Rednecks & Kitty Cats {MIMM}

Before we get to the marvelous in my Monday, I have to take a minute to address something that is not-so-marvelous.

My heart goes out to all the people that were hurt or otherwise impacted by what happened today in Boston. Although what happened today was horrible, I have to say it’s pretty marvelous to see the running community come together to support one another at a time like this.

Marvelous is… My 22nd birthday is tomorrow! Actually it’s in 1.5 hours, I came in to the world bright and early at 12:30 AM.

Marvelous is… Joint birthday parties! My friend’s birthday is Friday so we had a joint party over the weekend. The theme? Rednecks and cats. No joke, we are a creative bunch.

Marvelous is… beautiful weather and weekend hikes. A very muddy, but fun 5 miles.

I wish I had taken more pictures, but I was worried about my camera landing in a pile of mud, which isn’t really ideal.

We did the Boone Fork Trail Loop, which is right off the Blue Ridge Parkway, the trail is the perfect combination of beautiful views, uphill climbs and creek hopping. My buns were on FIRE by the end, so worth it though.

Marvelous is… birthday cake.

I used Betty Crocker’s gluten-free yellow cake mix for the base, and because we all know I can’t just leave things be, I added a 1/4 cup of peanut butter to the mix which was a very delicious choice. The frosting is just Cool Whip with cocoa powder and cinnamon mixed in. Easy, cheap, and trans-fat free. I can get behind that.

I made my own, which my friends thought was really sad I made my own cake (they did offer to make one for me, I’m just stubborn), but since I love to bake I actually really enjoyed it. Lame? Maybe, but I got to lick the bowl which was more than worth it.

My friend did a pretty impressive job on the decoration! I definitely scraped off the cat so I could eat it myself 🙂

Marvelous is… Engagements!

These two got engaged on Saturday! I’m so excited for them! Plus the ring really offsets her new dragon tattoo.

Marvelous is… Sunday school cookouts! We got together at our small groups leader’s house and had a delicious lunch. The carnivores had barbecue chicken sandwiches, but they were nice enough to cook up a few veggie burgers for me and the other vegetarian in the group. I didn’t take any pictures but it was a good time!

Marvelous is… look-a-like clay figurines. The couple that leads our small group has a very artsy 10 year old daughter and she made us all figurines that look like us.

That little girls is seriously talented! My figurine is only about 1.5″ tall and the detail is pretty awesome. I’m adding it to the collection of drawing she’s made for me over the past few Sundays!

Marvelous is… Best Body Bootcamp Phase Two! I’m already sore from today’s workout! I’m already looking forward to the rest of the week’s workouts!

Marvelous is… 5 days until the Tar Heel 10-miler! Eep! I’m both super nervous and super excited!

What’s your favorite flavor of cake? I’m not sure that there’s a flavor of cake I don’t like, but red velvet and carrot cake are pretty high up there! Peanut butter and chocolate is always a winner too 🙂

Spring Break Edition {WIAW}

Guys, I’ve been a pretty terrible blogger lately. This poor little guy has been more than a little neglected and I feel kinda bad. But between spring and the inevitable school work catch-up after spring break (what professor assigns projects over spring break? Seriously), life’s been a little crazy. And mostly I’ve been a little lazy because I’m wishing spring break would come back.

Responsibilities are silly, I’d like to go back to the beach pretty please.

This week my food is coming at you spring break style. I’ll admit that I didn’t eat too many vegetables over break (but I did eat lots and lots of chocolate) and you know what, I don’t feel bad about it. Sometimes you just need to stuff your face with junk food.

But let’s kick things off with something healthy shall we? This combination is one of my new favorites and I ate it everyday for lunch during Pilates training. It’s broccoli slaw, mixed with avocado, topped with sunflower seeds and a little salt and pepper. Light but filling and you can do the Pilates ab series afterwards without wanting to puke.

I was going to recreate this for lunch today but Harris Teeter was out of avocados. TRAVESTY. Bigger travesty is that they were out of bananas too. Get it to-freaking-gether Harris Teeter, this girl needs her produce.

Vanilla frozen custard with chocolate chips mixed in. Pure heaven. I’m a hard core fro yo lover, but even I need some heavy duty frozen custard every once in a while. So good.

