Let’s Play Catch Up {MIMM}

I feel a little bad that I’ve been this little blog lately.  I haven’t been around much but I’ve had plenty of marvelous things going on around here. So I thought I’d catch you up on the last week and a half, because life’s been a little bit of a whirlwind since then!

Marvelous is… Graduation!

I don’t technically get my degree until I finish my internship this summer, I walked and I’m out of Boone so that’s close enough. I’m not going to lie though, it’s definitely bittersweet to graduate. I’m ready to move on to a big city (tiny mountain living is only charming for about 4 years) and a big girl job I’m going to miss my college friends a lot.

Marvelous is… My internship with the American Dance Festival! I started on Wednesday and they had me jump right into the swing of things. I’ve already started working on lots of fun design projects and I can already tell I’m going to learn so much this summer. I’m also excited for when the festival actually starts and I’ll be able to take classes!

Marvelous is… Doing a little good. This Sunday my church did a “Church on the Street” event where instead of a typical church service, they had us go out and help with community projects around the area. My mom helped paint some of the rooms in the Children’s wing of the church. It’s been way too long since I’ve done any volunteer work and it felt good to help out again. I need to get back in the habit of it!

Marvelous is… Artspolure, an arts and crafts festival in downtown Raleigh.

There was so much beautiful artwork being sold. I wish my tiny budget had more room for local, handcrafted art, but notsomuch. One day when I get a big girl job it will happen. I did get a really cool coffee mug for $8 which I have been more than excited to used every morning since.

Marvelous is… the Flying Biscuit!


I had an egg white omelet with mushrooms and spinach, with a side of rosemary potatoes. This meal was salt-city (way more than than previous times I’ve been) but I won’t even pretend like I didn’t finish the whole thing with a big glass of water. It does pain me a little to eat here now that I can’t enjoy their enormous complimentary biscuits, but I still enjoy their cranberry apple butter with a spoon, that stuff is amazing.

Marvelous is… early morning workouts. Okay, let’s be honest, waking up at 5:30AM is not marvelous, but having your entire workout done before 7:30 AM certainly is. My schedule is now 10-6 with a 30-45 minute commute home (depending on traffic), a nighttime workout is just not happening so getting it in early gets it out of the way and peps me up for the rest of the day.

What did you do this weekend?

Are you a morning or nighttime exerciser? During school I went through phases of being a nighttime exerciser, an afternoon exerciser and a morning exerciser (gotta switch things up right?) but when I’m at home I usually stick to the morning, I loose my motivation not too long after that.

PS I’ve been really horrible at commenting/responding to e-mails and comments and I promise I will catch up! I’ve been taking a breather from social media which feels nice but I’m hoping to catch back up on my Feedly, blog and inbox soon!

Spring Time {MIMM}

Happy Monday!

Can I just say that there’s nothing more wonderful thank waking up to beautiful, sunny, 65 degree weather on a Monday morning? Talk about starting the week off right.

Marvelous is… Art crawl. Lots of good art, lots of good food. Not to mention I got a free handmade cup from a gallery featuring clay pieces, I’m actually drinking coffee out of it right now (of course!).

Marvelous is… drinks with friends on a Friday night.  I’m not your typical party-obsessed college student, and I prefer quieter nights with friends than a wild and crazy party, but sometimes a little bar hopping is necessary to your college experience.


The bartender convinced my friend that the 32oz beer was a much better deal than the pint, which it was, it was also the size of her freaking head (don’t worry mom and dad, mine’s the normal sized beer in the bottom of the picture).

I asked the bartender for the least-sweet shooter they had, and I’m pretty sure he lied because it tasted like straight up limeade. Bummer. I got drink redemption with a Jim Bean on the rocks later on in the night. I’m such an old man, I don’t play with that fruity stuff.

Marvelous is… this freaking dessert:

A cinnamon roll the size of my face topped with vanilla ice cream. Whattttt. So. Good. I’m pretty sure the restaurant pumps the smell of cinnamon into every corner of the restaurant to make you want to order one of these bad boys. Sometimes a little gluten is worth it.

Marvelous is… hiking trips with fellow group fitness instructors!

We had plans to go to Hawksbill Mountain in Morganton, but only 4 of us were able to make it so we stayed closer to Boone and tried the Glen Burney trail in Blowing Rock. I’ve done the hike once before and it’s a nice little hidden gem in Blowing Rock. The hike is about 1.5 miles ending at a super gorgeous waterfall. It’s quite the workout because you hike down to the waterfall, which means the return hike is uphill the entire way. My booty got a serious workout on the way back!

