A Feastival, Kittens and an Impending Graduation {MIMM}

Happy Monday! Today is my last week of class and that is pretty darn marvelous. A little terrifying, but mostly marvelous.

Marvelous is… getting my cap and gown today! I can’t believe graduation is so soon!

Marvelous is… Boone’s feastival, that’s right, FEASTival. Basically a festival showcasing healthy living in Boone, so right up my alley. They had lots of booths with everything from CSAs, bakeries, restaurants, all kinds of good stuff. There were lots of free samples which I’m always a fan of:

A smoothie sample (I have no idea what was in it but it was tasty) and an energy ball with honey, oats, chocolate chips and a few other things in it. Both were very delicious!

And the best part…

Baby goats! I think it’d be fu to have one of these guys as a pet, minus the fact that they would try to eat everything I own, they seem pretty chill otherwise.

There were also food trucks, but un fortunately I didn’t end up getting anything. One truck, Vitality, looked especially delicious and was serving vegan food, but I ate beforehand and wasn’t hungry enough to justify a $7 rice and veggie plate. I’ll have to track them down again when I’m actually hungry!

Marvelous is… a super sweaty spin class this afternoon. It’s been a while, but my foot has been hurting ever since my 10-miler (seriously, I’m like a magnet for minor injuries lately, it’s getting old) so I tried to be smart and opt for something low impact. So. Much. Sweat. Hill sprints are straight up murder.

Marvelous is… potlucks with my Sunday school group.

I brought black beans and rice. Someone brought the most delicious fudge-y brownies I have had in a LONG time. Holy cow were those things good. I had three, they weren’t gluten-free but it is 100% worth the stomach ache and headache I have today, they were that good.

I’m going to seriously miss this group after I graduate. The couple that leads the group are the sweetest people and so funny, they make me look forward to getting up early on Sundays.

Marvelous is… KITTENS. I think I spent a good 6 hours playing with them on Friday. I can’t even handle how adorable they are.

Marvelous is… registering for the Esprit De She 10K in Cary! I’m actually going to be an ambassador for the race, but more on that later.

I’ve missed you guys!

I’ve been MIA all week thanks to a pile of assignments from my lovely professors. They are actually lovely people. but all the exams, papers and speeches notsomuch.

Only 14 more days. I can do this. Sometimes I just need a reminder.

Well I have lots things to share, I gotta catch up! With a few random things thrown in here and there.

  • I ran the Tar Heel 10-Miler last Saturday and SURVIVED. Still riding a running high off that one. My recap is coming soon, since I actually have time to write one!

  • Post-race Mediterranean food is the best kind of Mediterranean food.

  • Mid-week fro yo trips with the roommates make life better, especially when you’re neck deep in speech writing for a public speaking class. Much needed.sweet frog frozen yogurt
  • KITTENS. My neighbor’s brother took in two kittens a couple was giving away on the side of the highway (with a bunch of other animals like goats, seriously, this is where I live). They are 4 weeks old, adorable, and I’m glad they’re going to have a good home.kitten

    I promise they don’t spend all day sleeping, it’s just the only time I can get a picture of them! They don’t like to sit still.

  • I’ve drunk an unbelievable amount of coffee in this past week. What is sleep? I don’t need that.
  • I ran a 5K on Saturday! Coffee themed funnily enough. Recap for that coming soon too. I have lots to catch up on!
  • I missed What I Ate Wednesday this week (boo!) so I’m making it up, here are some of the more fun things I’ve eaten this week:

    Plain Greek yogurt, almond meal, coconut and cinnamon.veggies2
    An attempt at zucchini noodles. I used a vegetable peeler for the zucchini strands and heated up onions, garlic, tomato and kale to go with it and topped the bowl with nutritional yeast. It was definitely a fun new way to try zucchini and it was surprisingly noodle like.veggies
    This bowl is basically identical to the one above it except the zucchini is chopped instead of in ribbons, the ribbons definitely make things way more exciting. As you can see, I like lots of variety in my diet.lentils
    Last night’s dinner of curried lentils following this Whole Foods recipe, but minus the yogurt and cashew topping and I subbed quinoa instead of brown rice. It ended up being really delicious and pretty easy to make.

  • I’m on a huge egg binge right now, I’m seriously averaging like 6 a day and I would eat more, but I feel like 6+ eggs a day is completely ridiculous. I might have a little problem.
  • Today the potential new Pilates teachers auditioned for next year, it was so fun to help in the process! They’re all super talented so it’s going to be a really tough decision.
  • My honors cords came in the mail this week! What up Summa Cum Laude? Nerd Alert.
  • Tomorrow starts my last week of college classes. It doesn’t feel real, yet I’m excited to not have to write another paper for a longgggg time. Unless I decide to go to grad school.
  • My roommate made some spectacular lemon pound cake last night, it was not gluten-free and I ate lots of it so my guts are protesting today. It was so delicious though, cake is my downfall.

Tuesday Tangents

I think my brain is officially dead. Thank goodness there’s only 3 days until spring break. This girl needs some major sleep.

Enter tangents, because cohesiveness is not happening tonight.

