Happy Friday

I’m so excited today is Friday. Friday is my favorite day of the week (I’m pretty sure everyone else feels the same!), I only have one short class, the entire afternoon to myself and usually a nice dinner out and general college shenanigans at night. The word shenanigans makes me feel like an old man, but I’m rolling with it.

Tonight we have plans for a Thai dinner (so excited!) and Art Crawl. One of my roommate’s has artwork on display in a couple of galleries and I’m really excited to check them out. And get free wine. Priorities. My roommate has an art blog if you want to check out her work!

I got in a nice sweaty workout this afternoon which felt SO GOOD. I’m the worst injured person ever, I can’t deal with sitting still. I did this LiveFit workout. LiveFit workouts are my go-to for strength training because they work and I always feel like jelly afterwards. I’m weird and I really enjoy that feeling. I also did a 20 minute tabata workout on the exercise bike that looked like this:

I was sitting at one of the weight machines secretly hating all the people on treadmills because they were running and I couldn’t. Lack of exercises endorphins clearly makes me a grouch. So I decided to hop on the exercise bike and test out my calf/knee to see how it felt, and it felt pretty good so I pedaled my little heart out for 20 minutes. I was good and kept it to just 20 minutes. Progress people.

In addition to a great workout I also plopped myself in the coffee shop with a big mug of coffee and my laptop and got a ton of work done. Feels good. I eve made some fun social media buttons to the side bar. I’m trying to make things over on the blog slowly but surely.

What I Ate… at Fit Expo {WIAW}

First off, I’d like to wish a very happy birthday to the best mom in the world.



I think she’s still younger at heart than I am. Love you mom!


This week has been CRAZY. I feel like I say that every week, but this week has really been extra crazy.

I went to the 2013 Southeast Collegiate Fitness Expo which was AMAZING and such a wonderful experience that it deserves it’s own recap, but I’ve been doing some major catch-up since I got back. 100% worth it but still no less crazy.

One of the best things about being on a trip with 9 group fitness instructors is that 2/3 of them are pescetarians, they all get the same crazy salad cravings, and no one bats an eyelash when I bust out a tupperware full of kale chips. Finally some people who share my intense love of vegetables!

The Fit Expo was in Norfolk and you’ll be happy to know that we took advantage of being in a big city and ate at Chipotle and Starbucks no less than two times. Boone, can you get it together and get a Chipotle? Please and thank you. Maybe it’s a good thing we don’t have one because I’m pretty sure 90% of my weekly budget (I have to buy coffee too you know) on Chipotle.

We left Boone Friday around 2, making a pit stop in Greensboro for Starbucks, NECESSARY when you’ve got a 6 hour car ride ahead of you.

It didn’t quite make it into a picture, but long car rides and limited sleep makes coffee extra delicious because it was gone in no time.

Lots of car snacks happened, lots and lots.

We finally got into Norfolk around 9:00pm and we were going to check out a local restaurant The Ten Top but they were closing, luckily there was a Chipotle across the street. Hey, I can’t complain about that!

Saturday began Clif bar extravaganza. Appstate recreation is sponsored by Clif bar so we brought along a HUGE box of mini-chocolate chip Clif bars. I don’t even want to talk about how many I ate.

Good thing they’re so tasty, because I’m pretty sure I ate at least 10. Eight hours of group fitness classes works up one SERIOUS appetite.

Lunch was provided for us but I didn’t even bother taking a picture because it sucked. Sorry, Old Dominion University. I had the vegetarian wrap (basically a tortilla with a few grilled veggies inside) an apple, and chocolate chip cookies. Actually it probably would have been a tasty lunch if I was a normal eater, but I was left the with just the wrap innards because my apple had a big crack in it. Vegetarians don’t need protein, not at all!

I sound a little bitter, whoops, sorry guys, I get a little hangry sometimes. I had a very tasty Peanut butter chocolate chip Larabar to make up for it. Peanut butter and chocolate fixes everything.

Good thing dinner made up for lunch. My boss grew up in Norfolk so she knew all the tasty local restaurants. At the end of day one we dragged our tired and very sore butts (literally, SO MANY SQUATS) to Pasha, a very delicious Turkish restaurant.

My boss wasn’t lying when she said this place was good. So many tasty options, and the menu labelled all the gluten-free, vegan, and vegetarian restaurant. Basically I was in mediterranean restaurant heaven.

I ended up ordering the Hummus, Kale and Black Bean Wrap – hummus, fresh, local kale, black bean & corn salad, vegan with organic ingredients

Ordered with a millet and flax gluten free wrap with a side of amazing lentil soup.

This meal was amazing, the lentil soup was hearty, well seasoned and DELICIOUS and the wrap was equally amazing. My only complaint was that because I ordered the gluten free wrap, my wrap was tiny (another girl ordered the same wrap with a regular tortilla and the wrap was significantly bigger) which was frustrating because one, I was hungry and hoping for something bigger and two, I had to pay extra for the wrap so it stinks that it was so much smaller.

There’s my hangry-ness popping up again.

Sunday consisted of more Clif bars (even more this time, I’m a mini-Clif bar eating machine!). The expo finished around 1 pm so we all grabbed some lunch at Tropical Smoothie Cafe before leaving Norfolk.