Marvelous is… taking time to cook a REAL dinner. Or as real as a college dinner for one can be. I’ve been in an eggs + frozen veggie rut and it feels good to get creative in the kitchen again!

Kale salad with lacinato kale (my first time trying it and I think I like it better than curly kale, it tastes less grass-y), baby portobella mushrooms, roasted sweet potatoes and eggplant, lemon juice, garlic, curry powder, cumin, salt, pepper and that last couple drops of my bottle of Bragg’s liquid aminos. So fresh and clean tasting.

Cinnamon and curry roasted sweet potatoes, sauteed spinach with onion and tomato, with sauteed sliced eggplant on the side.

Not much protein happening here, but dinner’s usually finished up with a cup of greek yogurt to balance things out.

Marvelous is… today’s special guest lecturer in my Dance History class. He came to talk with us about the history of musical theatre and he was quite the character. He would randomly start singing parts of the lecture and danced through half of it as well. I imagine if Mr. Rogers had a doctorate in Dance History and gave college lectures, it would go something like that. He was quite the character.

Oh Mr Rogers, I still miss you dearly.

We also watched a Broadway documentary narrated by Julie Andrews, everything with Julie Andrews is marvelous. Everything.

Marvelous is… SPRING WEATHER. In Boone. FINALLY! It felt amazing to walk out the door this morning and not have to grab a jacket.

I love beautiful days in Boone because all the hippies, slack-liners, and puppies come out. Not to mention Boone is absolutely gorgeous when the weather decides to cooperate, there’s no better place to be.

Thankful Thursday & Exciting News!

First and foremost, this Thankful Thursday I am thankful for Thankful Thursday. Seriously. I’ve been feeling really scattered today, okay let’s be real this whole week, so I’m loving that I can just take a second to sit back and be grateful. Plus lists are a scattered-blogger’s best friend, I like that I can just brain dump instead trying to make logical sense right no, because let’s be real, that’s not going to happen. (Thanks Jessie for hosting every week!)

Secondly, I’m veryyyyy thankful for some really exciting news I received yesterday. Remember this?


Well this design is going to be PUBLISHED in a book. A real live book. I’m so excited!


Here’s a better looksies at it. It’s going to be featured in an Appalachian State version of the Artistic Rebuttal Book Project. I’m going to be in a book! Whatttt. I’m especially thankful for this opportunity because I’ve faced a lot of rejection when it comes to my art work, so I get a little overwhelmed when I my work gets accepted for things like this! I hope to make a living off design when I graduate college and achievements like this make me feel like a legit artist.

I’m also thankful for Elf For Health! I’ve been really enjoying the challenges and the opportunity to connect to so many other health and fitness minded people. Tuesday’s challenge was to send a handwritten letter to some one, so my partner and I exchanged letters. I’m not much of a writer so I tried to disguise that by making her a card.

The only problem with homemade cards is that it’s pretty much impossible to find envelopes for them.

And finally I’m thankful for baristas that give you a cup of black coffee that looks like this:


That’s what I’m talking about. Getting my money’s worth. So worth almost spilling it as I sat down.

And this is not related to Thankful Thursday but I’m currently eating a pile of brussels sprouts and it makes me really happy.


Well I am thankful for brussel sprouts because they are very delicious, so I guess that works.

Friendsgiving/Birthday Extravaganza!


Friday morning I headed to a Power Hour class at the gym which was a blast! I don’t usually get to go to that class because I have actual class (lame) but my professor was out of town so I got a chance to go! The class was really upbeat and got me pumped for the weekend! I love a good Friday morning workout, it gets me pumped for the rest of the week and makes me not feel so bad when I some how end up eating 6 cupcakes. Whoopsies.

We did a fun cardio circuit during the class that I jotted down and I’ll share it with you guys soon!

I’m proud of the fact that I’m getting better at disguising workout clothes as real clothes. Too bad adding boots and a cardigan to my workout clothes doesn’t make them less stinky afterward…

Friday evening my roommates and a couple of friends headed out to a reception for the student art gallery on campus. My roommate and I submitted art work for an Appalachian of the Artistic Rebuttal Book Project (check it out if you like art, it’s an awesome project!) and both of ours got in!

It’s so cool to see something you made hanging up in public, I don’t think I’ll ever get sick of it.

