant and sweet potato

Roasted eggplant and sweet potatoes (I think I see a theme happening…)

vegetarian dinner

Cinnamon and curry roasted sweet potatoes, sauteed spinach with onion and tomato, with sauteed sliced eggplant on the side.

Not much protein happening here, but dinner’s usually finished up with a cup of greek yogurt to balance things out.

Marvelous is… today’s special guest lecturer in my Dance History class. He came to talk with us about the history of musical theatre and he was quite the character. He would randomly start singing parts of the lecture and danced through half of it as well. I imagine if Mr. Rogers had a doctorate in Dance History and gave college lectures, it would go something like that. He was quite the character.

Oh Mr Rogers, I still miss you dearly.

We also watched a Broadway documentary narrated by Julie Andrews, everything with Julie Andrews is marvelous. Everything.

Marvelous is… SPRING WEATHER. In Boone. FINALLY! It felt amazing to walk out the door this morning and not have to grab a jacket.

I love beautiful days in Boone because all the hippies, slack-liners, and puppies come out. Not to mention Boone is absolutely gorgeous when the weather decides to cooperate, there’s no better place to be.

What made your Monday marvelous?

Do you like hiking? Where are your favorite places to hike?

What’s you’re favorite thing about spring? Flowers, beautiful weather and my birthday!

Holy Sleet & New Goals

Holy sleet mother nature.

sleet

Pardon my very bad weather pun.

We got an inch of sleet here in Boone today. What. And then it started snowing on top of that. Double what. I just want spring, is that such a ridiculous request? Thankfully it will be 65 this weekend, talk about some bipolar weather.

On the bright side, it was a good day for a cup of coffee. But let’s be real, everyday is a good day for a cup of coffee 🙂

Lots and Lots of Goals

Actually I only have three goals to talk about. I just like to exaggerate. I love springtime because it’s such a refreshing time of year (if Mother Nature decides to actually let us have spring this year) and a good time to uh, getyoshitotogether before the end of the school year, graduation, summer, defrost after winter, whatever your situation. So let’s talk goals:

Best Body Bootcamp

best body bootcamp

I’m started Tina‘s Best Body Bootcamp this week (and loving it! My muscles are already crying for mercy in the best way possible). Every week she asks us to set 2 goals to work on throughout the week. This week I’m focusing on:

  • Sleep: I suck at sleeping. That sounds like a ridiculous statement, but it’s true. Most nights I average 5-6 hours for no good reason at all other then I’m bad at going to bed early and I always wake up early. This week I’m trying for at least 7 hours of sleep every night. It’s been a little rocky so far, but I’m trying!
  • Stretching: My legs have been super duper tight lately and I need to stretch more consistently especially after working out. Plus since this tendonitis flare up I’ve been going gung ho on whatever anti-injury measures I can find and stretching seems to be key.

Monthly Resolutions

resolutions_challenge

For the month of March I made the goal to clean up for at least 5 minutes everyday. I was actually pretty successful at this goal, thought you probably couldn’t tell by looking at my room, but it does look a lot better than it did at the beginning of the month which is a plus. My roommates and I even took a day to spring clean our entire apartment and I straightened up my room a lot.

The point of this goal was to get in the habit of picking up after myself, which actually worked. Now I have to pick up at least one thing off my floor before I go to bed (who am I?). Now if I could just get the rest of my life organized…

Now that it’s April (when did that happen?) it means it’s time for a new monthly resolution. I already know I’m terrible at maintaining more than 1 or 2 goals at one time so I’m tying this goal back into one of my bootcamp goals:

SLEEP

Sleepy kitty.

I’m slowly learning that just because I can function on 5 hours of sleep at night doesn’t mean I should and it certainly doesn’t mean it’s healthy. When I was sick a couple weeks ago I slept all day long. Seriously, I think I slept 18 hours that day, at least. And you know what? It felt glorious. Well minus the whole puking my guts out. Sorry that was gross, anyway it was a wake up call (haha, sleep puns) that I feel so much better when I have an adequate amount of sleep.