I had the Southwest salad minus the chicken and chipotle ranch, because we all know I can’t order anything as it is. The salad was pretty good and filled my veggie craving. I love Clif bars but sometimes you just need some veggies.

We also made a mandatory Starbucks stop before leaving town, of course.

The original plan was to power through the drive home, but we all got a little hungry and stopped for dinner in Winston-Salem. Time for Chipotle round two.

Okay, that’s the same picture again but just imagine it with pico de gallo this time because I ordered the same thing. Creature of habit right here.

The weekend was a delicious one but it feels good to get back to my normal eating. My mouth may love the taste of Clif bars, but my stomach doesn’t appreciate all the extra sugar and grains. Give this girl some veggies.

MIMM: Sweet Thanksgiving Freedom & A Little Yoga

Whew, today has been a busy day! Which is funny considering all my classes for the day were classes. Funny how that works.

Despite my Monday being a little crazy it has been pretty marvelous!

Things making my Monday Marvelous:

  • No class! Redundant, but that always makes for a good day! Unfortunately I still had to take an online exam, but I think I did well on it, which makes that marvelous too!
  • This weekend’s Friendsgiving and my roommate’s birthday! And the amazing flourless chocolate cupcake recipe I made this weekend, too easy and too delicious, a dangerous combination. More on both of those tomorrow!

  • I got to teach a yoga class! It was the first yoga class I’ve ever taught and I think it went really well. Even though I’m not a yoga instructor I’m on the sub list and they needed someone last minute and I was happy to help! I really enjoyed and hopefully the people in class did too (all two of them, it was a hoppin’ class!). I’ve been thinking about doing yoga teacher training sometime after I graduate, but I haven’t decided yet, so we shall see…


  • And I had a good crowd come to my Pilates class, it was good day for teaching group fitness!


  • GINGERBREAD CLIF BARS! Nope I’m not excited about those at all.

So tasty.

  • I’m starting week 3 of my 10-miler training plan, my runs have been really good lately even though they’ve all been on the dreadmill and I’m hoping they stay good. Though we’ll see what happens when it’s snowing out and I have a 5+ mile run on the schedule…

  • I’m headed home tomorrow for Thanksgiving! Only one class stands between me and sweet Thanksgiving freedom. Well, and some silly little details like the fact I haven’t packed anything yet

Hey August {WIAW}

I can’t believe it’s already August! Where did July go? Only two more weeks of summer and I’ll be back at school.  Speaking of summer:

This month’s What I Ate Wednesday is celebrating summer staples. I’ve definitely been taking advantage of the season, summer foods are my favorite, everything is so light and fresh!

I even tried to break out the DSLR so I wouldn’t torture you guys with more fuzzy cell phone pictures. You’re welcome.

See sometimes I can take decent food pictures.

Breakfast: Three guesses what breakfast was. Peanut butter oats again. I love it and it’s not going anywhere. I also had a banana before heading to work. I’ve been a banana fiend lately. I ate three today, I’m not upset about it either.

Morning Snack: Un-pictured edamame eaten at my desk at work. Today was torture because I was making changes to menu for a local restaurant that serves some really delicious sounding food (crepes, gelato, waffles, chocolate-dipped waffles topped with gelato! – pure carb heaven), I was drooling the whole time. My edamame didn’t make me feel any less hungry (though it was healthy than gelato, I guess).

Lunch: Tofu sauteed with kale, green bell pepper, onion and eggplant doused in Trader Joe’s Red Thai Curry Sauce.  The curry sauce is absolutely delicious, I want to put it on everything, I don’t care how bad it’ll make me smell. I had another banana on the side because I can’t help myself.

Afternoon Snack: Cherries! A summer favorite, it’s the only time they’re close to affordable. A black bean patty (recipe coming this week I promise!). Also an un-pictured roasted potato. My mom made them for lunch and she had leftovers and I had to grab a a few pieces out of the pan whenever I passed through the kitchen. And then some how it was all gone. Whoops.

Dinner: Vanilla Peanut Butter Banana Smoothie! Soy milk, 1/2 banana, 1.5 scoops vanilla whey protein powder, 2 tsp peanut butter and 1 cup frozen spinach. It was way too hot to turn on the oven again. Smoothie it is. It made good pre-workout and dance class fuel.

Late Snack: I picked up a sprite melon at Kroger because it was only $1 and I was intrigued. The sticker said it tasted like “Watermelon blended with Honeydew and a hint of Pear”. I didn’t think it tasted like anything. Maybe it wasn’t ripe? Oh well. It was fun to try. I also had some un-pictured cottage cheese with peanut butter (un-pictured because there is no way to make that look appetizing) and the other half of the banana from my smoothie earlier with more peanut butter.

Summer is one of the best seasons for food in my opinion. I absolutely love summer produce. There is nothing like it. I die a little bit in the winter when I can get my hands on any deliciously fresh berries. I could literally live at the summer farmer’s market. I might just bring a pillow and blanket next time I go.

I’ll take them all please.