  1. The guy sitting next to me in my 8 AM class was dipping. First off, EWWW! Dipping is pretty much the nastiest habit you could have, it’s a million times worse than smoking in my opinion. Two, 8 AM!? Seriously? Why is it necessary to dip at 8 AM? Three, I’m pretty sure tobacco is banned in all campus buildings, but of course my professor didn’t say anything. I don’t think I’ll be able to look at a Gatorade bottle for a while. Ewewewewew.
  2. My leg still hurts. I’m dying to go for run, hurry up and feel better leg!Photo0918
  3. Only four people came to my Pilates class tonight, but I actually really enjoyed having a smaller class. They were all regulars so I got to work them extra hard and throw in more advanced exercises I don’t usually get to teach. I also accidentally turned on a running playlist instead of my Pilates playlist (hey P’s are right next to R’s!) so we did Pilates to Ke$ha. I didn’t hate it and I think my Thursday class will be getting some Ke$ha as well 🙂
  4. Sometimes I eat really weird things in the name of protein:peanut butter egg whites
    Scrambled egg whites with peanut butter, a teeny squirt of honey, cinnamon and vanilla. Sweet scrambled eggs? Why not. My roommates think I’m crazy when I eat things like this.
  5. This article about mindful awareness is pretty awesome. I will definitely be incorporating some of these tips into my life because I’m about as unmindful as it gets at the moment.
  6. I’ve applied for eight internships in the past 2 days, EIGHT! Someone please hire me, I would really like to graduate college.
  7. There are not enough kittens on my Pinterest home page and that needs to change.

    Much better.

  8. Ginger tea is amazing, it seriously clears all my tummy aches right up. And I’m a ginger fanatic so it’s pretty tasty too.
  9. I start a weight training class tomorrow, I’m taking it as a one hour elective because I’m determined to squeeze in at least one elective before I graduate college, crazy schedule or not. And I’m ready to get some muscles. I’m also keeping my eyes peeled for an opening in a Swimming for Non-Swimmers class though because it would also be pretty awesome to learn how to swim before I graduate college.
  10. I’m obsessed with the song Thrift Shop. I know I’m a little late to the party, but I can’t stop listening to it. Seriously, I put it on repeat every morning while I get ready, it pumps me up for the day.
    Today I also realized just how sporadic my taste in music is, today my music alternated between Thrift Shop, Jesus music, George Gershwin, Mumford & Sons and Ke$ha. Makes no sense, but I love it.

  1. It’s sleeting outside, my favorite weather! Said no one EVER. Sorry mother nature but sleet is the most worthless weather ever, I do not enjoy ice falling from the sky.

  6. Speaking of Scooby Doo, I watched 2.5 episodes today while running on the treadmill, my favorite new way to pass the time. 5 miles in 55 minutes, I need things to warm up because treadmill runs are starting to push my sanity.

  10. I got asparagus on sale for $1.49/lb, super produce sales for the win! Asparagus is usually $5/lb yeahhhhhh. Sorry, I get really excited about vegetable deals because they don’t happen often enough.
  11. I still owe you guys a post about Fit Expo, it’s coming I promise! I want to devote a real amount of time to writing it, time which is non-existent right now, soon!
  12. I have a friend who works at Disney World and she has gotten to meet Honey Boo Boo and her family AND Tina Fey. So jealous.
  13. The earring in my rook fell out today, which is weird because that’s never happened before, I have no idea where it went, but luckily when you have 10 ear piercings there are plenty to go around.

Rainy Day {MIMM}

Naps should be a requirement on rainy days. Unfortunately, I didn’t get one, I had silly things like class to go. I even woke up a 7:00 am, you know, to get to my 12:30pm class on time. Early bird problems.

Even though it was a dreary, rainy Monday and I didn’t get the nap I was craving, it was still a pretty marvelous day.

  • I made my own protein bars! I seriously only have $1 to my name right now, broke as a joke (I’m in the process of switching banks and and am officially out of money until my new debit card gets here) so I got resourceful and made some bars to take to campus with me. They came out a little crumbly but that’s okay, look for pictures on Wednesday because I’m too lazy right now. I can post the recipe if you want, but it’s one of those kitchen sink kind of recipes.
  • I got 3 different compliments on my playlist for my Pilates class. Yeayuh.
  • I put some pumpkin air fresheners in my room and it now smells like pumpkin/spicy/fall heaven:
    Bath & Body Works fall collection is going to put me on the poor house.
  • I found the perfect spin class to go to. It’s only 45 minutes so I get an amazing workout without being completely wiped out.
  • I’m learning basic anatomy in my Somatics class and I’m loving it. The human body is so complex, it’s amazing how it all works together. And our class has a plastic skeleton named Skullio, awesome.
  • Free kittens in the farmer’s market!


    My roommates better be glad our apartment complex doesn’t allow pets, or this little guy would have come home with me. . The vendor asked if I wanted to hold the kitten and the conversation went some thing like this: “No… I shouldn’t… No, that’s a bad idea… YES I WOULD LOVE TO”. Why are kittens so adorable?

  • The farmer’s market was on Saturday but that little kitten was so stinkin cute he even made my Monday better. I want him. I’m okay with being the crazy cat lady.
  • I just hardboiled eggs for the first time and finished making these. On a cooking roll. Actually I have to be because I can’t buy groceries until my new debit card comes in (dear post office gods, please let it show up in my mailbox tomorrow)
  • I have 5 different design opportunities coming up, things are going to get a little crazy but I am not complaining one bit.
  • Planned a hike on the Blue Ridge Parkway this weekend for my roommates.

    Get me up on them mountains. It’s been far too long since my last hike. Over 4 months ago actually, that’s a problem.
  • Everyday that starts with Trader Joe’s dark coffee is a good day in my book