So my goal this month is to get at least 7 hours of sleep every night. I’ve already failed the past two nights (6.5 and 5.5 hours, yikes), but I’m hoping to redeem myself. I know 8 hours of sleep is ideal for most people, but 7 is a pretty healthy amount and much more attainable for me than 8, so I’m going with that.

Do you set monthly/weekly/yearly goals?

How much sleep do you usually get?

Is anyone else as ready for warm weather as I am? If it snows one more time I will seriously start crying. Not even being dramatic.

Pretty Marvelous for a Monday {MIMM}

Four day weekends need to start happening every weekend. Three day school/work weeks? I can roll with that.

(Thanks Katie!)

Mondays are pretty marvelous when they don’t involve any responsibilities. Can this happen more often?

Marvelous is… lots of good coffee.

caribou coffee larry's beans

Caribou and Larry’s Beans. Basically the epitome of coffee glory.

I’m going to get design nerdy for a second and confess my love for Caribou Coffee’s new branding and marketing. The design is 100x better than their previous design and such a neat concept. I’m also loving the new logo and the fact they hid a coffee bean in the moose.

Marvelous is… browsing Barnes & Noble on rainy days, and snagging some fun reads.

barnes and noble books runner's world pilates anatomy

So excited to get my anatomy learning on! I don’t care how nerdy that sounds.

Marvelous is… spending the afternoon browsing Whole Foods and REI. They finally built an REI in my town earlier this year and I just now got the chance to go. I spent a good 20 minutes lusting over beautiful new workout clothes I can’t afford. One day…

Marvelous is… optimistic purchases.

running fuel honey stingers and clif shot gel

Despite this tendonitis, I’m still hopeful a spring half marathon is going to happen (fingers crossed!). I haven’t experimented with mid-run fueling and the honey stingers were on sale so I picked up a pack along with Clif Shot gel. Let’s hope I get to use them!

Marvelous is… Best Body Bootcamp. Today was the first day and the workout was awesome. A full body strength workout that made my muscles cry a little. Love it. And I’m already learning lots of new exercises that I’m excited to incorporate into my routine even when bootcamp is over.

Marvelous is… progress on my research paper. 2/10 pages done! Too bad it’s due Wednesday. Ah procrastination, we meet again.

Marvelous is… sushi. Enough said.

avocado cucumber sushi roll

Bonus of being a vegetarian? I’m not sketched out by cheap sushi. $3.50 for that sucker.

Marvelous is… Mediterranean food! Dropping my brother off at college means another lunch at the Mediterranean Deli, and I am not complaining one bit. So. Dang. Good.

mediterranean food

Clockwise starting under the pita: Eggplant and squash stew (so good), sauteed eggplant and grilled veggies.

I’m sure there are plenty of other really delicious restaurants in Chapel Hill that we are missing out on, but I don’t even care because the food here is that good. Plus they have gluten-free pita bread and I don’t think there is much that beats that.

Marvelous is… that kitty in the window.

chapel hill bookstore cat

Marvelous is… running! I did 2 very cautious and slow miles on the treadmill today. There’s still a little pain but my knee is feeling much better. I’m hoping to slowly work my mileage back up (with lots of rest, ice, anti-inflammatories, stretching and EMS therapy) over the next couple weeks. I’ve still got my eyes on the Tar Heel 10-miler in 3 weeks, but I’m taking things one step at a time. I’m not about to get re-injured.

Marvelous is… old lady Easter candy.

ginger chews

I stopped getting an Easter basket a long time ago (though I still ask for one every year because I’m just a kid in a 21 year old’s body) my brother and I pestered my mom into buying us some candy at Trader Joe’s. I think it officially means I’m old when this is the candy I pick out. And the bag is empty because I finished it in 2 days. You could say I like ginger a little bit.

Marvelous is… spring time temperatures and flowers. Please don’t go away!

daffodil

Marvelous is… spending home quality time with the family. I don’t think I’ll ever stop enjoying that.

What made your Monday marvelous?

Do you like sushi? I love it but my mom isn’t a fan, she says it needs more ketchup 🙂

Do you still get an Easter basket? Or do you give them?

Creamy Peanut Butter & Banana Smoothie

Happy almost Friday!

