Creamy Peanut Butter & Banana Smoothie

Happy almost Friday!

It has been one rough week over here and I am more than ready for the weekend. I woke up Monday morning with a stomach ache and welp, it was all down hill from there. I will just say I spent all Monday praying to the porcelain gods and hating life a little. Yeah, rough.

Today I thankfully feel back to normal and it’s about time too. It has been 7 days since my last workout, 5 days since I’ve eaten vegetables or drunk coffee and 3 days since I’ve had peanut butter. I’m not sure how I’ve functioned without all those things, but I can I assure it was not well.

I’m sorry coffee but you still make me want to puke a little. Give me a few more days and I promise I will be back to chugging you like a champ.

Luckily the rest of this week is looking up!

I have a (glorious!) 4 day weekend ahead of me, some much needed time at home (nothing makes you miss your parents more than being sick alone in your college apartment, good thing I have really awesome roommates who bring me ginger ale and applesauce) and some warm spring weather. Boone decided to be a poo-head and dump 8 inches of snow on us the past four days. I think someone needs to tell mother nature it’s officially spring because I’m not sure she’s gotten the memo.

I totally ate it on some ice on the way back to my apartment yesterday. No more snow please.

If you’re hoping for spring weather like I am, try making this smoothie, cranking up the heat and pretend it’s 75 degrees outside instead of 25, while you drink your smoothie and bask in the warmth. Just don’t blame me for your crazy how power bill.

Creamy Peanut Butter and Banana Smoothies (vegan!)

  • 1/2 package silken tofu
  • 1/2 cup milk of choice (I used almond)
  • 2 cups of spinach (or really as much as you can shove in your blender, the more vitamins the merrier)
  • 1 banana
  • 1 tbsp peanut butter
  • a sprinkle of cinnamon (or much more if you’re a huge cinnamon lover like I am!)
  • ~1 cup ice, or until desired frozen-ness is reached


  1. Place all ingredients in blender
  2. Blend. Easy peasy.
  3. And don’t forget to clean out your roommate’s blender because she won’t appreciate you borrowing it if you leave green stuff in it. Though I don’t understand why not.

What are your go-to sick foods? 
Ginger ale and applesauce, and I remember growing up my mom always mixed juice and sprite together for me when I was sick, it was like the ultimate feel better drink.

Do you have any Easter plans? Is it sad that I really miss Easter egg hunts? Those things were awesome.


Hey, it’s been a while! I’ve been feeling a little under the weather so I kept things pretty low key this weekend. Here’s what I’ve been up to lately.

  • Crafts:
    I’ve been crafting up a storm lately. My mom and I painted the door to the playhouse/shed in our back yard because it was looking a little weathered a rough. Pretty much whatever we did to it it couldn’t look worse than it already did.Before:

    ImageI’m also working on crocheting a baby blanket for a friend’s baby shower. We went to elementary school together and I haven’t seen her in forever!
    ImageNot close to being done yet, but I’m making progress. I really like making gifts for people whenever I can, it just feels more personal. So if you have a summer birthday you might get a crocheted scarf when it’s 95 degrees out, sorry.
  • Sick:
    Blah I hate being sick. I pretty much feel like I have mono, except that I’ve already had it. The lymph nodes in my neck are swollen and sore and fatigue. Sunday I had a headache and body aches on top of that. Not fun. Also stay away from WebMD when you’re sick. I convinced myself for about half an hour that I had West Nile. I called the doctor Monday night to make sure my symptoms weren’t anything bad, she recommended I take Aleve and get some rest. Neither of those sound very fun. I hate painkillers and I don’t like sitting still, but I’m being good and doing both. I’m less swollen today, so I guess it’s working.
  • Workouts:
    I’ve been trying to stay active because exercise endorphins always make me feel better. Saturday I went for a 2.5 mile run. It was torture. It’s a poor, poor choice to go running outside when it’s 85 degrees and humid. So much sweat. I was going for 3 miles but I just couldn’t do it. I’ll have to start running early mornings (or on the treadmill – ew) if I want to keep my mileage up.
    Sunday I slept. My workout was getting up to walk to the kitchen to make food. And an hour power nap. I never take naps, I’m a weirdo and I don’t like them, but there’s nothing like them when you’re sick.
    Monday I did day 1 of Jamie Eason’s LiveFit Trainer. I’m thinking about starting the 12 week program, and I really liked the workout. I’ve been wanting to focus more on strength training and I think it would be helpful
    Today I went to a yoga class. It was amazing. I’ve been neglecting my yoga practice it felt so good to do it again. I need to be better about it. My next payday I’m going to try to find some classes to take at a local studio, which I’m very excited about.
  • Finds:
    Here’s some fun things I ran into this weekend:ImageYes that’s “Don’t be a Chicken Shit Hot Sauce”. I love that name. Saturday night my family went out to Tijuana Flats. I love Tijuana Flats because their salads are bigger than my head, and they have a hot sauce bar. What more could I ask for in a restaurant? Their hot sauces also have the BEST names. See above example. Another favorite is “Smack My Ass and Call Me Sally”. I might have gotten 5 different types of hot sauce for my meal. Let’s ignore the fact that I ordered a salad.