As great as summer is for fresh produce. Summer weather puts a little bit of a damper on my exercise routine. Running in the 95+ degree NC heat makes me feel like death. Since I want running to be fun and not feel like torture, I’ve taken a bit of a break from it during the summer. Moving my workouts into a climate-controlled gym has been key in keeping fit in the scorching heat. Weightlifting, group classes and the treadmill have been my summer exercise staples. My workouts this week include:

Thursday: 30 minute cardio class, and a 30 minute strength training class
Friday: Modified LiveFit workout – arms, back and abs
Saturday: Putting siding on the Habitat house! And trying not to get heat exhaustion
Sunday: Cycling and a Yoga class with a 15 minute savasana that I might have fallen asleep during. Whoops.
Monday: 6 AM Interval Training class, a tough but rewarding class
Tuesday: 20/20/20 class (20 minutes each of cardio, weights, and ab work) and dance class

Lots of fun indoor workouts. Lately the weather has started to cool down slightly (it’s sad when a high of 89 is cool) and I want to try to get an outdoor run in, it’s been far too long!

A Day Without Burpees is Like a Day Without Sunshine {WIAW}


I’ve been a bad blogger lately. I only have four pictures for What I Ate Wednesday. So lame. I was too busy stuffing my face with farmer’s market fruit and not taking pictures. Sorry. Not sorry about that fruit though, it was yummy.


Breakfast: Good old peanut butter oatmeal. I think I’ve eaten this every morning for breakfast since I’ve been home from school. I’m completely okay with that.
Breakfast #2: two egg whites scrambled, with spinach, diced onion and salsa. Yeah I ate two breakfasts. I actually I just split it up so I don’t get so hungry at work.
Morning Snack: Edamame and a green tea at my desk. Gotta fuel that creativity, I’m working on a logo design for a hair salon, it’s exciting stuff. It makes me feel like a real graphic designer.
Lunch: A monster homemade black bean burger I found in the fridge, veggies topped with nutritional yeast and about 5 servings of fruit. Not an exaggeration. I had watermelon, cantaloupe and peaches. Soooo good right now.
Afternoon Snack: More fruit. I have a real problem. I had some more cantaloupe and a pluot. I LOVE pluots. They’re a little hard to find but oh so tasty.
Dinner: 2 scrambled eggs (with the yolks this time), apparently I was really feeling eggs yesterday? With spinach, broccoli, diced onions, nutritional yeast and good old sriracha. And more peaches. I’m a little addicted.
Evening Snack: Peanut butter oatmeal. I know. And more cantalouple. I know. And some peanut butter spoonfuls.

I think I ate about 8 servings of fruit by the end of the day. And I don’t have pictures of any of it. I’m such a bad food blogger. In my defense cantaloupe juice and cameras don’t mix.


I’ve been changing up my workouts lately and enjoying. I skipped my LiveFit workout and went to a group fitness class instead. It was a leg workout and the thought of doing one more lunge just made me want to cry. So I didn’t do it. Take that.

Instead I went to a 20/20/20 class (20 minutes of cardio, 20 minutes of strength training and 20 minutes of core work). It was absolutely amazing. I haven’t sweat that much in a longggg time. I felt so refreshed afterwards. Eat Clean and Sweat Dirty right? I need some more intense cardio in my life.

The instructor totally made the class, we were doing 60 seconds of burpees (who doesn’t love a good burpee?) and halfway through she yells “A day without burpees is like a day without sunshine!”. Made my day. New motto? I think so. Burpees still hurt though.




And then I went to dance class. I’m sure everyone enjoyed standing next to my sweaty butt in dance. Not sorry about it. We learned a really fun combo and practiced leapes. My favorites.

I haven’t gotten today’s workout in yet but I think I might do the leg workout I skipped yesterday. I feel ready to take on some lunges. Kinda.

First Day

Of my internship today!

It went pretty well! I was nervous because I had no idea what I would be doing, but it all went quite smoothly. The company is letting me be really hands on with a lot of the projects and I can tell I’m going to gain a lot of great experience this summer.

I also got my gym membership reactivated so I will be hitting up the group fitness classes like crazy starting tomorrow. I can’t even decided which to take! Pilates? Yoga? 20/20/20? All sound amazing. I love group fitness classes, I feel so much more motivated when I’m sweating it up with other people. Plus my foot is feeling a little funky after my last couple runs, so I’m trying to cut back on the running some this week because…


I’m officially registered for the NCRC Invitational 10K! I’m nervous because it’s going to be a big race, and I’m a slow poke, but I’m still super excited for it. 6.2 miles here I come! I’m cautiously optimistic about it after my fantastic run on Friday, even though my calves are still a little sore.


My current position. I propped my calves up on my foam roller because I’m currently too lazy to roll them out, I figured this was better than nothing. I’m not sure it’s actually having any effect on my muscles, but I like pretending that it does. I also like that my camera phone is making my legs looking 20 shades tanner than they actually are. Thanks phone.

Let’s also ignore the fact that I haven’t finished unpacking my room yet. I hate unpacking. And packing. I would gladly pay someone to do it for me, and by pay I actually mean I’ll bake you cookies, because a dozen cookies is minimum wage right now isn’t it?