It has been one rough week over here and I am more than ready for the weekend. I woke up Monday morning with a stomach ache and welp, it was all down hill from there. I will just say I spent all Monday praying to the porcelain gods and hating life a little. Yeah, rough.

Today I thankfully feel back to normal and it’s about time too. It has been 7 days since my last workout, 5 days since I’ve eaten vegetables or drunk coffee and 3 days since I’ve had peanut butter. I’m not sure how I’ve functioned without all those things, but I can I assure it was not well.

black coffee and kale chips

I’m sorry coffee but you still make me want to puke a little. Give me a few more days and I promise I will be back to chugging you like a champ.

Luckily the rest of this week is looking up!

I have a (glorious!) 4 day weekend ahead of me, some much needed time at home (nothing makes you miss your parents more than being sick alone in your college apartment, good thing I have really awesome roommates who bring me ginger ale and applesauce) and some warm spring weather. Boone decided to be a poo-head and dump 8 inches of snow on us the past four days. I think someone needs to tell mother nature it’s officially spring because I’m not sure she’s gotten the memo.

snow on pants

I totally ate it on some ice on the way back to my apartment yesterday. No more snow please.

If you’re hoping for spring weather like I am, try making this smoothie, cranking up the heat and pretend it’s 75 degrees outside instead of 25, while you drink your smoothie and bask in the warmth. Just don’t blame me for your crazy how power bill.

Creamy Peanut Butter and Banana Smoothies (vegan!)

creamy peanut butter and banana smoothie

Ingredients

  • 1/2 package silken tofu
  • 1/2 cup milk of choice (I used almond)
  • 2 cups of spinach (or really as much as you can shove in your blender, the more vitamins the merrier)
  • 1 banana
  • 1 tbsp peanut butter
  • a sprinkle of cinnamon (or much more if you’re a huge cinnamon lover like I am!)
  • ~1 cup ice, or until desired frozen-ness is reached

Directions

  1. Place all ingredients in blender
  2. Blend. Easy peasy.
  3. And don’t forget to clean out your roommate’s blender because she won’t appreciate you borrowing it if you leave green stuff in it. Though I don’t understand why not.

creamy peanut butter and banana smoothie

What are your go-to sick foods?
Ginger ale and applesauce, and I remember growing up my mom always mixed juice and sprite together for me when I was sick, it was like the ultimate feel better drink.

Do you have any Easter plans? Is it sad that I really miss Easter egg hunts? Those things were awesome.

Spring Break Edition {WIAW}

Guys, I’ve been a pretty terrible blogger lately. This poor little guy has been more than a little neglected and I feel kinda bad. But between spring and the inevitable school work catch-up after spring break (what professor assigns projects over spring break? Seriously), life’s been a little crazy. And mostly I’ve been a little lazy because I’m wishing spring break would come back.

Responsibilities are silly, I’d like to go back to the beach pretty please.

sunrise nags head nc

Mother Nature is also trying to play a mean joke on me with this forecast:

boone nc forecast

That’s funny, I thought spring was supposed to be warm. Thank you weather.

Sorry for all the complaining, cold weather makes me cranky. Whining over. You know what I can’t complain about?

(Thanks Jenn!)

This week my food is coming at you spring break style. I’ll admit that I didn’t eat too many vegetables over break (but I did eat lots and lots of chocolate) and you know what, I don’t feel bad about it. Sometimes you just need to stuff your face with junk food.

avocado broccoli slaw salad

But let’s kick things off with something healthy shall we? This combination is one of my new favorites and I ate it everyday for lunch during Pilates training. It’s broccoli slaw, mixed with avocado, topped with sunflower seeds and a little salt and pepper. Light but filling and you can do the Pilates ab series afterwards without wanting to puke.