I don’t know what my deal is but I’ve been craving chocolate like nobody’s business lately. It’s all I want to eat and I can’t seem to get enough of this. But this Trader Joe’s chocolate bar definitely helps. Is it bad that I think 85% tastes super sweet after eating so much Baker’s chocolate?

And onto the Outer Banks! I have a full recap coming soon (I owe you guys so many recaps it’s ridiculous, I need to get back on top of things) but for now I’ve got food. I didn’t lug my camera to any of the restaurants because it’s huge, so the pictures aren’t the best, sowwy.

Wednesday

Dinner

We had a Restaurant.com deal for Sanya Asian Bistro so we stopped there for dinner after getting into town Friday night. It was perfect because we could all eat there (I tend to make things difficult when it comes to eating out, whoopsies) and we saved $50 off our bill. Awesome.

I accidentally filled up on trail mix before heading to dinner (I seriously cannot control myself around the stuff, it’s too good) so I was in the mood for something lighter. So I ordered an Avocado and Cucumber roll.

It was really good, but I don’t think I’ve had bad vegetarian sushi, it’s kinda hard to mess up. You should know that I ate all of my ginger, then my friend’s ginger (ironic because she is ginger!) and then my boyfriend’s ginger. I guess you could say I like ginger a little.

Drinks

Later that night we headed to Lucky 12 Tavern for drinks. It ended up be perfect because it was walking distance from our hotel, they had a great beer selections and there was a $5 martini special. Um, awesome.

I had a Flying Dog K-9 Winter Ale per recommendation from my boyfriend. He’s a serious beer connoisseur, and it ended up being a delicious choice.

And because we had to take advantage of the $5 martinis, me boyfriend and I split a dirty martini. Pretty much the only martini this old man could handle. I can’t do sugary frou-frou drinks and this fit the bill.

Thursday

Our hotel room had a small kitchen, so to save money we at breakfast and lunch there, which was a very boring combo of eggs and frozen veggies, we don’t need pictures of that.

Dinner

We had dinner at Tortuga’s Lie (which has been feature on Diners, Drive-Ins and Dives!). But I was a bad blogger because I left my phone in the car and didn’t get a picture of my meal. That’s okay because I had beans and rice and I’m pretty sure we all know that that looks like. It was extra delicious after a long day of sight seeing, but if you mess up beans and rice that’s pretty sad.

I’m sure any seafood lovers out there are very sad that I passed up the opportunity for fresh caught local seafood. Yeahhhh vegetarians.

Dessert

Despite trying incredibly hard to find a local ice cream shop that was open, we had no such luck. It’s still considered the off season so lots of places are closed until April. Luckily, Sweet Frog was there to save the day. Not as good as local ice cream, but it hits the sweet-craving, chocolate-loving spot.

Chocolate fro yo with peanut butter chips, Reeses pieces, chunks of Reeses cups and a drizzle of hot fudge. Can you tell I hate chocolate and peanut butter? I’m not even going to lie, I could totally have eat another cup’s worth. No shame.

Friday

Dinner was some pizza place and I ordered a Greek salad. Boring. The one place in town with gluten-free pizza was no longer in business (whhhhyyyyyy?????). So salad it was.

Dessert

Don’t worry I balanced that salad out with some serious ice cream.

Oh. My. Goodness. Can I just wax poetic about how AMAZING this ice cream is? Ben and Jerry, you are pure ice cream geniuses. I don’t even care that it was store bought, I wish I could jump into this pint and live there. No I don’t, that would be a little sticky, but still. Holy cow. Vanilla and chocolate ice cream with peanut butter cups, heath bar pieces, white chocolate chips and fudge covered almonds. I’m drooling a little bit right now.

Drinks

Friday night we headed to the Outer Banks Brewing Station for drinks and late night snacks (which was also featured on Diners, Drive-ins and Dives!). It ended up being a really cool place. The food was delicious, we ended up demolishing a plate of black bean dip and chips. The beer was equally amazing, they brew it at the restaurant and the process is powered by a wind turbine, I love that they’re environmentally friendly!

One of my friends was sweet enough to buy a bottle of champagne for all of us to celebrate my roommate’s engagement!

And because I drink like an old man I switched to beer. I love me some heavy duty (none of that light stuff) and dry red wine, old man status over here.