The reception had some finger foods but we were hungry for some real food so we headed to Black Cat Burrito for dinner. I think I’ve ended up at Black Cat almost every weekend this semester. I can’t help it, it’s so good!

I built my own burrito with rice, black beans, sweet potato, spinach and some painfully hot salsa.

Black Cat only has mild and hot salsa, I went with hot because I like a little spice in my life, and I wound up chugging 2 huge glasses of water. That stuff is no joke, lesson learned. But I still finished every bite of that salsa because I refused to let it beat me (:

And because weekends = fro yo time, this happened:

Chocolate and coffee swirled fro yo (heaven) with a little snickerdoodle fro yo (also heaven) plus chocolate chips, white chocolate chips, a chunk of Reeses and a Nutella drizzle. Honestly I could have eaten this cup 3 more times, it was pretty tasty.


Saturday morning started with a 3 mile treadmill run. I finally used the gym in my apartment complex, considering I’ve only lived there for 3+ months it was about time. I think the gym is the same size as my apartment, but I got to watch Top Chef while I ran which is a bonus. I think watching delicious foods makes me run faster (: By the way did anyone watch the episode where the had to cook and serve food in the space needle? I would have passed out, heights are not my friend.

After my run I ran a few errands with one of my roommates, we had some presents to pick out and need to pick up a few things for dinner. We are terrible errand runners and finally finished two hours later. Do not send me food shopping if you need something in under an hour, I’m the slowest food shopper ever.

Saturday my friends and I threw a combo Thanksgiving/22nd birthday celebration for my roommate and it was an awesome time. I made flour-less chocolate cupcakes and roasted vegetables. When you eat more vegetables it means you can eat more cupcakes right? I hope so.

Roasted brussel sprouts, onions and cranberries season with garlic, black pepper and Bragg’s liquid aminos. I actually got college kids to eat brussel sprouts, which I consider a huge accomplish. Though some were not so easily persuaded, that’s okay, more for me!

I also made these flour-less chocolate cupcakes and they came out surprisingly good!

I used this recipe (minus the cream cheese filling) from the National Foundation for Celiac Awareness. I wasn’t sure how they would turn out based on the ingredients, they seemed way too simple! But they were amazing. Seriously, even if gluten isn’t an issue for these make them. I ended up eating wayyy too many. Like 6. Oops. It’s okay, I ate lots of brussel sprouts to help cancel out all the sugar (:

I topped the cupcakes with Cool Whip (I actually used Tru Whip because it has less crazy ingredients, which I’m sure didn’t matter once I added the sugar in the cupcakes) mixed with some cocoa powder and cinnamon for an easy frosting. I made them fancy-ish by using a sandwich baggie with a corned cut off to pipe on the Cool Whip and I topped them with some leftover Halloween sprinkles.

I also have to mention the cranberry sauce, because it is one of my favorite parts of thanksgiving.

Apologies for the terrible apartment lighting. And cranberry sauce taste the best when it’s still in the shape of a can. The ridges add extra flavor. We also rotisserie chicken (the poor college student’s turkey dinner), mashed potatoes, mac and cheese, corn and rolls. But let’s be real, the veggies and cupcakes are the most important part of a well-rounded feast.

We ended the night playing Millionaire Monopoly and watching The Campaign. Chocolate cupcake-induced sugar highs make board games way more intense, I think I funneled all my excess energy into buying as much property as possible, but I still lost.


Sunday morning started with a 5:30am wake up call. AKA way to early for a Sunday morning, especially after going to bed at 1:30, ouch. It was for a good cause though, I was helping out with a pancake breakfast to benefit the Western Youth Network, which helps at-risk youth in western North Carolina.

Even though our turn-out wasn’t the best (maybe the Sunday before Thanksgiving break wasn’t the best day) we still raised $150 so it was worth getting up for.

Sunday afternoon I took a much needed 2 hour nap, and still woke up groggy, I think I needed 2 more hours. One day I’ll learn to get to bed at a decent time. One day.

I woke up in time for my roommate’s birthday dinner with her parents. No pictures because it was a fairly fancy Italian restaurant and I thought whipping out a cell phone to take a picture of my food would be weird. I ordered a artichoke salad that came with artichokes (obviously), roasted red peppers, onions, tomatoes and lettuce. It wasn’t anything special, but being a gluten-free vegetarian at an Italian restaurant I kind of expected that. I did like that I got a pre-salad salad. I guess they didn’t want me to feel left out when everyone else had a started salad before their entree? I’ll never turn down extra salad.