I was going to recreate this for lunch today but Harris Teeter was out of avocados. TRAVESTY. Bigger travesty is that they were out of bananas too. Get it to-freaking-gether Harris Teeter, this girl needs her produce.

goodberry's frozen vanilla custard with chocolate chips

Vanilla frozen custard with chocolate chips mixed in. Pure heaven. I’m a hard core fro yo lover, but even I need some heavy duty frozen custard every once in a while. So good.

traderjoes85pcnttumacobarset-jul4-10web

I don’t know what my deal is but I’ve been craving chocolate like nobody’s business lately. It’s all I want to eat and I can’t seem to get enough of this. But this Trader Joe’s chocolate bar definitely helps. Is it bad that I think 85% tastes super sweet after eating so much Baker’s chocolate?

And onto the Outer Banks! I have a full recap coming soon (I owe you guys so many recaps it’s ridiculous, I need to get back on top of things) but for now I’ve got food. I didn’t lug my camera to any of the restaurants because it’s huge, so the pictures aren’t the best, sowwy.

Wednesday

Dinner

We had a Restaurant.com deal for Sanya Asian Bistro so we stopped there for dinner after getting into town Friday night. It was perfect because we could all eat there (I tend to make things difficult when it comes to eating out, whoopsies) and we saved $50 off our bill. Awesome.

I accidentally filled up on trail mix before heading to dinner (I seriously cannot control myself around the stuff, it’s too good) so I was in the mood for something lighter. So I ordered an Avocado and Cucumber roll.

vegetable sushi

It was really good, but I don’t think I’ve had bad vegetarian sushi, it’s kinda hard to mess up. You should know that I ate all of my ginger, then my friend’s ginger (ironic because she is ginger!) and then my boyfriend’s ginger. I guess you could say I like ginger a little.

Drinks

Later that night we headed to Lucky 12 Tavern for drinks. It ended up be perfect because it was walking distance from our hotel, they had a great beer selections and there was a $5 martini special. Um, awesome.

lucky 12 tavern flying dog ale

I had a Flying Dog K-9 Winter Ale per recommendation from my boyfriend. He’s a serious beer connoisseur, and it ended up being a delicious choice.

And because we had to take advantage of the $5 martinis, me boyfriend and I split a dirty martini. Pretty much the only martini this old man could handle. I can’t do sugary frou-frou drinks and this fit the bill.

dirty martini

Please ignore the awkwardly placed olives and straw.

Thursday

Our hotel room had a small kitchen, so to save money we at breakfast and lunch there, which was a very boring combo of eggs and frozen veggies, we don’t need pictures of that.

Dinner

We had dinner at Tortuga’s Lie (which has been feature on Diners, Drive-Ins and Dives!). But I was a bad blogger because I left my phone in the car and didn’t get a picture of my meal. That’s okay because I had beans and rice and I’m pretty sure we all know that that looks like. It was extra delicious after a long day of sight seeing, but if you mess up beans and rice that’s pretty sad.

I’m sure any seafood lovers out there are very sad that I passed up the opportunity for fresh caught local seafood. Yeahhhh vegetarians.

Dessert

Despite trying incredibly hard to find a local ice cream shop that was open, we had no such luck. It’s still considered the off season so lots of places are closed until April. Luckily, Sweet Frog was there to save the day. Not as good as local ice cream, but it hits the sweet-craving, chocolate-loving spot.

sweet frog frozen yogurt

Chocolate fro yo with peanut butter chips, Reeses pieces, chunks of Reeses cups and a drizzle of hot fudge. Can you tell I hate chocolate and peanut butter? I’m not even going to lie, I could totally have eat another cup’s worth. No shame.

Friday

Dinner was some pizza place and I ordered a Greek salad. Boring. The one place in town with gluten-free pizza was no longer in business (whhhhyyyyyy?????). So salad it was.

Dessert

Don’t worry I balanced that salad out with some serious ice cream.

ben & jerry's everything but the…

ben & jerry's everything but the...

Oh. My. Goodness. Can I just wax poetic about how AMAZING this ice cream is? Ben and Jerry, you are pure ice cream geniuses. I don’t even care that it was store bought, I wish I could jump into this pint and live there. No I don’t, that would be a little sticky, but still. Holy cow. Vanilla and chocolate ice cream with peanut butter cups, heath bar pieces, white chocolate chips and fudge covered almonds. I’m drooling a little bit right now.