I failed on taking a picture of my beer but it was sooo good. I ordered their Full Circle Robust Porter (a fat and sassy robust porter with complex nuts and dried fruit-like aromas over a big, round, and slightly toasty palate) I love that they describe it as fat and sassy. I think I’m only going to drink fat and sassy beers from now on, that sounds like a good policy to me. Basically the beer was smooth, heavy and darn tasty.

And now I’m skipping to Sunday because lunch was delicious.

Yet another trip to the Mediterranean Deli in Chapel Hill. I have the hardest time ordering at this restaurant because there are too many tasty looking vegetarian and gluten-free options. I’m not used to having so many choices. I like it, even if it takes me 15 minutes to order.

I had a vegetarian plate with sauteed cauliflower, roasted vegetables, sauteed eggplant, avocado and feta salad and gluten-free(!) pita points. Delicious. I also had too many dates for dessert. I have not control when it comes to those dried out little pieces of nature’s candy. Those dates fueled my 3 hour drive back to school (ugh, one thing I won’t miss when I graduate).

I donated to a living playground initiative at an elementary school, and got a free candy bar and jar of peanut butter from Justin’s in return for my donation. Pretty sweet reward if you ask me. Pun intended.

Now I just want to go back to spring break. Anyway, I’ve got an 8am class in the morning (yippee) so it’s time for this girl to get to bed.

Injuries Suck and a Brain Dump

Being injured is just a big pile of poo. My naggy back-of-the-knee pain will not go away and it is about to drive me crazy. It subsides a lot when I don’t run, but never completely away and when I think I’m safe to run again, BAM post-run it’s back.

Okay, I’m being a little whiny, but I know you fellow runners/exercises/just generally active people feel my pain (pun somewhat intended). It stinks being side-lined by an injury and to be honest I’m not dealing with it too well, and it’s bumming me out a lot.

For one, I really hate sitting still, I mean I can laze around watching Food Network for hours (especially if Paula Deen is on) but there comes I point where I I have to get up and DO something to save my sanity. Two, I’m the worst injured person ever. Luckily I’ve never had any major injuries, but I usually just try to ignore the pain and keep on keepin’ on. Hey, I never claimed to be smart about injury prevention. And lastly I’ve got some big races coming up, races I really need to train for and I can’t, lamelamelame.

Okay, pity party over. Here’s what I’m doing to try to speed up recovery:

  • Ice, lots and lots of it
  • Stretching, trying to get back in the habit of regular yoga because I can tell my hamstrings/calves are tightttt.
  • Anti-Inflammatories, which is a big deal because I’m a hippie and will avoid taking pills for as long as possible. Desperation is sinking in.
  • Low impact exercises, I’ve been a spin class FREAK, I might even resort to the elliptical soon, yuck I hate that thing.

How do you keep your sanity when you’re injured? 

Time for a brain dump, AKA all that random thoughts that filter through my head on a daily basis.

  • I hate road closures, I’ve literally ran into 6 different ones since I’ve been home, why you gotta be so difficult to navigate Raleigh? 
  • BYOK>BYOL and by BYOK I mean Bring Your Own Kale, that should be a thing, because I totally would.

    I mean, I already put it in cupcakes

     

  • Forget Walgreens, there should be a Trader Joe’s on every corner. Pretty please.
  • Peanut butter fixes everything. I was making a tofu/veggie stir fry and couldn’t find a good asian-y sauce (is that even PC to say?) so I mixed in peanut butter with a little salt and pepper. Problem solved.
  • These need to get in my belly ASAP

  • You can totally judge a fro yo place by how good their chocolate flavor is.
  • 85% cacao, come on Joe, step it up, where’s my 100% at?
  • This afternoon I pulled up the wrong way to the gas pump and 5 different cars of people watched me get back in the car, start it up and turn it around. Sometimes my own intelligence just amazes me.
  • Tomorrow afternoon I will be on the beachhhhh. Well not exactly on the beach because it’s supposed to be in the 40s (ew) but beach adjacent.
  • Thrift Shop is the most relatable hip hop song I’ve heard in a while. I can’t relate to:

    But I can relate to shopping at a thrift store, oh so much.

  • Sorry for being horrible with keeping up one comments/reading/all forms of social media, I’ve been enjoying spring break by spending less time on the computer. I miss you guys but I’m enjoying being a little unplugged, I promise I’ll catch back up soon!