    ImageThis is nerdy, but my mom and I were at Lowe’s the other day picking out paint colors for the door we were painting and I saw this display. Paint colors based on Pantone inks? Whattttt! The designer in me was way too excited about it.

Sickness By the Numbers

But I’m feeling much better today. Knock on wood, but this is the shortest cold I’ve ever had. Except now that I said that it’s going to be the longest. But today I got in a beastly salad for dinner, even though I couldn’t taste half of it, and I made it out to a Pilates class. Pilates makes me feel better, even if I can hardly breathe. I’m going to try to go for a run tomorrow, if I don’t wake up feeling like death.

Joke’s on Me

Today has been like one big strange April Fool’s joke.

First, I’m a member of a service club on campus, and a group of us planned a pancake breakfast to help raise money for a local charity. The pancake breakfast was to be hosted at an unnamed restaurant, which would provide the pancake ingredients and cooks, while we provided the people and hungry diners. Employees from said restaurant did not show up. April Fools! No pancakes for you. And now we have to refund all the money.

Failed charity breakfast? What a sad way to start the morning.

On the bright side, I got to watch the sunrise.


There’s also absolutely no traffic in Boone at 6:30 on a Sunday morning. That is a beautiful thing. Maybe more beautiful than pancakes.

Today was also supposed to be my first day assistant teaching Pilates. Except only one girl showed up. You have to have two people to have a class. April Fools, you don’t get to teach Pilates. Even though it sucks that I didn’t get any teaching experience today, I still get paid for the whole class even though it didn’t happen, and I wasn’t feel too hot, so maybe it was for the best.

I also saw a rainbow on my walk to class.



Two rainbows in two days? Magical. Thanks Mother Nature for being beautiful even when my day is not.

And to top off this April Fools, I’m sick. I don’t know if it’s allergies or a cold or you’re-really-cool-and-fell-asleep-with-your-mouth-open-and-now-your-throat-hurts-real-bad-itis. I pretty much feel like a beached whale. Mouth breathing and a runny nose? Hello sexy. We did about a million forward folds and down dogs in yoga training, which is real good when you have a runny nose. I snotted all over that yoga mat. Sorry, that’s gross (not as gross as the person that uses it next! Kidding, I disinfected properly).

Speaking of snotty gym mats, a word of warning to all the gym goers out there, don’t touch the magazines. I’ve got a friend who’s a bio major, she’s currently taking a microbiology course and her current project involves swabbing surfaces around the university’s gyms to see what infestation what microorganisms may be growing on different surfaces. Apparently the magazines were far dirty than any other surface in the gym. She said the petri dish looked like a jungle. Don’t touch the magazines. Cosmo isn’t worth it.

I’m going to bed, skipping tomorrow morning’s work out and sleeping in like a normal college kid. Please go a sickness