Drinks

Friday night we headed to the Outer Banks Brewing Station for drinks and late night snacks (which was also featured on Diners, Drive-ins and Dives!). It ended up being a really cool place. The food was delicious, we ended up demolishing a plate of black bean dip and chips. The beer was equally amazing, they brew it at the restaurant and the process is powered by a wind turbine, I love that they’re environmentally friendly!

One of my friends was sweet enough to buy a bottle of champagne for all of us to celebrate my roommate’s engagement!

Photo0946
I don’t remember exactly what kind it was, but it tasted like bubbly grape juice. Cheers.

And because I drink like an old man I switched to beer. I love me some heavy duty (none of that light stuff) and dry red wine, old man status over here.

I failed on taking a picture of my beer but it was sooo good. I ordered their Full Circle Robust Porter (a fat and sassy robust porter with complex nuts and dried fruit-like aromas over a big, round, and slightly toasty palate) I love that they describe it as fat and sassy. I think I’m only going to drink fat and sassy beers from now on, that sounds like a good policy to me. Basically the beer was smooth, heavy and darn tasty.

And now I’m skipping to Sunday because lunch was delicious.

Photo0947

Yet another trip to the Mediterranean Deli in Chapel Hill. I have the hardest time ordering at this restaurant because there are too many tasty looking vegetarian and gluten-free options. I’m not used to having so many choices. I like it, even if it takes me 15 minutes to order.

I had a vegetarian plate with sauteed cauliflower, roasted vegetables, sauteed eggplant, avocado and feta salad and gluten-free(!) pita points. Delicious. I also had too many dates for dessert. I have not control when it comes to those dried out little pieces of nature’s candy. Those dates fueled my 3 hour drive back to school (ugh, one thing I won’t miss when I graduate).

Upon arriving back at my apartment, I was welcomed by this site

Photo0948

I donated to a living playground initiative at an elementary school, and got a free candy bar and jar of peanut butter from Justin’s in return for my donation. Pretty sweet reward if you ask me. Pun intended.

Now I just want to go back to spring break. Anyway, I’ve got an 8am class in the morning (yippee) so it’s time for this girl to get to bed.

What’s your favorite vacation food? ICE CREAM!

What’s your favorite drink (alcoholic or not)? Water, black coffee, red wine and beer. I told you, old man over here.

Who’s ready for spring?

Excitement {MIMM}

I hope you guys had a very marvelous Monday, I know I did. Thank youuuu spring break!

(Thanks Katie!)

Marvelous is… Sleeping for 9 WHOLE HOURS last night. Glorious doesn’t even begin to describe it. I can’t even tell you the last time I got more than 7 hours of sleep much less 9. Clearly sleep needs to be a bigger priority in my life.

Marvelous is… Pilates teacher training! I was at training all weekend (hence me being MIA) and I learned sooo much. I can’t wait to take everything I learned back to my classes, I feel like all the knowledge I gain is going to make my classes a million times better. It was such a great experience, I just have the Mat 1 training done, so I’m hoping to work my way through the rest of the trainings in the next year or so.

Pilates teacher training manual

And the studio I did the training at was absolutely beautiful, I will definitely have to take some classes there over the summer.

Marvelous is… Random frozen custard runs.

goodberry's frozen vanilla custard with chocolate chips
We went to Goodberry’s which is a local NC-only chain, but if you’re ever in the Triangle area go get yourself some. It’s soooo good. I got the vanilla custard with chocolate chips mixed in and it tasted like a straight up cup of Oreos. I love fro yo, but sometimes you just need some heavy-duty custard.

Marvelous is… Thai dinner on a Thursday night.

vegetarian thai food cha da thai

Some friends came to my Thursday night Pilates class and we ended up going out to dinner afterwards at Cha Da Thai (their the only Thai restaurant in town so it’s a good thing their food is good!) which was an awesome treat on a weeknight. I think I could eat Thai food any day of the week and be perfectly content.