Sugar Hangover and Snow Days

Look at me posting early in the morning. This is what happens when my professor is out of town and I don’t have class until 12:30, it’s a beautiful thing, that and the fact that I can’t sleep past 8:00 AM even though I went to bed at 2. Not the best combo.

I’ve got a straight up sugar hangover. Yesterday was a full on snow day with no class whatsoever and I fully enjoyed myself by staying in my yoga pants all day, not leaving the apartment, eating plenty of gluten-free brownies and doing absolutely nothing. It was glorious.

I can’t say I ate too many green things yesterday, but that’s okay because healthy living is all about balance. Sometimes you have to balance your greens with brownies.

Here’s a snap shot of my day, at least what I managed to get on camera, which definitely wasn’t everything.

Best breakfast ever. I’m telling you, it will not get old.

Baker’s chocolate makes the best breakfast addition. Starting my day off with chocolate is the best.

Broccoli, zucchini, onions and a few spray’s of Braggs liquid aminos. These were the only veggies I had all day and I do not feel bad about it. Though this bowl probably is a full day’s serving. A day without veggies is a day without sunshine, kind of like burpees.

Lunch dessert! My roommate made blueberry syrup and we all had pancakes for lunch, except mine was more of a lunch dessert because it was eaten after my big bowl of veggies. Recipe for the pancakes at the bottom!

Then imagine lots of afternoon snacking, that’s what happens when you’re trapped in your apartment all day.

Apples and bananas. Now that song is stuck in my head. I realized yesterday I got through a ridiculous amount of bananas in a week. I bought 5 at the store on Monday and I ran out yesterday. I’m a banana fiend.

I wish I had a more attractive picture, that did this pizza justice, but, um, I don’t. I had a delicious Trader Joe’s gluten-free pizza that I have been hoarding in my freezer for a couple months now. I will even admit that I ate the pizza. It was absolutely delicious. And awesome because my roommates ordered Papa John’s and I actually got to eat pizza along with them.

And then one of my friends brought over cinnamon sugar scones, which weren’t gluten-free and I will be paying for today. It’s okay they were delicious and totally worth it, though I maybe be changing my tune in before the day is over.

Then this happened. My roommate baked a loaf of pumpkin bread, the mix has been sitting in our cabinet since October and she finally got around to making it. It was 100% delicious, even though I’m sure my stomach won’t appreciate that one either. If you’re curious, the mix is Fresh Market brand if you’re looking for a good pumpkin bread mix next fall, this one is a winner.

I think this is why professors bombard us with work 24/7, because when college students have nothing to do, we spend all day baking, they’re really just watching out for our health. Not long after the pumpkin bread, this happened:

I made gluten-free brownies using the Bob’s Redmill mix my roommate bought me for Christmas.

Three things about that, one, my roommate gave me gluten-free brownie mix for Christmas, how amazing is that? Two, Bob from Bob’s Redmill looks exactly like my dad, and three, these brownies were AMAZING. They didn’t taste gluten-free at all, even my gluten-loving friends thought they were amazing.

Cue this mornings sugar hangover. Oh sugar, you are so delicious but you leave me feeling so gross the next day. You know how to cure a sugar hangover? Pancakes. Well, maybe not but they are a delicious breakfast, or lunch, or lunch dessert.

Gluten-Free Peanut Butter Coconut Pancakes

Makes 2 medium-sized pancakes

Ingredients

  • 1 small banana, mashed
  • 1 egg (I actually used egg whites for my pancake but it didn’t hold together as well as I would hope, I think a whole egg would hold together much better)
  • 1 tbsp peanut butter
  • 1 tbsp shredded coconut
  • Cinnamon to taste

Directions

  1. Comine all ingredients in a mixing bowl
  2. Pour batter on to a greased pan cooking on medium heat until cooked on one side. You will know the first side is done when the edges begin to bubble.
  3. Flip and finish cooking on the other side
  4. Top with delicious things (like homemade blueberry syrup and peanut butter) and enjoy

What I Would Eat Wednesday {WIAW}

Happy humpday!

I don’t know about you guys, but I’m super ready for Friday. Well, I’m always ready for Friday so that is nothing new. But I would really like it to hurry up and get here.

In other news, the weather is trying to spite me.