Marvelous In My Monday

I’m coming at you guys early today because I had some free time I decided to actually be productive with. I love it when stuff like that happens.

I was not ready for Monday morning to come. Funny how even though we got an extra hour Sunday morning I didn’t end up getting any more sleep than I usually do. Going to bed a 2:30 am and then waking up at 7:30 am for church was not a wise decision, but I was excited when my alarm went off and I remembered I had another hour of sleep left. Such a good feeling.

  1. I register for my LAST semester of college class today! Holy cow where do the time go? I’m a little freaked out that I will be thrown into the real world in 6 months. Eek.
  2. My college offers a CrossFit class!

    Whattttttt. I cried a little when I found out a can’t take it because it’s at the same time as I class I need to graduate. I guess that’s more important or something. Lame. I’m going to take a weight training class instead, because even though I already have 16 hours worth of classes I need to take to graduate on time, I like to through some extra stuff in there too.
  3. My morning snack:You should know that I’m not a fan of anything minty, but this bar is so dang good! It’s starting to make me a peppermint convert. But, the gingerbread flavor is still better (:

  4. I have artwork hanging up in the student gallery on campus!App State is doing it’s own version of the Artistic Book Rebuttal Project and my submission was one of many picked to be displayed. It feels awesome to have my work displayed!

    If you’re interested in art or creative projects of any kind you should really check out the project’s website, the story behind it is really amazing.

  5. I’m teaching a special Pilates class this Wednesday. It’s called Pilates Sculpt and it’s basically going to be Pilates using weights. Our campus offers special group fitness events from time to time but this is the first Pilates special event we are hosting so I’m hoping lots of people come out.
  6. Speaking of teaching I found out I was nominated for Group Fitness employee of the month, I didn’t win but it made me feel good I was even nominated since I’m a new instructor.
  7. I’ve been seriously considering registering for the Tar Heel 10-miler race in April. My farthest distance so far is a 10K, but I’ve been feeling the itch to get back into running again. I figure I have 5 months to train which would be more than enough time to train. I’m feeling ambitious (hopefully I won’t change my tune when it comes to doing runs in the dead of winter).

  8. I just ordered a bunch of workout clothes from Old Navy for super cheap! I was looking for a long-sleeve moisture-wicking shirt and ended up also ordering a tank top, short-sleeve shirt and capris because they were such a dang good deal. I’m anxiously awaiting its arrival!All this for $46, heck yes.

  9. The outpouring of support for those impacted by Hurricane Sandy. I’ve seen so many fundraisers happening in the past couple of days It’s amazing to see what this country can do when we band together to help people. It makes me especially happy during election season (speaking of which, you better get your butt out to vote tomorrow if you haven’t already!) when the country usually seems so divided.
  10. I had to add an extra because I like even numbers.

Well apparently there are lots of things making my Monday wonderful. I need to shut up and stop whining about today because it’s actually shaping up to be a pretty good day!

That’s So Pinteresting…

I’m in a big Pinterest phase right now. I know, me and every other girl in the country. But I go through waves with Pinterest, sometimes I’m obsessed and sometimes, like when I actually have work to get done, I kind of forget about it. But now that summer is here, and I have entirely too much free time, I’m back on a Pinterest kick. Watch out.

I love the long, crazy patterned skirt trend. Unfortunately at 5’4″ I’m not so sure I can pull off a multi-colored floor length skirt. I’ll still lust over them though.

This is Fauja Singh a 100 year old marathoner. There go all my excuses. I think about this picture whenever I want to bail on a run or workout with some lame excuse.

Mountain top yoga is on my bucket list. How amazing of an experience would that be? I need to get my yoga teaching friends to do this with me next year!

I love this idea, I’ve got an old dresser that needs some serious loving. I’m pretty sure it’s as old as I am and it could use a new fun coat of paint. I might have to spruce it up this summer.

I would have a field day. Plain walls are so boring. Give me a paint pen and let me go to town.

We watched a documentary in one of my art classes about Andy Goldsworthy and I’ve been in love with his work ever since. It’s so natural and highlights the beauty of nature. I also love how his art is temporary and meant to be enjoyed in that moment rather than stuck in a gallery forever.

I need this in my life. ASAP. Next paycheck?

Too stinkin cute. Anything with a cat on it is adorable. Maybe that makes me sound like a 5 year old. Do not care.

Coffee and cleverly designed packaging? Yes please. I get ridiculously excited over design things like this. It’s a little (a lot) nerdy but I’m okay with that. And I love coffee. A lot.