Funny story is that they served me the completely wrong dish. I actually ordered the Pad Cashew with tofu (Sauteed with tomato-based red sauce, cashews, onion, carrot and bell peppers), but they gave me the Pad Khing Sod with tofu (Stir-fried with fresh ginger sauce, mushroom, onion, bell peppers, baby corn and carrot). Not even close, and I almost sent it back, but I ordered it last time I ate there and I remembered it being delicious so I ate it anyway. It was just as delicious the second time around, even if it wasn’t what I ordered.

Marvelous is… seeing this temperature while driving around town.

70 degree weather

Marvelous doesn’t even begin to describe. I’m so ready for warm weather again.

Marvelous is… That I’ll be at the beach in less than 2 days! It’s supposed to be super cold (like 45 degrees, what?) but I don’t even care. That just means I can spend all day in the aquariums 🙂

Marvelous is… a much needed yoga class. It’s been too long since I’ve been to one and I can tell my muscles were angry with me for it. The class actually ended up being a Yin-style class which was pretty awesome. Basically you hold poses that require very little  muscular effort for extended periods of time (we held poses for 3-4 minutes) to open up the joints and connective tissues. Wikipedia does a better job of describing it than I do if you want to learn more about the style. It was pretty different from most classes I’ve taken before but it was very peaceful and I really enjoyed it. I did miss my down dogs though.

Marvelous is… I GOT THE INTERNSHIP I INTERVIEWED FOR!!!!!! Excuse me while I squeal like a little girl. But eeeeeee!!! I’m so excited! I will be doing graphic design for the American Dance Festival this summer! It’s pretty much most perfect internship for me and I can’t believe I got it! I actually applied for it last year and didn’t get it, but tried again and it paid off! Cue the excited face:

excited faces

I was in the car on the way home from Boone when they called and told me I got the internship and I pretty much car danced the rest of the way home because I was so excited.

Things I’m Loving

Honestly my life has been pretty eventful and not very blog-worthy. I’m up to my eyeballs in work, like every other student right now I’m sure. And the most exciting part of my day is getting to eat dinner. Sad. I do have some fun things planned for the weekend though!

I figured a list of fun things I love right now would be much more exciting than the lackluster events of my Thursday.

  1. YogaI’m on such a yoga kick lately and it’s doin my body good. I took a Power Yoga class tonight it was fantastic. I was feeling sick this morning (dizzy, nauseous and not fun) I even skipped out on my first class. Falling down or puking is generally not an encouraged class activity. I felt a little better as the day went on, then I went to yoga and felt 9842754829485x better. No exaggeration. I felt so strong and like a bad-ass yogi. Not so much, but nice to pretend. So, I’m going to listen to my body and do yoga all the live long day.

    Image

We did side crow, one of my new favorite poses (source)

  2. Detangler: I have really fine hair, but a ton of it and get tangles like crazy. My hair is borderline dreadlocks after a post-run shower. So I bought this stuff:

    Image

Twirlin' Swirlberry is a very grown up scent thank-you-very-much (source)

  3.  This body wash. It’s made with beer, which is kind of weird so of course I love it. It still smells a little like beer, which I think makes it more fun. I got a free sample of it the other weekend when I was at Earthfare. I’m such a sucker for free samples. They’re free. And the company is out Asheville, NC, which makes them local. Double bonus.
  4. THE WEATHER. It was gorgeous today. We’ve had a lot of thunderstorms lately, which is weird for Boone, but when it clears up it’s beautiful. And all the flowers are blooming, it’s so refreshing to see again.
    Image
  5. Salads I’ve had salads for lunch and dinner almost everyday. Excessive? Maybe, but I love vegetables. No one can say I’m not getting enough fiber, that’s for sure.
  6. Hiking I’m going tomorrow and I’m very excited, hopefully the weather will cooperate!

What are you loving lately?

Happy Spring!

It’s finally officially Spring! Even though Mother Nature has been tricking me into thinking it’s spring for the first month, the weather feels even better now that it’s official. Except it just started raining. Oh well.

Image

(Actually this picture was taken last June, but that’s not important)

Spring is my favorite season because the weather is BEE-YOU-TIFUL, the flowers start blooming, everything stops looking so dead, it stops snowing (even though it never started this year – not complaining) and delicious fruit at the farmer’s market. I will be at the farmer’s market first thing when April comes. Fresh berries make life wonderful, they really do.