A few days ago I said something along the lines of “I’m sick of the cold, I’m going to be PISSED if it snows in March”.

Haha Mother Nature, you showed me. What I wouldn’t give for a nice weekend so I could actually get an outdoor run in. The treadmill is slowly beginning kill me, but it looks like we’re going to be friends for a little longer.

I guess it works out because genius me decided to go running today even though my upper calf/knee is still acting funky from this weekend’s long run, and now I’m living it up with an ice pack and tennis ball on my living room floor because the pain came back full force. This probably means I should take a break but I’m antsy and I want to give up and MOVE. I guess I’ll stick to low-impact cardio until things start getting better.

Now for the food.

On Monday I thought to myself “I’m actually going to take pictures of everything I eat tomorrow so I can do a real What I Ate Wednesday”. Guess how many pictures I took, zero. Whoopsies. That’s okay, my eats were not exciting at all (seriously I ate 3 apples and 2 bananas yesterday, creative cuisine is obviously my forte). So instead I thought I’d show you my dream day of food, because that’s way more interesting that what I would eat anyway.

Morning Snack

Green smoothie! I love smoothies but I rarely make them because I’m usually too lazy to get out/clean the blender. I should change that.

And because I’m ALWAYS cold and a huge temperature wimp…

I’d follow that smoothie up with my favorite coffee, Larry’s Beans St. Valentino’s blend. Black, please, because I drink coffee like an old man. Your creamer and sugar has no place here.

By the way, if they sell Larry’s Beans anywhere near you go out and buy some NOW. Seriously, get up from your computer, get to the store and get some. It is the best coffee I have EVER tasted. Seriously, I don’t play when it comes to good coffee.

Lunch

I’d go to Coyote Kitchen and get the Moab boat (Coconut rice, black beans, sweet potatoes, blackened tempeh, fried plantains, roasted corn, and scallions, served with sweet red vegan mayo and cranberry salsa). So dang good. I think I will cry on graduation because it means I will no longer be in the same city as Coyote Kitchen, if you’ve ever eaten there then you know I’m not being dramatic. Okay maybe a little.

Afternoon Snack

FROOOO YOOOOO. Of course 🙂 Preferably peanut butter and coffee yogurts topped with lots of Reese’s, chocolate covered espresso beans, more peanut butter and dark chocolate. I think I just drooled a little.

Whole Foods hot bar! Because I’m indecisive and would like as many veggie options as possible. Bring on the salad!

Oh Mondays, why are you so cruel?

You’re screeching alarm is such a rude awakening after a rejuvenating weekend. Can we make a deal where we just skip to Friday? I can get on board with that?

Marvelous is… semi-spontaneous trips home. After being out of town the past two weeks, I was planning on actually spending a weekend in Boone, but Thursday night I decided to head home and celebrate my mom’s birthday and it was exactly what I needed.

Marvelous is… applying for graduation and ordering my cap and gown last week! Holy cannoli, where did the time go? I’m pretty sure yesterday I was just a little freshman living it up in the dorms. I’m not sure I’ll ever be ready for the real world.

Marvelous is… Saturday morning pancakes. I haven’t made pancakes in FOREVER and they need to happen much, much more often. Nothing says happy Saturday like a stack of pancakes.

The pancakes are 1 small banana, 1 egg and 2 tsp mashed together until smooth and cooked in a grease pan like a regular pancake. How an egg and banana create such a fluffy pancake is magic I don’t even understand, but I do know they will be on regular rotation from now on.

Speaking of pancakes, want to see something gross? Of course you don’t but I’m showing you anyway.

That would be probably the most epic pancake fail you will ever witness. Almond meal, flax meal, cocoa powder and almond milk do not combine into a delicious pancake, instead they combine into one shitty looking (literally) mess that tastes like nothing. But I topped it with a little vanilla frosting and ate it anyway. Frosting makes everything better.

Marvelous is… a cocoa powder dessert that isn’t a complete failure:

A sweet potato topped with peanut butter, cocoa powder, cinnamon and a tiny sprinkle of salt. Did I mention I’ve been on a chocolate kick lately? I can’t get enough of the stuff. Actually my chocolate cravings are pretty perpetual (thank you estrogen) but they’ve been especially bad lately. Gimme dat chocolate.