Springtime also means that my birthday is right around the corner. I turn 21 in 27 days, not that I’m counting or anything. Okay, I am, I’m excited.

Today has been one whirlwind of a day! I was up at 6:30 the morning (ugh, I need a nap!) to sign up for internship interviews for Friday (ack, I’m nervous!). Then I met with my advisor to talk about the classes I need to take next year. Then I had 2 classes and went to a Pilates class (felt amazing!) a good Pilates class always makes me feel 1000% better about my day. Then I registered for classes (18 hours worth, and class on Friday, gross).

Speaking of Pilates I get to start assisting with classes next Sunday! I’m excited! But I’m glad they’re giving me a chance to assist before they throw me in a class by myself. It’s so helpful to watch people that know what they’re doing while I’m working on my own teaching skills. Plus it means I’ll start getting a paycheck. Bonus.

A weird thing happened to me today during lunch. I picked up a Chobani from the market on campus. I thought I picked up a strawberry banana flavor.

Image

But then I looked down at it again and the lid said mango, so I thought “oh I’m just delusional and grabbed a mango one instead” 6 hours of terrible sleep will do that to you. So I ate my mango Chobani, which was delicious because I’m convinced Chobani can’t make anything gross. Then after I finished it I looked down again and discovered I wasn’t crazy and it was a mango Chobani in a strawberry banana container with a mango lid. I felt much less crazy after that, but still a little confused.

Image

At least it was still delicious.

Have you ever had any weird food packaging issues?
Are you equally excited for spring? (Correct answer is yes, just kidding, kind of)

Is it Easter yet?

The Monday back to school after a break always sucks. I’m ready to go back home so I can continue being a lazy bum, that sounds much more better than being a productive member of society. These next couple weeks are going to be cah-razy! I love when professors decide to have everything due at once, ha. Me an the library are going to become BFFs.

How many days until Easter Break? Um, too many.

But the weather in Boone right now is gorgeous!

Springtime in the mountains is beautiful. I need to make sometime for an outdoor run! It’s too pretty not to enjoy.

Speaking of runs, I had a not so great 3 mile run this morning. Eating a buttload of trail mix before a run is a terrible idea fyi. Pre-run fueling is clearly not my strong suit. But, I think I need to start switching things up  with my exercise routine. I go through phases where I’m obsessed with running and then I get sick of it and it sucks, and I think I’m in the sick of it phase right now. I’m going to try to work in some more yoga and and strength training, those are always a good way to mix things up!

I’m off to bed I’ve got an early morning!

Not-Quite-Wordless Wednesday

Avocado Cocoa Smoothie:

  •  1/2 Avocado
  • 1 cup milk (I used soy)
  • 1 tsp honey (if you have a normal sweet tooth you may want to add more, you can also sub agave for a vegan option)
  • 1/2 tsp vanilla
  • 1 tbsp cocoa powder
  • Dash of cinnamon
  • Ice cubes

Blend. Chug. Repeat.

I thought it tasted like much less sugary Wendy’s frosty. Yummy. But my brothers reaction was “EWWW! You put avocado in your smoothie?! EEEEEEEEEEEEWWWWWWW!”
He’s very mature for an 18 year old, clearly.

Sometimes I like to pretend I have a fashion sense. Thank you Mother Nature for making warm enough for me to wear a skirt. Sorry to everyone that caught a glimpse of my casper-like legs.

Hey look I own a real camera.

I swear my boyfriend loves me, my camera not so much.

And he’s got holes in his ears.

I might be a crazy cat lady, but that is the cutest face on the face of the earth. Try to deny it, try.

What do you eat for dessert when you’re not eating sweets, craving chocolate and out of oatmeal?
Sweet potato, peanut butter, cocoa powder, cinnamon
Yes it looks weird, no I don’t care, and it was delicious. Seriously someone should try it and back me up because my whole family is currently disgusted with me.

Post mixing. I thought maybe if my first photo didn’t make it look appetizing, a second bad cell phone picture that makes it look like cat puke would. I see a future in food styling. Don’t crush my dreams.