This photo does the scene absolutely no justice, but it is an amazing sight. I think I’m actually going to miss the mountains a little come May. Flat land is just not as beautiful.

Marvelous is… Mediterranean food. Boone has an amazing restaurant scene, but we are severely lacking in the Mediterranean cuisine department. Good thing we have plenty at home so I can get my fix.

Marvelous is… internship interviews. Actually, interviews are no fun at all, but I had a phone interview today for a potentially AMAZING internship, I’m not sure how the interview went because I didn’t actually do much talking, but keep your fingers crossed for me. I applied for this internship last year and didn’t get it so I’m hoping for a little redemption this year 🙂

Marvelous is… looking to get my Pilates certification! I’m loving teaching too much to stop after graduation. Right now, I’m looking at going the Balanced Body route, but if you guys know anything about Pilates certifications help a girl and give me your recommendations!

Marvelous is… the Yogalates class I’m teaching on Wednesday. It’s a Pilates/yoga fusion class and I’ve never taught anything like it before, but I get to be a little creative with it and should be a lot of fun.

Marvelous is… finally getting in a long run (8 miles!) after missing out for the past 2 weeks. Not-so-marvelous… the fact that it was on the treadmill and I tweaked something behind my knee 😦 boo hoo. Icing it like crazy and forcing myself to sit down and not irritate it, which is surprisingly easy and difficult all at the same time.

What made your Monday Marvelous?

  1. It’s sleeting outside, my favorite weather! Said no one EVER. Sorry mother nature but sleet is the most worthless weather ever, I do not enjoy ice falling from the sky.

  6. Speaking of Scooby Doo, I watched 2.5 episodes today while running on the treadmill, my favorite new way to pass the time. 5 miles in 55 minutes, I need things to warm up because treadmill runs are starting to push my sanity.

  11. I still owe you guys a post about Fit Expo, it’s coming I promise! I want to devote a real amount of time to writing it, time which is non-existent right now, soon!
  12. I have a friend who works at Disney World and she has gotten to meet Honey Boo Boo and her family AND Tina Fey. So jealous.
  13. The earring in my rook fell out today, which is weird because that’s never happened before, I have no idea where it went, but luckily when you have 10 ear piercings there are plenty to go around.

A Case of the Mondays {MIMM}

I’m not going to lie I had a serious case of the Mondays. It was one of those days where I just wanted to curl up in bed, blow off all my obligations and take 8 naps in a row. Too bad I have silly things like classes to go and exams to take so that didn’t happen boo.

Okay, less complaining, more marvelous.

Marvelous is… exercise endorphins! Turned my stinky mood upside down, I only wish I had time to run sooner. I need to bring back morning workouts, except that 5am wake up calls are not happening anymore soooo… maybe not.

Marvelous is… Time at home! Weekends at home are just good for my sanity.

Marvelous is… Strawberries and chocolate fondue, courtesy of a Trader Joe’s trip (oh, Trader Joe, I have missed you more than you will ever know, so much so I went twice in one weekend)

Chocolate + Strawberries needs to happen more often. I’m thinking once a night.

Marvelous is… Dinner out when the parentals are paying. Thanks guys 🙂 A trip to Sweet Tomatoes and Tijuana Flats happened. So dang delicious.

Marvelous is… Birthday dinners (er, lunches) we met my brother in Chapel Hill for lunch at the Mediterranean Deli. Why is Mediterranean food so good? And why isn’t there more of it in Boone?

I’m drooling all over again. Starting with the fruit and going clockwise we have fruit kabobs roasted veggies, eggplant and squash stew and avocado salad. Plus pita bread that was distributed to the rest of my family. The avocado salad is hiding under the pita, but there was like 2 whole avocados in that thing. Amazing.

Marvelous is… Cookie butter samples at Trader Joe’s. I might have walked past the sample table twice, and then made my mom grab me a third because I was too ashamed to go back a third time, but not enough to not make her do it for me. On an less marvelous note, the beer sampler thought I was 12, not quite. At least the beer was tasty.

Gluten be damned. This stuff is amazing! Funny side note, while googling cookie butter images all the pictures that popped up were taken by food bloggers. They don’t joke around with their cookie butter.

Marvelous is… My kitty cats. I missed them, I don’t care if that makes me a crazy cat lady.

Finding My Food Groove {WIAW}

I spent the last week unplugging for a little bit. It felt good to take a couple days off, I just wasn’t feeling sitting down and writing so… I didn’t. Funny how that works. But I’m glad to be back for What I Ate Wednesday! My posting has been pretty sporadic lately but classes are starting back up on Monday so things should be a little more regular once I get back into the groove of classes.

But before we get to the food I have to have a running gush for a second. I ran 7 miles this morning! NEW PDR! It was tough and my feet are a little sore but I did it! I always doubt myself during longer runs but the feeling when I finish them is amazingggg.

And now for the food.

I’ve been falling back into a pattern with my food and I’m loving it. It might be a little boring to eat the same thing everyday but after the craziness of holiday sweets I’m loving boring 🙂 Gimme some of those veggies.

Morning Snack

I’ve doing a terrible job getting enough protein lately. Carbs are just so much more delicious 🙂 But I’ve been making a conscious effort to get more protein in because I feel way more satisfied when I do.

Lunch

I think I’ve eaten the same thing for lunch everyday for the past week and I’m 100% okay with that.

Tofu, kale, mixed frozen veggies and liquid aminos. Plant powered goodness in a bowl! It’s a good combo, light but filling and so many veggies. Love it.

Afternoon Snack

Sweet potato, peanut butter, cocoa powder and cinnamon. It might sound a little weird, but it’s one tasty combo. I also had some un-pictured frozen strawberries and Baker’s chocolate (yes, the baking chocolate addiction is back full force!)

Dinner

Dinner was a there’s-not-a-lot-of-veggies-left-in-the-fridge-so-let’s-see-what-happens kinda meal. I chopped up half of a leftover bell pepper and onion, sliced up some baby carrots, tofu, threw in the rest of a bag of kale I had, added some marinara and then I added some liquid aminos because I’m obsessed and can’t help myself. My bottle is almost out and I need to get some more ASAP! I might have a problem.

Late Snack

These are way to easy to eat. They’re not as good as Trader Joe’s Sea Salt & Turbinado Sugar Dark Chocolate Almonds but that doesn’t slow me down too much.

I also had some homemade hot chocolate.

Recent Food Obsessions {WIAW}

Hey guys, happy hump day! It’s a little crazy that it’s already Wednesday, this week is flying by!

(Thanks Jenn!)I’ve been slacking in the picture taking department lately so instead today I have a list of my recent food obsessions. Plus Christmas leftovers and endless tofu stir-fries are really not all that entertaining.

  1. Food obsession number one is Bragg’s Liquid Aminos 

    To say I’m a little obsessed with this is an understatement , I have sprayed this on almost every vegetable that has crossed my lips in the past month. I love that it gives everything a little saltiness without being crazy packed with sodium and the spray bottle is just fun.

    And it makes brussel sprouts extra delicious 🙂

  2. Almond Meal 

    It’s been a great addition to gluten-free cookies and I love the almond flavor and dense texture it lends to everything. Plus thanks to Joe the Trader it’s only $4 and you really can’t beat that.

  3. Trader Joe’s Wheat-Free Waffles

    Speaking of Joe the Trader, these waffles are AMAZING. And only $2, bonus. They’ve been great topped with peanut butter for a pre-workout breakfast. Shocker, I broke my oatmeal breakfast streak, but as much as I love oatmeal, it doesn’t feel awesome when it’s chilling in my stomach during a run.

    The texture is like real waffles, they only take a few minutes in the toaster oven and did I mention they’re only $2 a box?

  4. Coconut Oil 

    I’ve been a big fan of the stuff for a while but my brother bought me a new jar for Christmas so I’ve been using the stuff like crazy lately. It’s a nice change from the olive oil I usually use.

    Non-foodwise I also love it as a face moisturizer. My face usually gets super dry in the winter and most moisturizers don’t make a difference but my skin hasn’t been dry at all this winter, I’m sold.

  5. Advent Calendars – okay, this one is a little dated…

    But starting the day with a little chocolate is basically the best thing ever. Yes, I’m 21-years old and I still buy advent calendars. Don’t care. I was seriously sad Christmas Eve morning when I finished my last piece of chocolate, I think there needs to be a chocolate calendar for every month. A little chocolate just makes every day a little better because it is magical like that.
